1 1/2 lbs boneless chicken tenders
1/2 cup seasoned rice vinegar (I prefer the roasted garlic flavor)
3 large green onions, minced
1 piece gingerroot (1 to 1 1/2 inch, minced)
2 tablespoons soy sauce
3/4 cup plain breadcrumbs (or substitute Panko crumbs for a more crispy exterior)
4 -6 tablespoons vegetable oil
salt and pepper
1/2 teaspoon Chinese five spice powder (optional)

Steps:

  • In a large bowl, toss chicken with rice vinegar, greens onions, ginger, soy sauce, 1/2 teaspoons salt, and 1/4 teaspoons pepper; chill 1/2 hour to 8 hours. Drain checken well; discard marinade. Dip chicken in crumbs OR Panko; shake off excess.
  • Heat 2 tbsps. oil in a non-stick skillet over medium-low heat. Cook 1/3 to 1/2 of the chicken without crowding until no longer pink in the center, about 2-3 minutes per side; drain on paper towels. Repeat until all chicken is used.

1 to 2 cups vegetable oil
Bread crumb mixture:
3 to 4 cups bread crumbs
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon freshly ground black pepper
1/2 tablespoon white pepper
1/2 tablespoon cayenne pepper
1 tablespoon thyme
4 to 6 boneless chicken breasts
1 cup all-purpose flour
2 to 4 eggs, beaten

Steps:

  • Add the vegetable oil to a deep skillet and preheat to 350 degrees F.
  • For the bread crumbs:
  • Combine the bread crumbs, garlic powder, onion powder, black pepper, white pepper, cayenne pepper and thyme in a large bowl. Set aside.
  • Slice the chicken into 1/2-inch strips. Don't forget to remove the cartilage from center of breast. Place the flour and eggs into separate bowls. Cover each strip evenly in flour, then submerge strips in the eggs, to coat well. Let excess egg drip off, and then coat with the bread crumb mixture. Fry strips in hot oil until golden brown. Remove from fryer, drain on paper towels and serve.

This recipe is a copycat of Wendy's Sweet Asian Chicken. My roommate had it one day, and I dipped one of my fries in the sauce. I was shocked to realized that the sauce is essential Thai sweet chili sauce. So here is a super fast, convenience food filled recipe to mimic it. Great for dinner with steamed veggies and rice, perfect for a lunch box! If you are making it for heat leery kids, leave off the rooster sauce. :)

1 1/2 lbs prepared frozen chicken nuggets
1/2 cup Thai sweet chili sauce
2 tablespoons sriracha sauce (rooster) (optional)

Steps:

  • Cook nuggets according to package.
  • Mix sauces together in a large bowl.
  • When chicken is done, add to sauces and toss to coat. Serve and enjoy!

This gluten free recipe is great to use for Chinese stir fries calling for breaded chicken pieces like sweet and sour or sticky chicken. I also serve them to my young nephews who like them way better than the ones mommy buys at the store. They like to dip them in honey or ketsup. I like to dip them in a spicy coriander sauce.

4 -5 lbs chicken breasts, cut into bite size pieces
1 cup cornstarch
1 cup fine cornflour
2 cups brown rice flour
2 cups potato flour
1/4 cup ground mustard
6 -10 eggs
1 cup buttermilk
2 tablespoons sesame seed oil
1 tablespoon salt
1/8 cup black pepper

Steps:

  • Place the chicken pieces in a plastic baggie and add the Buttermilk. Marinade in the buttermilk for 4 to 24 hours.
  • Next add the Cornstarch, Corn Flour, Rice Flour, Potato Flour, Ground Mustard, Salt and Pepper in a large bowl and mix thoroughly. In a separate bowl stir the Eggs and Sesame Oil, together to form an egg wash.
  • First coat some of the chicken in the Flour mix; Second dip them in the Egg wash (add more eggs if needed); Third coat in the Flour mix for a second time. Place in a 350 degree fryer for 2 to 3 minutes until golden brown. Do not crowd.
  • This recipe can be cut in half to prepare a smaller amount of chicken. We prepare a large amount and freeze the pieces once cooked. To use frozen pieces deep fry for about a minute or place on a Pizzazz. These can be used as straight up chicken nuggets or used in stir fry for Chinese.
