2 Tbsp. peanut oil
2 garlic cloves, slivered
2 tsp. ginger, grated
3 scallions cut into 1 inch lengths, white and green parts
2 boneless, skinless chicken breasts, cut into 1/4 inch wide strips

Steps:

  • Low-Sodium Recipe
  • 1. Heat an 8 inch sauté pan or wok over medium heat.
  • 2. Add 1/2 Tbsp. of oil and toss with garlic, ginger and scallions. Stir fry quickly and remove to a bowl.
  • 3. Add remaining 1 Tbsp. of oil to pan. Stir fry chicken strips until cooked through. Add reserved partially cooked vegetable mix, Mrs. Dash and finish cooking all together.

1 1/2 lbs boneless chicken, cut into strips
1 teaspoon oil
1 small onion, chopped
1 carrot, julienned
1 small green pepper, sliced
1 cup fresh mushrooms, sliced
1 cup chicken broth
3 teaspoons cornstarch
3 teaspoons soy sauce
1/2 teaspoon ground ginger
2 cups peapods, trimmed
1/2 cup cashews

Steps:

  • In large skillet or wok, stir fry chichen in oil till no longer pink, 5-6 minutes.
  • Remove chicken and keep warm.
  • Stir fry the onion, carrot, green pepper, and mushrooms till crisp-tender, 4-5 minutes.
  • In small bowl, mix broth, cornstarch, soy sauce, and ginger.
  • Add to skillet; cook and stir till thickened and bubbly.
  • Return chicken to skillet with peapods; stir until heated through.
  • Serve over rice and top with cashews.

1/2 lb sliced boneless chicken breast
1/2 sliced red bell pepper
1/2 sliced green bell pepper
1 medium french cut white onion
8 -10 medium mushrooms (baby bella recommended)
2 tablespoons green onions
1 cup white rice
2 -3 tablespoons olive oil
2 tablespoons soy sauce (kikkoman recommended)
1/3 cup marsala wine
1/4 teaspoon dried cilantro
1/8 teaspoon garlic powder
1/8 teaspoon dried ginger
salt and pepper

Steps:

  • Saute sliced chicken in hot oil until one side is cooked and then add white onion while turning chicken.
  • Cook until onions are very soft.
  • Toss in red and green peppers, mushrooms and green onion and continue sauteing over med/high heat.
  • Stir in Cilantro, garlic powder, ginger, salt and pepper.
  • (If you use a very salty soy sauce you might not want to add salt)
  • Continue cooking until red and green peppers are soft.
  • Once peppers are soft stir in Marsala wine and soy sauce, continue cooking over med/high heat until almost all of the liquid has evaporated and you are left with a thick sauce.
  • Pour over a bed of rice and serve.
  • NOTE*It is very important to keep cooking until nearly all of the liquid has evaporated because you want the flavor of the soy sauce and wine on the vegetables NOT on the plate in a puddle.
  • If you prefer extra sauce for the rice just use more soy sauce and wine but make sure you burn off most of the excess water or your dish will lack flavor and be too liquidy.
  • Adding a little extra olive oil will always help to thicken the sauce.
  • Enjoy.

This twist on Ree's versatile summer stir fry from her book "Food From My Frontier," is made with shrimp instead of chicken. The key to a successful stir-fry is to have all of your ingredients prepped before you start cooking. The high heat under the pan makes things go quickly - if you stop to prep inbetween, your food will overcook.

1 tablespoon butter
1 tablespoon olive oil
2 pounds boneless skinless chicken breast, cut into 1-inch chunks
4 cloves garlic, minced
2 large zucchinis, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings to serve
Juice of 1 lemon
Rice or Pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the chicken and garlic, then sauté until the chicken is cooked through, about 5 minutes. Remove the chicken to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Next, throw the chicken back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.

