8 oz package of cream cheese ((softened))
1/2 cup powdered sugar
2 tablespoons heavy whipping cream
Fruit toppings (fresh strawberries, fresh blueberries, kiwi and clementines)

Steps:

  • Preheat oven to 325.
  • Grease a pizza pan with nonstick cooking spray. Spread dough into prepared pan. I like to put my hand into a sandwich bag and spray the bag with cooking spray and press the dough into the pan. You may need to add additional cooking spray to the bag on your hand as you spread the dough.
  • Bake for 10-12 minutes or until golden brown and center is set. Cool completely.
  • Beat cream cheese, sugar and cream together until smooth with a hand mixer. Spread onto cookie. Top with sliced strawberries, blueberries, sliced kiwi and orange sections. Refrigerate until ready to serve. Cut into pizza size slices and serve.

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Spray a 10- to 12-inch tart pan or pizza pan with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder and salt. In a large mixing bowl, cream together the butter and sugars until smooth using a handheld mixer. ½ pint blueberries
½ c. raspberries

  • Preheat the oven to 350 Degrees. Spray a 15-17 inch pizza pan or 15X11 rectangular baking sheet with baking spray.
  • Spread the sugar cookie dough evenly leaving one inch away from the pan so as the cookie dough bakes it won't overflow into your oven ( that happened to me). NOTE: I would place aluminum foil on the rack where the pizza will be baked in case it overflows, just in case. Bake for 10 minutes. The cookie dough will be slightly browned. Allow cooling completely.
  • Using a handheld electric mixer or standing mixer, add the cream cheese and blend until creamy. Add the powdered sugar slowly and vanilla extract until well mixed and smooth. Spread across the sugar cookie crust. Begin to layer and spread the fruit across the crust as desired.

1 teaspoon Coconut extract or Vanilla extract

1 ,8 ounce package Cream Cheese (softened)

Zest and juice from one lime
Fruit for Topping
3 Kiwis
1 package Strawberries
1 ,6 ounce package Raspberries
1 ,6 ounce package Blackberries
1 ,6 ounce package Blueberries

Steps:

  • For the Lime Sugar Cookies
  • Preheat oven to 375 Degrees F.
  • In a large mixing bowl cream together both sugars, butter, egg, coconut extract, lime zest and juice.
  • In a separate bowl mix together flour, cream of tartar, salt, and baking soda.
  • Add dry ingredients to wet ingredients; mix well.
  • Roll dough into 2 inch balls and place about 1 inch apart on a cookie sheet.
  • In a small dish filled with extra sugar, dip the bottom of a flat bottomed glass in the sugar and then press down on each dough ball to flatten. Dip glass bottom back into the sugar before you flatten each dough ball. (Flatten to about 1/4 inch thickness.)
  • Bake for 8-10 minutes. Remove from oven and let cookies cool on a cooling rack to room temperature.
  • For the Lime Cream Cheese Frosting
  • In a large mixing bowl cream together butter and cream cheese for 3 minutes until light and fluffy.
  • Gradually add sugar and mix on low to incorporate. Add lime zest and juice; cream for 3- 5 minutes until light and fluffy.
  • Use a small offset spatula or butter knife to spread a dollop of frosting on each of your cooled cookies. Decorate with sliced fruit.

This berry pizza uses sugar cookie dough for the crust, and marshmallow creme in the filling. It's so good, and easy to put together. I make it in a 9x13 pan, and cut into squares, but you could make in a round pizza pan if you wish, cutting into triangles.

1 (16 ounce) package refrigerated sugar cookie dough
8 ounces marshmallow creme
8 ounces cream cheese
2 pints strawberries, sliced
2/3 cup water
1 cup sugar
1 cup strawberry, chopped
3 tablespoons cornstarch

Steps:

  • Press the cookie dough into a greased 9x13 shallow rectangle pan.
  • Bake for 10 minutes at 350°F
  • Remove from oven and allow to cool.
  • In a saucepan, mix the water, sugar, and chopped berries.
  • Bring to a boil and simmer for 3 minutes.
  • Remove from the heat.
  • Add the cornstarch and mix well.
  • Allow to cool.
  • With an electric mixer, blend the cream cheese and marshmallow creme.
  • Spread the mixture on the cookie dough.
  • Top with the sliced berries.
  • Drizzle the pizza with the berry sauce.
  • Chill until serving.
  • Slice into pieces and serve.

1/2 cup salted butter ((or unsalted - see notes))
3/4 cup sugar
1 large egg
1 teaspoon almond extract ((or vanilla))
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 1/4 cups all purpose flour
8 oz. cream cheese ((the block kind, not spreadable))
1/2 cup salted butter ((or unsalted - see notes))
1 1/2 cups powdered sugar
1/4 cup Red fruit - sliced strawberries ((or raspberries))
1/3 cup Orange fruit - mandarin orange slices ((canned or fresh, or sliced peaches or apricots))
1/3 cup Yellow fruit - diced mango ((canned or fresh, or starfruit))
1/2 cup Green fruit - halved and sliced kiwi ((or halved green grapes))
3/4 cup Blue fruit - blueberries ((or concord grapes, seeded and halved))
1 cup Purple fruit - halved blackberries ((or red grapes, which actually look kind of purple!))

