1 package frozen spinach, chopped, thawed and drained
1 can green chili, chopped, drained
1 cup parmesan cheese, shredded
1 cup mayonnaise
1 can artichoke heart, diced fine
8 ounces monterey jack cheese, shredded

Steps:

  • Thaw and drain spinach.
  • Be certain to get all the liquid out. Add the rest of the ingredients, mix.

Having to spend $10 on a tiny gluten free pizza can be frustrating. Thanks to my friend Jess I've now adapted a recipe that can be not only cheaper, but also much better tasting than any of the freezer varieties out there.

1 tablespoon yeast (normally in 1/4 oz packets which is just fine)
1 1/3 cups milk
1 teaspoon sugar
1 1/3 cups gluten-free flour (mine was mostly brown rice based)
1 cup cornstarch
2 teaspoons xanthan gum
1 teaspoon salt
1/2 teaspoon rosemary
1/2 teaspoon garlic
1/2 teaspoon oregano
2 teaspoons olive oil
2 teaspoons apple cider vinegar
1 (18 ounce) jar of your favorite marinara sauce, but check the ingredients for gluten (I used Kroger brand)
1 (8 ounce) can artichokes
1 bunch spinach leaves
1 (10 ounce) bag of shredded cheese (I used Sargento's 4 cheese blend)

Steps:

  • Preheat oven to 400°F.
  • Activate the yeast by placing in warm milk with the sugar. If warm enough, the yeast will bubble and thicken. This may take up to 10 minutes.
  • While the yeast is activating, pour the dry ingredients into a mixing bowl.
  • Add the remaining wet ingredients to the yeast and then combine the wet and dry ingredients.
  • You want the dough to hold together well, but not be crumbly or runny. It should hold its shape. Add more milk if needed.
  • dust counter and hands with some more corn starch to keep the dough from sticking, and press out two 12" round pizza crusts.
  • Rub a tablespoon of marinara sauce over each crust and place into oven for 10 minutes.
  • Remove from oven and add spinach, marinara sauce, artichokes, and cheese (enough for your liking) and place back into oven for 15 minutes.
  • Freeze what you don't eat for a quick dinner later.

1 pizza dough, uncooked and rolled out to about 16 inches (my pizza dough recipe is #167070)
1/2 cup pizza sauce (I love Ultimate Pizza Sauce)
10 ounces frozen chopped spinach, thawed and squeezed dry
10 ounces artichoke hearts, quartered
1 garlic clove, minced
1/2 red onion, chopped
1/4 cup olive, sliced
1/4 cup parmesan cheese, freshly grated
salt and pepper, to taste
1 large tomatoes, sliced thin
1/2 cup feta cheese, crumbled
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 450 degrees, if using pizza stone, preheat on bottom rack for 1 hour.
  • In a bowl, mix together the spinach, artichokes, garlic, onion, olives, parmesan and salt and pepper.
  • Spread pizza sauce on prepared pizza dough.
  • Evenly place the spinach mixture on the pizza and top with the sliced tomatoes.
  • Sprinkle the feta and mozzarella on top.
  • Bake for 15-20 minutes until done.

I fell in love with the alfredo artichoke pizza at Artichoke downtown and wanted to make a less expensive and less rich version at home since I like experimenting with tomato-free pizzas. I like using Recipe #453818 or Recipe #31072 to make little 8" crusts but I made a 12" version of the Sicilian dough with this pizza to have dinner ready for 2 days. I made some alfredo sauce with soymilk, dairy butter, and a packet of Simply Organic alfredo sauce mix and used that along with some fresh mushrooms and canned artichoke pieces that I rinsed. Just use whatever you have on hand or floats your boat, it'll be delicious no matter what! All the following measurements are completely approximate; it's more to give you an idea of what to use on your pizza to get this exquisite flavor that is a different kind of blonde/white pizza.

12 inches pizza crusts (storebought or homemade)
3/4 cup alfredo sauce, whatever kind you like
2 -3 cups spinach, chopped in a food processor
3 -4 tablespoons freshly grated parmesan cheese
1/2 cup chopped mixed mushrooms (I used whites and creminis)
1/2 cup artichoke, pieces
1/2 cup mozzarella cheese, shredded
1 -2 tablespoon chopped fresh oregano (or a sprinkling of dried)

Steps:

  • Spread alfredo sauce all over the pizza crust evenly to your liking.
  • Run a bunch of spinach through a food processor to get a nice chopped consistency, about 2-3 cups worth, until you have enough to layer all the spinach over the alfredo sauce completely covering the pizza.
  • Sprinkle a small amount of fresh parmesan cheese over the spinach layer.
  • Top with artichokes and mushrooms all over.
  • Sprinkle mozzarella cheese all over the mushrooms and artichokes.
  • Top with fresh or dried oregano all over the entire pizza.
  • Bake at 375F for 10-15 minutes or until the cheese has lightly browned.

2 tablespoons canned artichoke hearts, drained and quartered
1 tablespoon frozen spinach, defrosted and and squeezed to get out all of the water
2 tablespoons mozzarella cheese, divided
1 tablespoon parmesan cheese, shredded

1 pita bread
1 ounce Laughing Cow light swiss cheese
1 -2 tablespoon canned pineapple chunk, drained and sliced into quarters

  • Broil on second shelf in oven for 4 to 5 minutes or cook at 400 for about 7 minutes until cheese has melted.
