CHUNKY SIRLOIN BEEF STEW
You don't need to simmer homemade stew for hours when you use a more tender cut of beef, like sirloin steak. This hearty dish will fill you up after a day of sledding or skating.

- In a Dutch oven, cook the beef, carrots, celery and onion in oil until beef is browned; drain. Add the broth, garlic, rosemary and pepper. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until beef and vegetables are tender., Combine the cornstarch and water until smooth; gradually stir into beef mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Add browning sauce if desired.

INSTANT BEEF TENDERLOIN STEW
This stew consists of tender pieces of steak sauteed just until rare, then added to an array of vegetables. It's best made with beef tenderloin, although New York strip steak, sirloin tips and skirt steaks can also be used.

Steps:
- Heat 1 tablespoon butter and the oil in a large nonstick skillet- Add potatoes, carrots and mushrooms.
- Cook, partially covered and stirring occasionally, 8 minutes or until vegetables are soft when pierced and lightly browned.
- Add onion; cook for 1 to 2 minutes.
- Add garlic, peas and 1/4 teaspoon salt; cook 1 minute until fragrant- Cover and set aside.
- Heat remaining butter in another large nonstick skillet over medium-high heat until very hot and foaming.
- Sprinkle meat with remaining 1/4 teaspoon salt and the pepper; add to skilet and cook 2 to 4 minutes, turning meat until browned on all sides.
- Add to vegetables; stir to mix- Transfer to a platter.
- Add wine and broth to skillet and boil 10 seconds- Pour over stew and serve.

BEEF STEW (STOVE-TOP)
This is a version of beef stew that I sort of combined several recipes from others to come up with. Posting for safekeeping.

Steps:
- Heat oil in a large pot (I use my 5qt cast iron dutch oven).
- Saute garlic and beef until beef is browned on all sides and some of the liquid, if any, has cooked down.
- Add onions and cook until translucent.
- You can add a little bacon grease or cooked crumbled bacon at this point if you like, for extra flavor.
- Add tomatoes, beef broth, V-8 juice, wine, red wine vinegar and seasonings; cover and simmer 1 hour.
- Add potatoes, peas and carrots and simmer 1/2 hour to 1 hour or until vegetables are tender but not mushy.
- In a small cup dissolve cornstarch in a little cold water and stir into stew to thicken.
- Taste and reseason as necessary; serve with biscuits or crusty homemade bread.

ROCKY MOUNTAIN SIRLOIN TIP STEAK STEW

- In a large pot over medium heat, cook sirloin in oil until quite brown.
- Pour 1 cup of water over the meat and drippings and cook, stirring, 2 minutes, until a dark gravy forms.
- Stir in 3 cups water with the salt, lemon juice, paprika, garlic, sugar, worcestershire and bay leaf.
- Cover, reduce heat and simmer 2 1/2 hours.
- Stir potatoes and carrots into simmering stew and cook until tender, 20 minutes.
- Stir in onions.
- In a small bowl, combine flour with remaining 1/3 cup water.
- Stir flour mixture into stew and cook until stew thickens.
- Top with peas just before serving.
SLOW COOKER BEEF SIRLOIN TIPS AND GRAVY RECIPE
After simmering in your slow cooker all day, the beef tips literally fall apart when you touch them! Serve over mashed potatoes for a perfect and hearty meal.

- Spray slow cooker with non-stick cooking spray.
- In a medium bowl, mix together flour, salt, garlic powder, and pepper. Dredge meat tips in the flour mixture.
- Heat olive oil in large skillet over medium-high heat, then brown tips for a couple of minutes (you aren't cooking them all the way through, just browning the edges). Place beef tips in slow cooker.
- Dump onions and mushrooms on top of meat in slow cooker.
- Mix broth, Worcestershire, ketchup, red wine vinegar, water in a bowl. Pour on top of meat in slow cooker.
- Sprinkle Italian seasoning on top of everything and cook on low for 7-8 hours.
- After meat is finished cooking, mix cornstarch together with water in a separate bowl. Using a strainer, remove beef tips from slow cooker and place in a separate bowl. Pour cornstarch mixture into remaining liquid in the crock pot and mix well. Add the beef tips back into the slow cooker and cook on high for about 10 minutes or until the liquid starts to thicken and turns into a gravy.
- Serve over hot mashed potatoes.
