4-Ingredient Baked Flatbread (Plus Topping Ideas) image

A simple and delicious flatbread recipe made in one bowl using only four ingredients. Enjoy it on it's own or use it as a crust for your favourite flatbread toppings.

1 cup plain Greek yogurt (I used zero fat), stirred well
1 cup all-purpose flour
2 tsp baking powder
1 tbsp extra virgin olive oil

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper. Set aside.
  • In a large bowl, using a wooden spoon, combine together the yogurt, flour, and baking powder until uniform and a dough ball forms.
  • Flour your hands and knead until the dough is smooth (I knead right in the bowl). The dough will go from having ragged texture to a smoother, softer texture. Place the dough onto the center of the baking sheet.
  • Using your hands, evenly flatten the dough until the dough is ¼ inch thick (8x12 inch flatbread). Brush olive oil over the top of the flatbread.
  • Bake for 20-25 minutes until the flatbread is golden-brown and cooked through.
  • If adding toppings: Decrease the oven to 325 degrees F. Top the baked flatbread with desired toppings *(see first note) and bake for 8-12 minutes until the ingredients are softened and heated through.

This is great for those who want to add more fiber to their diet and it tastes sooooo good. A winning combination.

Number Of Ingredients 8

1 teaspoon salt
3 tablespoons brown sugar
4 tablespoons shortening
1 cup water or 1 cup milk
3 cups flour
1/2 cup natural bran
1/4 cup old fashioned oats
1 1/2 teaspoons yeast

Steps:

  • Warm water/ milk to lukewarm temperature.
  • Melt shortening.
  • Warm mixer bowl with warm water.
  • Dissolve yeast in a little water.
  • Add water/milk and shortening.
  • Add salt and sugar.
  • Add flour and bran.
  • Stir all ingredients for 30 sec.
  • Mix on Speed 2 for 2 minutes or until elastic.
  • Dough should be moist. If it looks dry add water as needed but not more than 1/4 cup.
  • Place dough in greased bowl and cover.Allow dough to double in size (approx 1 hour).
  • Punch down and form into a loaf, allow to rise for 30 minutes.
  • Preheat oven to 350 degrees and grease large loaf pan.
  • Bake for 40 minutes.
  • I used a Kitchen Aid Mixer to mix this dough so if using a different mixer you may need to use different settings.

SUN OVEN BRAN AND YOGURT BREAD



Sun Oven Bran and Yogurt Bread image

1 1/3 cups water
1 scant cup strained plain yogurt
2 tablespoons vegetable oil
2 tablespoons molasses
3 1/4 cups unbleached white bread flour
2 1/4 cups whole wheat flour
2/3 cup wheat bran
2 teaspoons salt
1 1/2 teaspoons rapid-rise active dry yeast

Steps:

  • Pour the water, yogurt, oil, and molasses into the pan of a bread machine. Sprinkle both flours over the liquids, making sure that they are completely covered. Add the wheat bran. Add the salt in one corner of the pan. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting and press start. When the dough cycle has finished turn the dough out onto a lightly floured surface and gently punch down. Cut dough into two pieces and form two loaves. Place dough in two lightly oiled bread pans, cover with oiled plastic wrap and let rise in a warm spot for 30 to 45 minutes. Set Global Sun Oven out to preheat while the bread is rising. Bake loaves in the Sun Oven until lightly browned and sound hollow when tapped, 1 to 1 1 1/2 hours. Makes 2 loaves

This recipe can be incubated in a self-cleaning oven. It will yield a nice, thick yogurt, as compared to some homemade yogurts that are runny. Save about 1 cup of this yogurt to use as your starter on the next batch.

1 gallon whole milk
1 cup plain yogurt with active cultures

Steps:

  • Turn a self-cleaning oven on for 10 minutes at the lowest temperature, about 170 degrees F (77 degrees C). Turn the oven off and keep door closed to gently heat the oven walls, about 50 minutes.
  • Pour milk into a heavy pot over medium heat. Cook, stirring often, until an instant-read thermometer registers 185 degrees F (85 degrees C), about 15 minutes. Let cool to 115 degrees F (46 degrees C).
  • Mix 1 cup of cooled milk and yogurt together in a bowl until incorporated. Pour back into the pot of milk and stir to combine. Ladle the milk mixture into 5 very clean glass canning jars and screw on the lids.
  • Place the filled jars into the warm oven; leave the oven off and turn the oven light on. Leave the jars inside the closed oven for 6 hours. Remove the jars without shaking and place in the refrigerator until thickened, about 2 hours. Store in the refrigerator for up to 10 days.

SIMPLE SUN OVEN BREAD

2 cups water
6 cups white bread flour
2 teaspoons salt
1 1/2 tablespoons sugar
3 tablespoons butter
1 1/2 teaspoons rapid-rise (instant) active dry yeast

Steps:

  • Pour the water into the bread machine pan. Sprinkle the flour over the water making sure to cover it completely. Add the salt, sugar, and butter in separate corners of the pan. Make a shallow indentation in the center of the flour and add the yeast. Set the bread machine to the dough setting. Press start. Check the dough after a few minutes of kneading and add a little more water if needed. At the end of the cycle turn the dough out onto a lightly floured surface and gently punch down. Cut the dough in half and shape it into two loaves. Put the dough in two lightly oiled bread pans. Cover the pans with oiled plastic wrap. Let the loaves rise in a warm spot 30 to 45 minutes. Set the Sun Oven out to preheat while the loaves are rising. Bake in the Sun Oven until the bread is lightly browned and sounds hollow when tapped, 45 minutes to 1 hour.

Steps:

  • Heat oven to 400°F.

  • Set crust on Dark and program for the Basic cycle; press Start.
  • The dough ball will be slightly sticky, but it will smooth out after the kneading.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack; let cool to room temperature before slicing.
