This recipe uses plain yogurt not heavy cream so it's lower in fat and calories but it is still just as good. It is a very simple and refreshing soup.

2 pints strawberries
2 cups plain yogurt
½ cup orange juice
½ cup white sugar
½ cup water
⅛ teaspoon ground cardamom

Steps:

  • In a blender, combine the strawberries, yogurt, orange juice, sugar, water and cardamom. Puree until well mixed. Chill and serve.

1 liter quart strawberry, hulled and halved
about 1/3 cup confectioners' sugar or 3 tablespoons local honey
1 orange, grated rind of
2/3 cup yogurt
1/2 cup fresh orange juice

Steps:

  • Slice and set aside about 8 strawberries for garnish.
  • Remove the tops and half the rest of the strawberries.
  • Toss the halved strawberries with the sugar or honey, orange rind. Let sit for 15 minutes.
  • Blend in the food processor until smooth.
  • Whisk in the yogurt and orange juice, adding extra sweetener if needed.
  • Serve in chilled bowls with sliced berries sprinkled on top.

2 cups hulled and sliced fresh or (thawed) frozen strawberries
1 cup orange juice
1 cup vanilla yogurt
1/2 teaspoon vanilla extract
Whipped topping, as needed
Fresh mint sprigs, optional

Steps:

  • In a blender, combine all the ingredients but the whipped topping and mint and process until smooth. Ladle the soup into bowls and top with a dollop of whipped topping. Garnish with mint, if desired.

1 (32 ounce) container nonfat plain yogurt
1 3/4 cups white grape juice
3 tablespoons sugar
2 tablespoons fresh lemon juice
1/8 teaspoon cinnamon
1 pint fresh strawberries
1 kiwi, sliced (optional)

Steps:

  • In a large bowl, whisk together the yogurt and white grape juice.
  • Add the sugar, lemon juice and cinnamon and mix until throughly blended.
  • Pour into a plastic container, cover and chill for several hours or overnight.
  • Before serving, wash and hull strawberries and slice. Spoon several strawberries into large cup or bowl and pour yogurt mixture over them.
  • Garnish with kiwi if you would like.
