This is a very light dessert recipe from my friend, Ellen. It is so easy to make and is the perfect ending to a heavy meal.

- Prepare pudding with milk according to package directions. In a trifle bowl or other glass serving dish, layer half the cake pieces, half the pudding, half the bananas, half the strawberries and half the whipped topping. Repeat layers. Cover and chill in refrigerator 4 hours before serving.

STRAWBERRIES IN THE SNOW
Light angel food cake is layered on cream and covered in strawberries. A wonderful dessert to serve at a spring or summer gathering.

Steps:
- In a small bowl, stir sliced strawberries and 1/2 cup sugar together. Chill in the refrigerator for at least one hour.
- After strawberries have chilled and made some juice, stir in strawberry glaze.
- In a mixer, beat softened cream cheese, frozen whipped topping and powdered sugar together until creamy.
- Spread cream mixture in a 9×13 dish. Cut angel food cake into small, 1-inch pieces and place the cake on top of cream mixture.
- Gently push some of the cake pieces into the cream.
- Top with strawberry mixture. Chill in the refrigerator.

STRAWBERRY TRIFLE
Steps:
- Special equipment: Six 6- to 8-ounce clear glass or plastic wide-mouthed tumblers
- For the strawberries: Put the gelatin in a medium mixing bowl. Bring 1/2 cup water to a boil in a small pot, then pour it over the gelatin, whisking until smooth. Add the strawberries and sugar, mixing and coarsely mashing until the most of the strawberries are broken up. Refrigerate until the mixture is cold and slightly thickened, about 1 hour.
- For the custard: Combine the milk, sugar, cornstarch and salt in a medium saucepan. Bring to a simmer over medium-high heat, whisking constantly; simmer, whisking, until thick, 2 minutes. Stir in the butter and vanilla, then strain through a fine-mesh sieve into a bowl. Cover the surface directly with plastic wrap or wax paper, and refrigerate until cool.
- To assemble: Put a layer of angel food cake cubes in the bottom of six tumblers; be careful not to press down too hard. Divide half of the strawberry mixture among the tumblers. Follow with half of the custard over the strawberry layer. Repeat all three layers.
- Beat the cream with the confectioner's sugar until it holds soft peaks. Add the orange extract. Spoon whipped cream on top of the trifles. Garnish with mint sprigs.
INDIVIDUAL STRAWBERRY TRIFLES

- For the marinated strawberries: In a small, shallow casserole dish, toss the strawberries with the vinegar and let stand at room temperature for 15 to 20 minutes. After the strawberries have marinated, check for sweetness, adding sugar if desired.
- For the whipped cream: In a large bowl, using an electric mixer, whisk the cream to soft peaks. Add the vanilla and confectioners' sugar. Whip to stiff peaks. Set aside.
- For the trifle: Using a serrated knife, slice the pound cake lengthwise into 1/2-inch-thick slices. You will only need four slices. Using a 2-inch cookie cutter, cut out circles from each cake slice. Line up two highball glasses and place one cake circle in the bottom of each. Brush the cakes with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Using a different tablespoon, add a large dollop of whipped cream and spread evenly. Add a second layer of cake, pressing down lightly. Brush with amaretto liqueur. Add 2 tablespoons of marinated strawberries and spread evenly. Top with a large dollop of whipped cream, spreading evenly. Use the remaining cake, cream and strawberries to create a more humble trifle dish.
- Cover the trifles with plastic wrap and refrigerate for impromptu indulgence, keeping in mind that it will store for up to 2 days.
- To serve, remove and discard the plastic wrap. Grate some amaretto cookie on top of the trifles and sprinkle with Demerara sugar.
STRAWBERRY-BLACKBERRY SUMMER TRIFLE
Elderflower syrup is sweetly floral, similar in taste to honeysuckle. It's common throughout Europe and the UK, and has begun to make inroads in specialty stores and cocktail bars in the US. If you can't find it, the syrup from canned lychees makes a good substitute. Trifles are a classic British summer dessert; they're light, sweet, and full of juicy fruit.