Steps:

  • Preheat oven and prepare baking pan. Preheat your oven to 350 degrees F. Line a 14" circular pizza pan or stone with parchment paper (or grease the pan).
  • Make the sugar cookie crust dough. In a large bowl, make the dough for the sugar cookie crust. Beat together the butter (1/2 cup), sugar (3/4 cup), and egg for 2-3 minutes using an electric mixer until light and fluffy. Add the almond extract (1 teaspoon), baking powder (1/4 teaspoon), and kosher salt (1/4 teaspoon). Mix together until combined. Add the flour and mix until everything is just combined.
  • Form and bake the sugar cookie crust. Place the dough in the center of the prepared circular pan. Place a piece of plastic wrap over it. Use your hands to press down on the dough and form a circle shape, leaving about 1/2" of room at the edge to allow for expansion. Peel the plastic wrap off and bake at 350 degrees F for about 15 minutes (longer for a more well-done crust). Allow to cool completely (I placed mine on a wire rack and stuck it in the fridge for a while to speed up the cooling process).
  • Make the cream cheese frosting. In a large bowl, mix together the cream cheese (8 oz.), salted butter (1/2 cup), and powdered sugar (1 1/2 cups) with an electric mixer on high speed until smooth and well-mixed.
  • Frost the cookie crust. Once the crust has cooled, use an offset spatula or silicone spatula to spread a layer of cream cheese frosting over the crust, leaving a little room at the edge. You may have some frosting left over, depending on how big you made the crust and how thick of a layer you want (you can freeze any leftovers for later!).
  • Decorate! Start in the center with strawberries (red), and work your way out in concentric circles with the mandarin oranges (orange), mangoes (yellow), kiwis (green), blueberries (blue), and sliced blackberries (purple). Feel free to switch up which fruit you start with or decorate in different patterns for different occasions!
  • Slice and serve. The fruit pizza is easier to slice when it's cool, so I recommend refrigerating it for about 30 minutes prior to serving.

¾ cups unsalted butter (softened )
1 cup white granulated sugar
2 eggs
1 teaspoon vanilla
2½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
8 ounces cream cheese (softened)
⅓ cup powdered sugar
1 teaspoon vanilla (use clear vanilla if you prefer brighter white icing)
your favorite fresh fruits

Steps:

  • Preheat oven to 400°F and line baking sheets with parchment paper.
  • In a large mixing bowl or stand mixer, cream butter and sugar on high until light and fluffy, about 3 minutes.
  • Blend in eggs and vanilla until just incorporated.
  • Gradually add flour, baking powder and salt and mix until just combined.
  • Drop dough balls (medium scoop, about 2") onto a parchment lined cookie sheet spacing evenly, 6 cookies per sheet.
  • Using a glass, press down.
  • Bake 8-9 minutes, until cookies are set and slighly golden around the edges. Allow to cool 1 minute on baking sheet and transfer to a wire cooling rack.

8 ounces cream cheese (1 package, softened)
2 cups cool whip
1 teaspoon vanilla
1 cup powdered sugar
21 ounces strawberry glaze pie filling (1 can)
16 ounces strawberries (hulled and sliced, 1 package)

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 12-inch pizza pan with nonstick cooking spray.
  • Roll out cookie dough onto the pan and bake for 10-12 minutes, or until barely golden brown. Let cool completely.
  • In a mixing bowl, beat together cream cheese, Cool Whip, vanilla and powdered sugar until well combined and spread over cooled cookie crust.
  • Top with strawberry glaze pie filling and sliced strawberries.
  • Cut into slices and serve.

Sugar Cookie Crust
1 1/2 cups cassava flour
3/4 cup maple sugar
2/3 cup room temerature ghee
1 egg
1 tsp vanilla
1/4 tsp baking soda
Frosting
1/2 cup softened butter
1/2 cup softened cream cheese
1/4 cup raw honey
1 tsp vanilla
Toppings
sliced fruit of your choice

Steps:

  • Preheat oven to 350*.
  • In a large bowl, beat the ghee on high with a hand mixer, until creamy.
  • Add the maple sugar and baking soda and beat once more until combined, scraping the sides to mix well.
  • Beat in the egg and vanilla.
  • Add the flour and mix with a rubber spatula until mostly combined, then finish mixing with the hand mixer.
  • Line 2 small or one large pizza pan with parchment paper (don't skip this part).
  • Either divide the dough into two parts and roll onto two pizza pans, or roll out the dough onto one large pizza pan, using a rolling pin, to about 1/4" thickness.
  • Bake for 10-12 minutes, until lightly golden, then remove and allow to cool.
  • Meanwhile, prepare your frosting: combine ingredients in a large bowl and mix on high with a hand mixer until smooth.
  • Slice your fruit and set aside.
  • Once cooled, frost your sugar cookie crust(s) and top with fruit slices.
  • Slice up like a pizza and enjoy!
