CINNAMON SWIRL BREAD
This is a super quick batter bread that is wonderfully moist and yummy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, mix together 1/3 cup sugar and 2 teaspoons cinnamon; set aside.
- In large bowl combine flour, baking powder, salt and remaining 1 cup sugar. Combine egg, milk, and oil; add to flour mixture. Stir until just moistened.
- Pour half of the batter into pan. Sprinkle with half the reserved cinnamon/sugar mixture. Repeat with remaining batter and cinnamon/sugar mixture. Draw a knife through batter to marble.
- Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes before removing to a wire rack to cool completely. Wrap in foil and let sit overnight before slicing.

SWEET CINNAMON YELLOW BREAD
This recipe makes 2 loaves of the best sweet bread. We eat it for dessert.Or with our morning coffee. Its my father-in-law's favorite. He says it's more cake than bread. Freezes wonderfully for those last-minute guests. Enjoy!

Steps:
- Beat cake mix, pudding, eggs, oil, water and extracts together for 8 minutes.
- Mix sugar and cinnamon together; set aside.
- Pam spray loaf pans.
- Pour 2/3 batter into pans equally.
- Pour cinnamon mixture equally over both loaves.
- Using a knife swirl cinnamon through batter.
- Top with remaining batter equally over both.
- Bake at 350°F for 1 hour.

CINNAMON BREAD I
This is a lovely way to start off your morning when you want a little something different than your usual. Note: If you don't have buttermilk you may substitute milk with 1 tablespoon vinegar to measure 1 cup.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
- Measure flour, 1 cup sugar, baking powder, baking soda, 1 1/2 teaspoons cinnamon, salt, buttermilk, oil, eggs and vanilla into large mixing bowl. Beat 3 minutes. Pour into prepared loaf pan. Smooth top.
- Combine 2 tablespoons white sugar, 1 teaspoon cinnamon and butter, mixing until crumbly. Sprinkle topping over smoothed batter. Using knife, cut in a light swirling motion to give a marbled effect.
- Bake for about 50 minutes. Test with toothpick. When inserted it should come out clean. Remove bread from pan to rack to cool.

SISTER'S SWEET CINNAMON - SWIRL BREAD
A mostly whole wheat version of my sister's favourite bread for French toast! She likes whole wheat bread and this is a good way to bridge the two.

Steps:
- In the bowl of a stand mixer, whisk together flours, potato flakes, nutmeg, sugar and yeast.
- Add the evaporated milk, egg yolk, yogurt and vanilla, then turn mixer to medium low speed and mix with the dough hook for 8 minutes.
- Add oil and salt, and continue to mix 7 minutes longer. (Alternatively you can do this by hand, but you will need a longer mix time).
- Cover bowl and let rest 10 minutes.
- Turn the dough out onto a greased countertop and by hand, knead the raisins into the dough to evenly disperse them without breaking them up.
- Place back into the bowl, cover and allow to rest 1 hour.
- Meanwhile, in a small bowl, combine brown sugar, cinnamon, tapioca starch and egg. Set aside.
- When dough has rested, punch down and roll out into a rectangle with the "short" ends the length of the loaf pan.
- Evenly spread the sugar/cinnamon mixture over the dough, leaving a 1" space on one short end.
- Sprinkle the cinnamon chips over the "far" 2/3 of the dough (this helps prevent them leaking through and sticking to the pan!).
- Roll up dough gently (the filling is quite liquidy), pinching the un-spiced end to seal.
- Place in a greased loaf pan.
- Cover and allow to rise 45 minutes, until almost doubled.
- Preheat the oven to 350°F and bake 1 hour, tenting the loaf lightly with aluminum foil for the final 25 minutes.

- * Breadmaker Directions *.
- Add all dry ingredients to a bowl and sift together. Add all liquid ingredients and mix together. Spray bread pan with cooking spray. Add liquid ingredients to bread pan and then add dry ingredients. ( If adding another ingredient such as a fruit or vegetable, add after the dry ingredients). Set breadmaker to quick loaf.
- * Conventional Oven *
- Preheat oven to 350 degrees.
- Add all dry ingredients to a mixing bowl and sift together.
- Add all liquid ingredients to another mixing bowl and mix.
- Add dry ingredients to liquid ingredients and mix well.
- Spray a 8 X 5 loaf pan with cooking spray.
