Rhubarb and Strawberry Ice Cream image

Milk and heavy cream form the base for this egg-free ice cream recipe, while rhubarb and strawberries work in tandem for a delectable late-spring dessert. Kirsch, a sour cherry liqueur, enhances the tart, fruity flavor.

Number Of Ingredients 7

1 pound trimmed rhubarb, cut into 1/2-inch pieces (about 3 1/2 cups)
3/4 cup plus 2 tablespoons sugar
2 tablespoons water
8 ounces ripe strawberries
1 cup heavy cream
1/2 cup milk
2 tablespoons kirsch

Steps:

  • Place rhubarb, 1/2 cup sugar, and the water in a saucepan over medium heat. Bring to a boil; reduce heat to medium-low; let simmer, stirring frequently, until rhubarb is very tender and beginning to fall apart, about 12 minutes. Remove from heat; transfer to a bowl; set aside.
  • Place strawberries in the bowl of a food processor; puree. Strain through a fine sieve or chinois into a bowl; set aside.
  • Scald cream and milk in a saucepan over medium heat. Do not let boil. Remove from heat, add remaining 6 tablespoons sugar, and stir until sugar is dissolved. Allow mixture to cool to room temperature.
  • In a medium bowl, combine cooked rhubarb, strawberry puree, cream mixture, and kirsch. Cover with plastic wrap, and chill at least 2 hours or overnight. Freeze in an ice-cream maker according to the manufacturer's instructions.

3 cups chopped fresh or frozen rhubarb (1/2 inch)
1/4 cup sugar
3 tablespoons water
1 cup strawberry yogurt
1/2 cup unsweetened applesauce
1/4 cup finely chopped fresh strawberries
2 drops red food coloring, optional
8 freezer pop molds or 8 paper cups (3 ounces each) and wooden pop sticks

Steps:

  • Place rhubarb, sugar and water in a large saucepan; bring to a boil. Reduce heat; simmer, uncovered, until thick and blended, 10-15 minutes. Remove 3/4 cup mixture to a bowl; cool completely. (Save remaining rhubarb for another use.) , Add yogurt, applesauce and strawberries to bowl; stir until blended. If desired, tint with food coloring. Fill each mold or cup with about 1/4 cup rhubarb mixture. Top molds with holders; top cups with foil and insert sticks through foil. Freeze until firm.

2 cups diced fresh or frozen rhubarb, thawed
1-1/4 cups sugar, divided
1/2 cup water
2 tablespoons strawberry gelatin powder
1/2 teaspoon ground cinnamon
1/2 cup miniature marshmallows
1 cup whole milk
1/4 teaspoon salt
2 cups heavy whipping cream
1 teaspoon vanilla extract

Steps:

  • In a small saucepan, bring the rhubarb, 1/2 cup sugar and water to a boil. Reduce heat; cover and simmer for 10-12 minutes or until rhubarb is tender. Remove from the heat; sprinkle gelatin and cinnamon over rhubarb mixture. Let stand for 1 minute. Stir until dissolved. Cool to room temperature. Stir in marshmallows., In a large saucepan, heat the milk, salt and remaining sugar to 175°. Remove from the heat; stir in cream and vanilla. Refrigerate until chilled. Pour into cylinder of ice cream freezer; process for 10 minutes or until mixture begins to thicken. Add rhubarb mixture; freeze according to manufacturer's directions., When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.

2 cups chopped rhubarb
1 pint ripe strawberry (rinsed, hulled, sliced)
1/3 cup Grand Marnier
1/2 cup sugar (more or less to taste)

Steps:

  • In a 3 quart saucepan combine all ingredients.
  • Heat mixture to boiling over medium heat stirring occasionally.
  • Continue to cook until mixture bubbles and thickens,about 10 minutes.
  • Remove mixture from heat and cool to room temp.
  • Puree mixture in food processor with chopping blade (or in blender).
  • Pour into container of ice-cream make and process into ice following manufacturers directions.
  • Transfer to freezer container and freeze.
  • Without an ice-cream maker, pour mixture into an 8 inch square metal pan.
  • Cover with plastic wrap.
  • Freeze mixture until firm.
  • Break mixture into 1 inch chunks.
  • Process frozen chunks in food processor (chopping blade) until smooth and fluffy.
  • Put back in freezer until serving time.
  • Just before serving let ice stand at room temp for 15 minutes to soften slightly.