- Reserve a handful of the prettiest whole strawberries and blackberries for topping the trifle.
- Hull and halve the remaining strawberries, and toss them with the sugar in a medium bowl, cover with plastic wrap and set aside until they get juicy, about 1 hour. (If you're in a hurry, set the bowl over a pot of simmering water for about 5 minutes to speed this up.)
- Whip the cream in a chilled bowl until it holds soft peaks. Fold the elderflower syrup into the cream and keep chilled until ready to assemble the trifle.
- Tear or cut the angel food cake into 2-inch pieces. Scatter about half the cake on the bottom of a trifle dish or clear glass bowl. Ladle half of the berries and their juices on top of the cake, and then top with half the whipped cream. Repeat with the remaining cake, berries and cream to finish the trifle. Garnish the top of the trifle with the reserved whole berries and refrigerate for 2 and up to 24 hours. Serve chilled.

- Mix the water, sugar and cornstarch in a pan.
- bring to a boil over medium high heat and boil for one minute.
- remove from the heat and add the gelatin powder.
- Stir until blended.
- Allow the mixture to cool.
- Slice the berries, add to the jello mixture.
- In a separate bowl, using an electric mixer, blend the cream cheese and sweetened condensed milk.
- In a large bowl, add 1/3 the angel food cake, drizzle with 1/3 of the cream cheese mixture, then spread 1/4 of the cool whip over the top.
- Add 1/3 of the berries mixture to the bowl.
- Continue to layer until all the ingredients are used, ending with a layer of berries.
- Top with remaining cool whip.
- Chill for at least 2 hours.
- Best if eaten the same day, if it sits overnight, it will be too soggy.

TIPSY, TROPICAL TRIFLE
This Trifle is a layered dessert that has a German influence from the wine though the trifle is of English origin. This one has lemon curd which is also a favorite of the English. Given a tropical feel from the apricots, bananas, coconut, and nuts! Fusion I would Say so! The hardest part of making this is the microwaved lemon curd which take all of 10 minutes. This makes a good pot luck dessert.

- For Curd.
- In a microwave safe dish, combine lemon zest, lemon juice, and sugar.
- Heat to dissolve sugar whisking after a minute.
- Add butter and stir until it has melted and combined.
- Remove from heat and cool to room temperature.
- Beat eggs into cooled lemon mixture until well blended.
- Return to microwave oven and cook over medium-low, whisking ever minute, about 5 minutes or until mixture thickens and coats spoon.
- Cool.
- Softening apricots.
- Add white Wine to Apricots for one hour then remove from wine.
- Pour the wine into a glass filled with ice for your self to enjoy while making trifle.
- For Pudding.
- Mix the pudding ingredients together whisk till smooth set aside.
- Assembly.
- In a trifle bowl place half of the angel food cake follow with 1/2 of the lemon curd, pudding, apricots, bananas, 1/3 coconut, cashews and cool whip.
- Repeat with second layer.
- Top with 1/3 of cool whip garnish with rest of cashews a coconut.
- Refrigerate till ready to eat.

- Tear up the angelfood cake. You want 8 cups. (I carefully tear the outside brown edges of.).
- Beat the soft cream cheese with 1 teaspoons Almond extract.
- Fold in the Cool Whip.
- Combine the cherry pie filling with half the cherry brandy (Kirschwasser) if using.
- To assemble: In your triffle dish 3 layers of each.
- 1/3rd aprox. of the Angel Food pieces. Sprinkle with some opt. cherry brandy.
- Next a layer of cherry pie filling.
- Next 1/3rd of the cream cheese mixture. Cover with blueberries.
- Repeat 2 more times.
- I decorate the top with some saved out cherries in the center with a ring of blueberries around them. And a few small flags in the center. Refrigerate several hour or overnight.
- You can make this more figure friendly by using. sugar free angel food Cake,sugar free Cool- Whip, and More Fruit Pie Filling! :-0.

- Whip cream and set aside.
- Then beat egg whites until they form soft peaks.
- Add egg whites to whipped cream and whisk together.
- Add rose water and sugar - adding a little sugar at a time. This stuff will have a consistency something like Cool-Whip, but will taste lots better.
- Clean strawberries and place into bowl.
- Mix red wine, sugar, cinnamon, and ginger. Pour mixture over strawberries and allow to marinate for an hour or so.
- Serve "snow" with strawberries on top and with a couple shortbread cookies on the side.