1 pound chicken breast (about 2 breasts), cubed
3 scallions, whites only, thinly sliced on a bias
2 tablespoons sugar
1 tablespoon dark sesame oil
1 tablespoon dry sherry
1 tablespoon soy sauce
2 cloves garlic, minced
1-inch piece peeled fresh ginger, minced
1 tablespoon, plus 1 teaspoon cornstarch
Kosher salt and freshly ground black pepper
About 1/3 cup water
3 tablespoons vegetable oil
5 to 6 cups broccoli florets and sliced stalks (keep the 2 cuts separate)
3/4 to 1 teaspoon red chili flakes, optional
1 tablespoon hoisin sauce
Ttoasted sesame seeds, for serving, optional
Jasmine rice, for serving, optional

Steps:

  • In a medium bowl, toss the chicken with the scallion whites, sugar, sesame oil, sherry, soy sauce, about half the garlic, half the ginger, 1 teaspoon of the cornstarch and 1 teaspoon salt. Marinate at room temperature for 15 minutes. Mix the remaining 1 tablespoon cornstarch with 1/3 cup water in a small bowl and reserve.
  • Heat a large nonstick skillet over high heat. Add 1 tablespoon of the vegetable oil and heat. Add the broccoli stems and stir-fry for 30 seconds. Add the florets and the remaining garlic and ginger, 2 tablespoons water, 1/4 teaspoon salt and some black pepper. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate.
  • Get the skillet good and hot again, and then heat the remaining 2 tablespoons vegetable oil. Add the chicken and red pepper flakes if using. Stir-fry until the chicken loses its raw color and gets a little brown, about 3 minutes. Add the hoisin sauce, return the broccoli to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water if need to thin the sauce, if necessary. Taste and season with salt and pepper, if you like.
  • Mound the stir-fry on a serving platter or divide among 4 plates and garnish with sesame seeds; serve with rice.

The secret to the super tender meat is velveting, the technique of cooking marinated proteins briefly in hot oil. I wanted to replicate the same flavors and textures at home in a budget-friendly way. With just a few fresh vegetables, lots of pantry condiments and only one chicken breast, this recipe will serve four. If you have any leftovers or are meal planning, the velveting technique ensures that the chicken will remain succulent even when reheated.

1 boneless, skinless chicken breast, about 12 ounces
2 tablespoons light soy sauce
1 tablespoon plus 2 teaspoons cornstarch
3 tablespoons vegetable oil
One 1-inch piece ginger, peeled and cut into matchsticks
2 cloves garlic, chopped
8 ounces broccoli florets
4 ounces shiitake or button mushrooms, stemmed and sliced 1/2 inch thick
1 small carrot, peeled and cut into 3-inch-long matchsticks
1 tablespoon Shaoxing wine
1/2 cup low-sodium chicken stock
1/4 teaspoon ground white pepper, optional
1 teaspoon toasted sesame oil
3 cups steamed jasmine rice, for serving

Steps:

  • Place the chicken breast in the freezer until firm enough to thinly slice, about 20 minutes. Using a sharp or serrated knife, thinly slice the chicken 1/8 inch thick. Transfer to a medium bowl and drizzle in 1 tablespoon of the soy sauce. Let sit for 10 minutes. Add 1 tablespoon of the vegetable oil and 1 tablespoon of the cornstarch and mix well. Set aside in a cool place for 20 minutes.
  • Whisk the remaining 2 teaspoons cornstarch with 2 teaspoons water in a small bowl; set aside.
  • Heat the remaining 2 tablespoons vegetable oil in a wok or large nonstick skillet over medium-high heat. When the oil starts to shimmer, add the chicken slices in an even layer and cook, undisturbed, until they just turn opaque, about 45 seconds. Flip and cook, undisturbed, until almost entirely opaque, 45 seconds to 1 minute. Remove to a bowl.
  • Add the ginger and garlic to the wok. Cook, stirring often, until the garlic is slightly golden brown, about 30 seconds. Add the broccoli and toss to coat; cook, stirring occasionally, for 1 minute. Add the mushrooms and carrot; toss to combine. Add the Shaoxing wine and cook, scraping up any browned bits from the bottom. Add the chicken stock, white pepper if using, chicken and the remaining 1 tablespoon soy sauce.
  • Mix the cornstarch mixture in the bowl until well combined then add to the wok. Stir until everything is nicely coated, reduce the heat to medium low and cover with a lid. Cook until the sauce has thickened slightly and the chicken is cooked through, about 2 minutes. Drizzle with the sesame oil. Toss until everything is well combined and transfer to a serving platter. Enjoy warm with steamed rice on the side.

