- Grease a pizza pan with nonstick cooking spray. Spread dough into prepared pan. I like to put my hand into a sandwich bag and spray the bag with cooking spray and press the dough into the pan. You may need to add additional cooking spray to the bag on your hand as you spread the dough.
- Bake for 10-12 minutes or until golden brown and center is set. Cool completely.
- Beat cream cheese, sugar and cream together until smooth with a hand mixer. Spread onto cookie. Top with sliced strawberries, blueberries, sliced kiwi and orange sections. Refrigerate until ready to serve. Cut into pizza size slices and serve.

- Preheat oven to 375 Degrees F.
- In a large mixing bowl cream together both sugars, butter, egg, coconut extract, lime zest and juice.
- In a separate bowl mix together flour, cream of tartar, salt, and baking soda.
- Add dry ingredients to wet ingredients; mix well.
- Roll dough into 2 inch balls and place about 1 inch apart on a cookie sheet.

- Preheat oven and prepare baking pan. Preheat your oven to 350 degrees F. Line a 14" circular pizza pan or stone with parchment paper (or grease the pan).
- Make the sugar cookie crust dough. In a large bowl, make the dough for the sugar cookie crust. Beat together the butter (1/2 cup), sugar (3/4 cup), and egg for 2-3 minutes using an electric mixer until light and fluffy. Add the almond extract (1 teaspoon), baking powder (1/4 teaspoon), and kosher salt (1/4 teaspoon). Mix together until combined. Add the flour and mix until everything is just combined.

- Frost the cookie crust. Once the crust has cooled, use an offset spatula or silicone spatula to spread a layer of cream cheese frosting over the crust, leaving a little room at the edge. You may have some frosting left over, depending on how big you made the crust and how thick of a layer you want (you can freeze any leftovers for later!).
- Decorate! Start in the center with strawberries (red), and work your way out in concentric circles with the mandarin oranges (orange), mangoes (yellow), kiwis (green), blueberries (blue), and sliced blackberries (purple). Feel free to switch up which fruit you start with or decorate in different patterns for different occasions!

- Preheat oven to 350*.
- In a large bowl, beat the ghee on high with a hand mixer, until creamy.
- Add the maple sugar and baking soda and beat once more until combined, scraping the sides to mix well.
- Beat in the egg and vanilla.
- Add the flour and mix with a rubber spatula until mostly combined, then finish mixing with the hand mixer.
- Line 2 small or one large pizza pan with parchment paper (don't skip this part).
- Either divide the dough into two parts and roll onto two pizza pans, or roll out the dough onto one large pizza pan, using a rolling pin, to about 1/4" thickness.
- Bake for 10-12 minutes, until lightly golden, then remove and allow to cool.
- Meanwhile, prepare your frosting: combine ingredients in a large bowl and mix on high with a hand mixer until smooth.
- Slice your fruit and set aside.
- Once cooled, frost your sugar cookie crust(s) and top with fruit slices.
- Slice up like a pizza and enjoy!
