HAZELNUT VINAIGRETTE
Use this to make our Roasted Parsnip, Celery Heart, and Apple Salad.

Steps:
- Preheat oven to 375 degrees. Spread hazelnuts in a single layer on a rimmed baking sheet. Toast in oven until skins split and flesh turns deep golden brown, 10 to 12 minutes. While still hot, rub hazelnuts in a clean kitchen towel to remove skins (some will remain). Coarsely chop.
- Heat the hazelnuts, olive oil, and shallot in a small skillet over medium heat, stirring, until shallot softens, about 2 minutes. Let cool slightly.
- Stir together vinegar, lemon juice, and 3/4 teaspoon salt in a medium bowl. Whisking constantly, pour in hazelnut oil and then hazelnut mixture in a slow, steady stream; whisk until emulsified. Season with salt and pepper.
CREAMY STRAWBERRY SALAD DRESSING
My family can't resist a sweet spinach and strawberry salad topped with this lovely dressing. Every bite smacks of summer.

- In a blender, combine the first six ingredients. Cover and process until pureed. Refrigerate until serving. In a salad bowl or on individual salad plates, combine the spinach, onion, orange, almonds and additional strawberries. Serve with dressing.

- Preheat oven to 350°F.
- Roast nuts in a shallow baking pan in middle of oven until golden, 10 to 15 minutes. Rub warm nuts in a kitchen towel to remove skins (don't worry if some skins don't come off). Cool nuts, then coarsely chop.
- Whisk together vinegar, lemon juice, shallot, sugar, and salt and pepper to taste. Add oils in a slow stream, whisking until combined well.
- Toss together arugula, strawberries, hazelnuts, and dressing. Divide salad among plates and dot with goat cheese.

- For the dressing: combine all of the ingredients together except for the oil in a food processor or blender. Blend until all ingredients are well incorporated and zest has been broken down. Add in the oil in a slow, steady stream and pulse until just combined and emulsified. Avoid blending the oil in for an extended period of time as it can make the oil taste metallic.
