5 tablespoons corn oil
8 (8 inch) corn tortillas, cut into triangles
6 eggs
1 cup chipotle salsa
1 cup shredded pepper Jack cheese
salt and ground black pepper to taste

Steps:

  • Heat oil in a large skillet over medium-high heat and pan-fry tortilla triangles until they are just starting to turn golden brown and crisp, 3 to 5 minutes. Add salsa, reduce heat to medium-low, and carefully mix tortillas and salsa with a spatula. Cook for 5 minutes.
  • Beat eggs, salt, and pepper in a small bowl. Add eggs to tortillas and increase heat to medium-high. Scramble eggs gently until just set. Top with pepper Jack cheese, cover, and turn off the heat. Let sit for 3 minutes until cheese is melted.

2 to 3 cups tortilla chips (approximately 30 chips from a bag)
1 1/4 cups green salsa (or red salsa )
1/2 cup queso fresco cheese (or cotija, crumbled)
2 tablespoons Mexican crema (or substitute regular sour cream thinned with a splash of milk)

Steps:

  • Gather the ingredients.
  • Lightly coat a large frying pan with vegetable oil. Heat over medium-high heat until oil shimmers.
  • Spread tortilla chips in pan.
  • Quickly pour salsa over chips and reduce heat to medium-low. Simmer the chips in sauce, undisturbed, until chips absorb some of the liquid and soften, for approximately 10 minutes.
  • Divide chilaquiles between two plates; sprinkle half of the cheese on each and drizzle with half of the crema.

5 tablespoons vegetable oil
8 eggs, beaten

½ cup green taco sauce
1 cup shredded Monterey Jack cheese

Steps:

  • Heat oil in a skillet over medium-high heat. Add tortilla pieces to oil and fry until crisp, about 5 minutes.
  • Pour beaten eggs over the tortilla pieces in the skillet. Season with salt and pepper. Cook, stirring occasionally, until eggs have set, about 4 minutes. Remove from heat. Top with taco sauce and Monterey Jack cheese.

I fell in love with Chilaquiles while on a trip to Cancun. I recently found this recipe from Rick Bayless, and I am thrilled to have it! I haven't tried it yet, but I'm sure that it is to die for like everything else he does. I've posted it here for safe keeping. When I do make it, I will probably scale it down for just the two of us. update; This was amazing! Just like I remembered! I made this today and used 1 jar of the salsa and 1 cup of chicken broth. I also bought a package of refrigerated corn tortillas. I cut into 9ths pizza style, and fried them in oil. I used 18 tortillas. I used a mexican queso fresco, a mexican crumbling fresh farmers type cheese for the garnish. Totally delish! My scaled down verson would feed 4 to 6 as a main dish, or maybe 10 as a side.

3 tablespoons vegetable oil
2 large onions, sliced (divided use)
3 (16 ounce) jars salsa, preferably fire-roasted tomatillo salsa
1 quart chicken broth
24 ounces tortilla chips, preferably rustic homestyle ones
2 cups shredded mexican melting cheese (like Chihuaua or monteray Jack)
2 cups shredded cooked chicken
3/4 cup sour cream thinned with a little milk or 3/4 cup cream
1/2 cup grated mexican queso anejo (optional) or 1/2 cup other garnishing cheese (optional)
1/2 cup cilantro (to garnish)

Steps:

  • In a very large, (6-quart) Dutch oven, heat the oil over medium high.
  • Add about 2/3 of the onions, and cook, stirring often, until richly browned.
  • Add salsa and broth and bring to a boil.
  • When sauce is at a rolling boil, turn off the heat and stir in the tortilla chips and shredded cheese. Press the chips down so that nearly all of the chips are submerged, some may still stick out.
  • Strew the chicken over the top, then cover and let stand 3 to 4 minutes.
  • Gently stir everything together, then drizzle with the crema and sprinkle with the onion, optional grated queso anejo and cilantro.
  • serve without hesitation.

1/2 cup chopped white onions
2 cloves garlic, minced
2 large tomatoes, chopped
1/4 cup oil, divided
12 corn tortillas (6 inch), each cut into 8 wedges
1-1/2 cups KRAFT Shredded Monterey Jack Cheese
3/4 cup light sour cream
2 fresh jalapeño peppers, chopped

Steps:

  • Crumble chorizo into large skillet sprayed with cooking spray; cook on medium heat until done, stirring occasionally. Add onions and garlic; cook 2 to 3 min. or until onions are crisp-tender. Drain; spoon into medium bowl. Stir in tomatoes; cover to keep warm.
  • Heat 2 Tbsp. oil in same skillet. Add half the tortilla wedges; cook 4 to 5 min. or until crisp and golden brown, stirring constantly. Remove from skillet; cover to keep warm. Repeat with remaining oil and tortillas.
  • Return cooked tortilla wedges to skillet; top with chorizo mixture and cheese. Cover; cook on low heat 3 to 5 min. or until chilaquiles are heated through and cheese is melted.
  • Serve topped with sour cream and peppers.
