Baked with a golden biscuit topping, this springtime dessert makes the most of sweet strawberries. To ensure that the filling sets correctly, be sure to let the cobbler cool completely before serving.

1/3 cup strawberry jam
1/4 cup cornstarch
1/4 cup granulated sugar
1 tablespoon fresh lemon juice
2 pounds strawberries, hulled and quartered
1 3/4 cups all-purpose flour (see Cook's Note)
1/4 cup plus 2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon fine salt
6 tablespoons cold unsalted butter, diced
3/4 cup plus 2 tablespoons cold heavy cream
1 teaspoon vanilla extract
Vanilla ice cream for serving

Steps:

  • For the filling: Position a rack in the center of the oven and preheat to 375 degrees F. Whisk together the jam, cornstarch, sugar, lemon juice and 2 tablespoons water in a large bowl until well combined. Add the strawberries and toss gently to coat evenly. Transfer the mixture to a 2-quart baking or gratin dish, using a spatula or the back of a large spoon to gently pack the fruit into an even layer. Set aside.
  • For the topping: Pulse together the flour, 1/4 cup of the sugar, baking powder, and salt in a food processor. Add the butter and pulse until the mixture resembles coarse meal. Add 3/4 cup of the cream and the vanilla and pulse until the dough just starts to come together. Do not over mix.
  • Spread the dough evenly over the strawberries, drizzle with the remaining 2 tablespoons cream and sprinkle with the remaining 2 tablespoons sugar.
  • Place the cobbler on a baking sheet and bake until the topping is lightly browned and the fruit is bubbling, about 1 hour. Let the cobbler cool completely before serving, 2 to 3 hours. Serve with vanilla ice cream.

I love anything with fruit filling and crust. The great thing about a cobbler, it's easier than a pie and you get to eat the yummy crust first. That sweet filling oozing through the cracks and crevices of that biscuit top is what makes this summery dessert sing. And no cobbler is complete without vanilla ice-cream!

6 cups sliced strawberries (about 2 pounds)
1 cup granulated sugar
2 tablespoons cornstarch
1 lemon, zested and juiced
2 teaspoons pure vanilla extract
1 stick (8 tablespoons) cold unsalted butter, cubed, plus more for the pan
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup light brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
3/4 cup half-and-half
2 teaspoons coarse sugar, such as demerara sugar or turbinado
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 375 degrees F. Butter a large (10-inch) cast-iron skillet.
  • Stir together the strawberries, sugar, cornstarch, lemon zest, lemon juice and vanilla in a medium bowl. Set aside to allow the strawberries to macerate while making the biscuit dough.
  • Stir together the flour, granulated sugar, brown sugar, baking powder and salt in a medium bowl. Press the cubed butter into the flour with your fingers or a pastry cutter until the mixture resembles wet sand. Gradually mix in the half-and-half with a rubber spatula until a wet shaggy dough forms.
  • Pour the macerated strawberries into the prepared skillet, then drop large spoonfuls of the biscuit dough on top, leaving some space between each. Sprinkle the coarse sugar on top of the dough and place the skillet onto a rimmed baking sheet. Bake until the biscuits are golden brown and cooked through, 40 to 45 minutes. Let cool 10 to 15 minutes before serving. Serve with vanilla ice cream.

This crockpot strawberry cobbler is made with fresh strawberries and a cobbler topping made from scracth! It's best served warm topped off with a big scoop of vanilla ice cream!

2 lbs fresh strawberries (chopped and diced)
1 1/2 cups white granulated sugar (3/4 for strawberry filling and 3/4 for the cobbler topping)
1/2 tsp vanilla extract
2 tbsp flour (for the strawberry filling)
1 cup flour (for the cobbler topping)
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter (thinly sliced)

Steps:

  • First, start by chopping and dicing your fresh strawberries and adding them to a bowl.
  • Next, add flour, sugar and vanilla extract to the bowl with the strawberries. Mix well to coat the strawberries in the mixture.
  • Grease your crockpot with non stick cooking spray.
  • In a separate bowl, add the flour, sugar, baking powder and salt. Whisk the ingredients together to break up any lumps from the flour.
  • Slice your butter in thin slices and set aside for now.
  • Next, add the strawberries to the crockpot then top them off evenly with the flour mixture.
  • Add the thinly sliced pieces of butter to the top of the flour mixture.
  • Double up a piece of paper towel and cover the crockpot with it. Then close the lid. The paper towel will catch any condensation.
  • Next, cook the strawberry cobbler in the crockpot for 3-3.5 hours or until golden. Alternatively, you can cook it on low for 6-6.5 hours. Change out the paper towel as needed.
  • Finally, serve warm with vanilla ice cream and enjoy!

Celebrate British summertime with the flavours of elderflower and strawberries in this cobbler with a fluffy, dumpling-like scone topping

1 kg strawberries, large ones halved
1 vanilla pod, split open
1 lemon, zested and juiced
40g light brown soft sugar
80ml elderflower cordial
1½ tbsp cornflour
clotted cream or vanilla ice cream, to serve
150g self-raising flour
50g golden caster sugar
100g unsalted cold butter, cut into cubes
80-100ml buttermilk
30g demerara sugar

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the strawberries in an oval, roughly 25cm, ovenproof dish with the vanilla, lemon, sugar and cordial. Roast in the oven for 10 mins, or until the strawberries are jammy but holding their shape. Remove the vanilla pod and discard. Mix a little of the strawberry juices into the cornflour, then add the cornflour mixture to the strawberries, combining well.
  • For the cobbler topping, toss the flour with the sugar and a pinch of salt. Rub the butter into the flour mixture using your fingertips, then swiftly stir in 80ml buttermilk. If it looks dry, stir in the remaining 20ml. Spoon the cobbler mix over the strawberry base (about eight large spoonfuls), sprinkle over the demerara sugar and bake for 25-30 mins, or until the topping is lightly golden brown. Leave to rest for 10 mins, then serve with clotted cream or ice cream.Twist itSummer berries: Use a mixture of summer berries and up the sugar to 60g. Frozen summer berries work well - just leave out the cooking time for the fruit in step 1, toss the berries with the vanilla, lemon, sugar and cordial, then follow the method from step 2.Peach melba: Slice 3 ripe peaches and toss them with 400g raspberries in step 1 for a peach melba twist. Remove the elderflower cordial if doing this twist, and top the cobbler with flaked almonds before baking.Gooseberries: Simply use the same quantity of gooseberries and cordial, but increase the amount of sugar to 80g.

1-1/4 cups all-purpose flour, divided
2 tablespoons plus 1 cup sugar, divided
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 large egg
1/4 cup fat-free milk
2 tablespoons canola oil
1/8 teaspoon salt
2 cups fresh or frozen raspberries, thawed
2 cups fresh or frozen blueberries, thawed
Low-fat vanilla frozen yogurt, optional

Steps:

  • Whisk together 1 cup flour, 2 tablespoons sugar, baking powder and cinnamon.
