Veggie meatballs with tomato courgetti image

Spiralize courgettes to make this healthier, gluten-free 'pasta' dish. The vegetarian meatballs use ground almonds instead of breadcrumbs to increase the protein

3 garlic cloves
2 tsp rapeseed oil , plus extra for greasing
1 small onion , very finely chopped
2 tsp balsamic vinegar
100g canned red kidney beans
1 tbsp beaten egg
1 tsp tomato purée
1 heaped tsp chilli powder
½ tsp ground coriander
15g ground almonds
40g cooked sweetcorn
2 tsp chopped thyme leaves
2 large or 3 normal tomatoes , chopped
1 tsp tomato purée
1 tsp balsamic vinegar
2 courgettes cut into 'noodles' with a spiralizer, julienne peeler, or by hand

Steps:

  • Finely chop the garlic. Heat the oil in a large pan and fry the onion, stirring frequently, for 8 mins. Stir in the balsamic vinegar and cook for 2 mins more. Meanwhile, put the beans in a bowl with the egg, tomato purée and spices, and mash until smooth. Stir in the almonds and sweetcorn with the thyme, a third of the chopped garlic and the balsamic onions. Mix well and shape into about 8 balls the size of a walnut, and place on a baking tray lined with oiled baking parchment.
  • Heat oven to 220C/200C fan/gas 7 and bake the veggie meatballs for 15 mins until firm. Meanwhile, put the tomatoes, tomato purée and balsamic vinegar in a pan and cook with 2-3 tbsp water until pulpy, then stir in the remaining garlic and courgetti. Turn off the heat as you want to warm the noodles rather than cook them. Serve with the veggie meatballs.

Make a quick and easy meal for two with these pork meatballs, served with spaghetti, courgette ribbons, lemon and parmesan - perfect for summer evenings

2 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , crushed
1 tsp fennel seeds
250g pork mince
large handful parsley , leaves chopped, stalks finely chopped
1 large courgette , peeled into ribbons all around the edge, centre grated or finely chopped
200g spaghetti
½ a lemon , zested and juiced
grated parmesan , to serve

Steps:

  • Heat ½ tbsp of the olive oil in a large frying pan over a medium heat. Add the onion and soften for 5 mins, then add the garlic and fennel and cook for 2 mins longer. Tip into a bowl. Add the pork mince, parsley stalks and grated courgette to the bowl, season well, mix, and shape into 10 meatballs. Heat the remaining oil in the frying pan, add the meatballs and fry for 5-8 mins, turning occasionally, until golden brown and cooked through. Set the pan aside.
  • Bring a pan of salted water to the boil and cook the spaghetti for 1 min less than pack instructions. Using tongs, transfer the pasta to the pan of meatballs, sloshing in some of the cooking water as you go. Add the courgette ribbons to the pan and put it back over the heat. Toss the pasta and meatballs with the courgette ribbons in the pan with a ladleful of pasta water and add the lemon juice. Season well, tip into bowls and scatter over the chopped parsley leaves, lemon zest and a generous grating of parmesan.

Thai Green Curry Meatballs with Zoodles image

3 tablespoons vegetable oil
3 tablespoons Thai green curry paste
Two 13.5-ounce cans coconut milk
One 14-ounce bag plain frozen meatballs, thawed
Kosher salt and freshly ground black pepper
Two 16-ounce packages fresh zucchini noodles (zoodles)
1 red Thai bird chile, sliced very thin on the bias
1/2 cup fresh basil leaves
1/2 cup fresh cilantro leaves
2 teaspoons toasted black sesame seeds
2 teaspoons toasted white sesame seeds
1 lime, cut into wedges

Steps:

  • Heat 2 tablespoons oil in a large saucepan or wide pot over medium heat. Add curry paste and bloom in the oil, stirring frequently, until very fragrant, about 2 minutes. Stir in coconut milk and bring to a simmer. Add thawed meatballs and continue to simmer, stirring frequently, until meatballs are heated through, another 3 to 5 minutes. Season with salt and pepper to taste.
  • Heat the remaining tablespoon oil in another large pan over medium-high heat. Add the zoodles and a pinch of salt and cook, stirring occasionally, until zoodles are warmed through and some of their moisture has evaporated, about 5 minutes.
  • Evenly divide the zoodles among 4 bowls. Ladle curry over zoodles and top each with a few meatballs. Top each with sliced Thai bird chiles, basil, cilantro and black and white sesame seeds. Serve with lime wedges.

400g lean beef steak mince
2 tsp dried oregano
1 large egg
8 garlic cloves , 1 finely grated, the other sliced
1-2 tbsp olive oil
1 fennel bulb , finely chopped, fronds reserved
2 carrots , finely chopped
500g carton passata
4 tbsp balsamic vinegar
600ml reduced-salt vegetable bouillon
1 tsp rapeseed oil
1-2 large courgettes , cut into noodles with a julienne peeler or spiralizer
350g frozen soya beans , thawed

Steps:

  • Put the mince, oregano, egg and grated garlic in a bowl and grind in some black pepper. Mix together thoroughly and roll into 16 balls.
  • Heat the oil in a large sauté pan over a medium-high heat, add the meatballs and fry, moving them around the pan so that they brown all over - be careful as they're quite delicate and you don't want them to break up. Once brown, remove them from the pan. Reduce the heat slightly and add the fennel, carrots and sliced garlic to the pan and fry, stirring until they soften, about 5 mins.
  • Tip in the passata, balsamic vinegar and bouillon, stir well, then return the meatballs to the pan, cover and cook gently for 20-25 mins.
  • Meanwhile, heat the 1 tsp of oil in a non-stick pan and stir-fry the courgette with the beans to heat through and soften. Serve with the meatballs and scatter with any fennel fronds.

I am always looking for a way to use up my zucchinis! This made a yummy and moist meatball. I use grass fed beef which can sometimes be dry This recipe produced 10 meatballs all just slightly larger then a golf ball. 5 meatballs per serving. Number Of Ingredients 8

1/4 lb ground beef (i use grass-fed beef)
8 saltine crackers, crushed
3 tablespoons milk
1 egg
1 tablespoon crushed garlic
1 medium zucchini, grated
3 basil leaves, large leaves (about a TBLS chopped fresh, less if dried)
garlic salt

Steps:

  • In a bowl mix with your hands the first 5 ingredients. Set aside.
  • Meanwhile shred the zucchini and sprinkle with garlic salt. Put shredded zucchini in a colander and put a weight on top to help drain as much liquid as possible in 15 minutes.
  • Chop the basil.
  • Add the basil and the drained zucchini to the meat mixture and mix well using your hands.
  • Roll into balls and put on a sprayed baking sheet and into a 350 degree oven for 15 minutes. iIf using a high fat meat bake for 20 minutes.
  • Enjoy!
