CHICKEN CACCIATORE

Try Giada De Laurentiis' Chicken Cacciatore recipe, a rustic poultry-vegetable hunter's stew, from Everyday Italian on Food Network.

Provided by Giada De Laurentiis

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 15

4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Steps:

  • Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
  • In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

STUFFED CHICKEN CACCIATORE

Stuffed Chicken Cacciatore image

EatSimpleFood.com This Italian style chicken cacciatore is lightly stuffed with spinach and parmesan and baked in a garlic, onion, and tomato sauce.

Provided by beckie

Categories     Main Dish

Time 1h30m

Yield 6

Number Of Ingredients 15

6 chicken breasts, butterflied
1/2 cup onions, diced
2 tsp garlic, minced
6 ounces (6 cups) spinach
1/2 cup Parmesan cheese, grated
salt
black pepper
12 small or 6 large slices fresh Mozzarella - as garnish
1 Tbsp olive oil
1/2 cup onion, diced
1 Tbsp garlic, minced
28 ounce can crushed tomatoes
1 tsp dried Italian seasoning (any combo of basil, oregano, thyme, parsley, etc...)
1/4 cup fresh basil, chiffonade as garnish
16 ounces (1 lb) spaghetti, or zucchini noodles or gluten free pasta

Steps:

  • Preheat oven to 375F.
  • Butterfly chicken breasts (some stores will do this for you at the meat counter) and set aside. Butterflying is cutting the piece of meat in half but leaving the end portion uncut (making it look like an open book). You can pound the chicken between plastic to make it flatter if you need/want to. Check out Eat Simple Food's video showing you how to butterfly chicken. Season the chicken with salt and pepper and set aside open faced.
  • Bring a medium sized pan to medium high heat and add olive oil to lightly coat the pan. Add the chopped onions and cook ~ 3-4 minutes or until onions are translucent.
  • Add minced garlic and cook an additional 1-2 minutes or until fragrant.
  • Add spinach and cook an additional 2-3 minutes or until wilted.
  • Spoon inside the butterflied chicken and lightly fold over. You will not need string or toothpicks to hold this together - just a gentle touch.
  • Bring a medium sized pan to medium high heat and add olive oil to lightly coat the pan. Add the chopped onions and cook ~ 3-4 minutes or until onions are translucent.
  • Add minced garlic and cook an additional 1-2 minutes or until fragrant.
  • Add the crushed tomatoes and seasoning.
  • Bring to a boil, reduce heat, and simmer uncovered on low for ~ 20 minutes. Taste and add more seasoning, salt, and pepper as desired.
  • Transfer the sauce to a large baking dish and place the chicken on top of the sauce.
  • Top chicken with fresh Mozzarella slices.
  • Bake for ~25-30 minutes or until internal temperature of chicken reaches 165F and juices run clear. The sauce should be hot and bubbling. Turn the oven to broil for 2-3 minutes (watching carefully) if your cheese is not browning.
  • Add spaghetti to boiling salted water and cook ~ 10-12 minutes or until desired doneness. Serve over spaghetti and garnish with basil. Happy Eating! Beckie

THE BEST CHICKEN CACCIATORE

The Best Chicken Cacciatore image

This chicken cacciatore is a real stick-to-your ribs dinner. Dark meat chicken is seared and braised in a hearty wine and tomato sauce until tender for a rustic homestyle meal. We love it as-is with maybe just a side salad, but no one would be upset if you served it on a bed of creamy polenta!

Provided by Food Network Kitchen

Categories     main-dish

Time 2h25m

Yield 6 servings

Number Of Ingredients 13

1/4 cup olive oil
6 chicken drumsticks
6 chicken thighs
Kosher salt and freshly ground black pepper
4 ounces pancetta, diced
2 small carrots, peeled and diced (about 3/4 cup)
1 celery stalk, diced
1 medium yellow onion, diced
4 cloves garlic, chopped
1 tablespoon oregano leaves, chopped
1 cup dry red wine
One 28-ounce can whole peeled plum tomatoes, crushed
2 tablespoons flat-leaf parsley leaves, chopped, plus more for garnish

Steps:

  • Heat 2 tablespoons of the oil a large Dutch oven over medium heat.
  • Sprinkle the chicken with salt and pepper. Working in batches, cook the chicken until golden brown, 5 to 6 minutes per side. Transfer the browned chicken to a plate or baking sheet.
  • Discard the oil. Put the pot over medium heat and add the remaining 2 tablespoons oil. Add the pancetta and cook, stirring, until golden brown, 4 to 5 minutes. Transfer the pancetta with a slotted spoon to a small plate.
  • Reduce the heat to medium-low and add the carrots, celery and onions. Cook, stirring occasionally, until the vegetables are golden brown, about 10 minutes. Add the garlic and oregano and cook until fragrant, about 1 minute.
  • Add the wine and scrape up any browned bits with a wooden spoon. Increase the heat to high and bring to a boil. Cook, stirring frequently, until the liquid is reduced by about two-thirds, 3 to 4 minutes. Stir in the tomatoes and reserved pancetta. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Reduce the heat to low and bring the sauce to a gentle simmer. Cover partially and cook, stirring occasionally, until the flavors come together, 35 to 40 minutes.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Add the chicken skin-side up to the sauce, cover and transfer the pot to the oven. Cook until the chicken is cooked through and tender, 35 to 40 minutes.
  • Transfer the chicken pieces to a serving platter and cover loosely with foil to keep warm.
  • If necessary, skim off any fat from the surface of the sauce with a large spoon or ladle and discard. Stir in the parsley and season with salt and pepper. Pour the sauce over the chicken and top with more parsley.

CHICKEN CACCIATORE

Chicken Cacciatore image

Provided by Anne Burrell

Categories     main-dish

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 13

Olive oil, for coating
One 4- to 5-pound chicken, cut into 8 to 10 pieces
Kosher salt
2 large onions, sliced
Pinch crushed red pepper flakes
4 cloves garlic, smashed and finely chopped
1 red pepper, cut into 1/2-inch dice
1 yellow pepper, cut into 1/2-inch dice
1 pound cremini mushrooms, cleaned and sliced
2 cups dry white wine
Two 28-ounce cans Italian plum tomatoes, passed through a food mill or pureed
3 bay leaves
1 bundle thyme, tied with kitchen twine

Steps:

  • Coat a large, wide pot with oil and set over high heat. Sprinkle the chicken with salt and cook to brown, working in batches if needed. Remove the chicken to a plate and discard most of the excess fat in the pan.
  • Reduce the heat to low and add 1 tablespoon oil, if needed, to coat the bottom of the pan. Add the onions and crushed red pepper, then season with salt, and cook to sweat the onions, 8 to 10 minutes. Add the garlic and sweat for 1 to 2 minutes. Add the red and yellow peppers, and cook until soft, 2 to 3 minutes. Add the mushrooms, season with salt and cook until soft. Add the white wine and cook to reduce by half.
  • Return the chicken to the pan and add the tomatoes; taste for seasoning and adjust if needed. Add the bay leaves and thyme. Bring to a boil and reduce to a simmer. Partially cover the pot and simmer for 20 to 30 minutes. Check the sauce periodically and add water as needed; the level of liquid should be about even with the chicken.
  • Remove the chicken from the pot and place on a pretty serving platter. Taste the sauce for seasoning, and adjust if needed. Skim the surface of the sauce if excessively greasy, and remove the thyme bundle and bay leaves. Spoon the sauce over the chicken to serve .