1/4 cup canned low-sodium chicken broth or chicken stock
2 teaspoons cornstarch

1 teaspoon dry sherry, optional
2 tablespoons peanut or vegetable oil
3 tablespoons sliced on the bias green onions, plus more for garnish
2 cloves garlic, minced
2 teaspoons minced gingerroot
1/2 teaspoon red pepper flakes
1 pound boneless, skinless chicken breast halves, cut into thin strips
1 (14-ounce) bag frozen mixed vegetables (broccoli florets, julienne red peppers, sugar snap peas and water chestnuts), about 3 cups, thawed

Steps:

  • While assembling the other ingredients, soak the noodles in hot water to soften, 10 to 15 minutes. Drain and set aside.
  • To make the sauce, in a bowl, whisk together the chicken broth with the cornstarch. Add the soy, hoisin, sugar, and sherry, if using, whisk, and set aside.
  • Heat a wok over high heat. Add the oil and when hot and nearly smoking, add the green onions, garlic, ginger, and red pepper flakes and cook, stirring, for 10 to 15 seconds. Add the chicken and stir-fry until turning opaque and nearly cooked through, 3 to 4 minutes. Add the vegetables and stir-fry for 1 minute. Add the sauce, stir and toss, cooking until the chicken is all the way cooked through and the sauce is thick, about 2 minutes. Remove the chicken and vegetables from the pan. Add the noodles, toss, and cook to warm through, 30 seconds to 1 minute.
  • Transfer the stir-fry to a platter and garnish with additional green onions. Arrange the noodles on the side and serve immediately.

1 1/2 tablespoons oil

1/2 cup shredded zucchini
1/2 cup bean sprouts
2 scallions, shredded

1 teaspoon oil
2 small eggs, beaten
1/2 teaspoon salt
1 dash pepper

Steps:

  • Combine sauce ingredients and bring to a boil. Cook till thickened. Keep warm.
  • Heat skillet or wok with 1 1/2 T oil over high heat.
  • Add garlic and stir for 10 seconds.
  • Add carrot, bamboo shoots and mushrooms and stir for 1 minute.
  • Add remaining vegetables and continue stirring for another minute.
  • Add sugar, sesame oil, salt and stock. Cover and cook 1 minute.
  • Add cornstarch and stir to thicken.
  • Mound on a platter.
  • Combine eggs, salt and pepper.
  • Heat a large, non-stick skillet with 1 t oil, pour eggs in pan and make a thin omelet.
  • To serve, lay omelet over vegetables on platter and cover with sauce.
  • Cut into wedges like a pie.
  • I served this over cooked rice.

We bought a new kind of salsa (Newman's Own Peach Salsa) to try out. It wasn't bad, but when you're expecting salsa and chips, you're NOT expecting it to be sweet! So then it was up to me to figure out what to do with the rest of the jar. This is what I came up with. And SURPRISE!! It was yummy! :-)

3/4 lb chicken tenderloins, cut into chunks (I used 6 frozen tenderloins, which was about 12 oz)
2 cups broccoli (I used frozen, since it's what I had)
3/4 cup frozen okra (pre-sliced)
2 cups green peppers, diced
1 (14 1/2 ounce) can diced tomatoes with onion and garlic
2 garlic cloves, diced
3/4 cup peach salsa (I used Newman's Own Peach Salsa, Medium)
1/2 cup fresh basil, packed

Steps:

  • Heat a large skillet on medium (spray with nonstick spray).
  • Toss in diced garlic. Stir for a minute.
  • Add chicken. Cook 3-5 minutes, until chicken looks mostly cooked.
  • Add frozen broccoli and okra. Cook 2 minutes, stirring to thaw veggies.
  • Add green peppers.
  • Stir and cook 1-2 minutes.
  • Add salsa and basil.
  • Simmer 5 minutes or so, until everything is fragrant and cooked through.
  • Enjoy!