1 sheet frozen puff pastry (half a 17.3-ounce package), thawed
All-purpose flour, for dusting, if needed
3 tablespoons sugar, divided
Strawberry-Rhubarb Filling, recipe follows
Confectioners' sugar, for dusting
Creme Fraiche Ice Cream, recipe follows
1 1/3 cups sugar
1 tablespoon cornstarch
1 pound rhubarb, cut into 1/2-inch pieces (about 3 cups)
1 tablespoon grated orange zest
2 tablespoons fresh orange juice
2 pints strawberries, sliced, divided
2 cups milk
2 tablespoons plus 1/3 cup fresh lemon juice
2 cups creme fraiche
1 cup sugar

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Unfold the pastry sheet on your work surface. If the pastry sticks a bit, dust with some flour. Roll the dough out to about a 10-inch square. Cut the square into 4 (5-inch) squares, then cut these in half diagonally to make 8 triangles. Evenly sprinkle all the triangles with the 2 tablespoons sugar. Put the triangles, sugar-side up, on the baking sheet. Pop in the oven and bake until nicely puffed and golden brown, about 25 minutes. Let cool. Slice in half horizontally (a serrated knife is best for this job).
  • Put a halved triangle on your serving plate. Spread some Strawberry-Rhubarb filling on top, stack another halved triangle and more filling on top of that and repeat to make 4 layers total. Sprinkle with powdered sugar and serve with more sauce on the side. Scoop some Creme Fraiche Ice Cream alongside. Serve the napoleons immediately.
  • Whisk the sugar and cornstarch in a small bowl, making sure there are no lumps. Add the rhubarb, sugar-cornstarch mixture, orange zest and juice and half the strawberries to a saucepan. Give it a good stir. Let this mixture sit about 15 minutes off the heat so it macerates (gets nice and juicy). Then put the pan over medium-high heat and let cook until the rhubarb is tender but still holds its shape, giving it a stir now and then, about 7 minutes. Let it cool for about 15 minutes, and then stir in the rest of the strawberries.
  • Pour the milk into a large bowl, add the 2 tablespoons lemon juice and let it sit for a couple of minutes.
  • Add the creme fraiche, the remaining 1/3 cup lemon juice and the sugar. Give it a whisk until thoroughly combined. Pour into an ice cream maker and churn as per the manufacturer's instructions, then pop in the freezer until it's firm.

4 cups rhubarb (fresh or frozen sliced)
1 1/4 cups cranberry juice
1 cup sugar
2 cups sliced strawberries
champagne (optional) or ginger ale (optional)

Steps:

  • If using frozen rhubarb, thaw slightly.
  • In medium saucepan combine rhubarb, 1/2 cup of the cranberry juice and sugar.
  • Bring to boiling, reduce heat, cover and simmer for 5-8 minutes or until sugar is dissolved and rhubarb is tender.
  • Remove from heat and stir in remaining cranberry juice and strawberries. Cool.
  • Place half mixture in blender process until smooth. Transfer mixture to 9x9x2 inch nonmetal freezer-proof container.
  • Repeat with remaining rhubarb mixture.
  • Cover and freeze for 4-5 hours or until nearly firm.
  • Break frozen mixture into small chunks and place in chilled large bowl.
  • Beat with electric mixer on low to medium speed until smooth but not melted. Return mixture to container.
  • Cover and freeze for at least 6 hours or until firm.
  • To serve, scrape frozen mixture with small ice cream scoop. Scoop ice into dessert dishes. If desired, pour a little champagne or ginger ale around the fruit ice.

  • Fill molds or cups with about 1/4 C fruit mix; top with holders or insert a popsicle stick into each cup. Freeze.

3 cups sliced fresh strawberries
3 cups diced rhubarb
1 ½ cups all-purpose flour
1 cup packed brown sugar
1 cup butter

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.

1 lb fresh rhubarb, tops trimmed, cut into 3/4 inch pieces
1 cup sugar, divided
1 lb frozen strawberries
1 tablespoon fresh lemon juice
3/4 cup heavy cream

Steps:

  • In a large saucepan, combine rhubarb and 1/2 cup sugar.
  • Bring to a boil, stirring constantly.
  • Reduce heat and simmer until rhubarb is very soft and forms a sauce, 6-8 minutes.
  • Pour into a bowl and refrigerate until cold, about 2 hours.
  • In a food processor, combine frozen strawberries, 1/2 cup sugar and lemon juice.
  • Process strawberries until finely chopped, but still frozen.
  • With motor running, pour in cream.
  • Process until creamy, but still frozen, scraping frequently.
  • Spoon ice cream into a large bowl.
  • Fold in rhubarb sauce just until combined, with streaks of rhubarb remaining.
  • Freeze until firm, 2 hours or overnight.
  • If frozen overnight, let stand at room temperature 15 minutes or until soft enough to scoop.
