The trick to Alton Brown's moist Swedish Meatballs recipe, from Good Eats on Food Network, is white bread soaked in milk.

Yield approximately 30 meatballs, 4 to 6 servings

Number Of Ingredients 14

2 slices fresh white bread
1/4 cup milk
3 tablespoons clarified butter, divided
1/2 cup finely chopped onion
A pinch plus 1 teaspoon kosher salt
3/4 pound ground chuck
3/4 pound ground pork
2 large egg yolks
1/2 teaspoon black pepper
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/4 cup all-purpose flour
3 cups beef broth
1/4 cup heavy cream

Steps:

  • Preheat oven to 200 degrees F.
  • Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
  • In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
  • In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
  • Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
  • Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
  • Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

⅔ cup sugar
A few drops vanilla extract
3 tablespoons cocoa powder
1 pinch salt
1 cup flour (, sifted)
1 tablespoon icing sugar
Butter and flour ((for the pan))
Springform pan
Stand mixer
Wire rack

Steps:

  • Preheat the oven to 350 F (175°C).
  • Grease and flour a springform pan, about 8 inches in diameter, and place in the refrigerator.
  • In a non-stick saucepan, melt the butter over low heat.
  • Remove the pan from the heat when a little more than half of the butter has melted and stir with a wooden spoon until the rest of the butter melts, thanks to the existing heat.
  • Pour the melted butter into the bowl of a stand mixer.
  • Add the eggs, sugar, vanilla extract, cocoa powder and salt to the melted butter.
  • Whisk quickly to obtain a smooth dough.
  • Add the flour. Whisk quickly until obtaining a smooth homogenous dough.
  • Remove the pan from the refrigerator and pour the dough into it.
  • Bake in the center of an oven preheated to 350 F (175°C).
  • At the end of baking, the surface of the kladdkaka should be quite hard while still remaining runny inside, about 15 to 17 minutes, depending on the oven.
  • Unmold the kladdkaka 10 minutes after taking it out of the oven and let it cool on a rack.
  • Once cooled, place it in the refrigerator for at least 1 hour 30 minutes before eating it.
  • Sprinkle with icing sugar and serve with whipped cream.

2 slices white bread, without the crusts, torn into pieces
1/4 cup milk
3/4 pound ground beef
3/4 pound ground pork
1 small red onion, grated or very finely chopped
1 egg
1/8 teaspoon ground allspice
1/4 teaspoon ground cardamom
1/8 teaspoon ground ginger
Salt and freshly ground black pepper
Butter and vegetable oil for frying meatballs
2 cups beef stock
2 tablespoons flour
1/4 cup heavy cream
Salt and freshly ground black pepper
Fresh parsley, for garnish

Steps:

  • In a small bowl, soak the bread in the milk until soft. In a large bowl, combine all the meatball ingredients except the butter and oil, and add the soaked bread. Mix thoroughly until smooth, it's best to use your hands for this. Shape into small, golf-ball size meatballs (by dipping your hands in cold water, the meatballs won't stick to your hands.)
  • Heat butter and oil in a large, deep skillet over medium-high heat. Add the meatballs, about 8 to 10 at a time, and gently brown on all sides, about 5 to 7 minutes. Shake the skillet now and then so meatballs stay round and brown evenly. Place them on a heated baking pan in a low oven to keep warm.
  • To make gravy, deglaze the skillet with 1 cup of the stock, letting it simmer for 5 minutes while scraping the bottom of the skillet with a spatula. Strain the gravy into a clean saucepan and add the remaining 1 cup of stock. In a small bowl, mix the flour with 1/4 cup of cold water until smooth. Whisk flour mixture into warm gravy, and let simmer, whisking constantly to prevent lumps, until thickened slightly, about 3-5 minutes. Add the cream and season with salt and pepper.
  • To serve, arrange the meatballs on a serving platter, pour hot gravy over them, and garnish with parsley. Serve with boiled new potatoes, lingonberry sauce, and lefse.
