Steps:
- Mix sugar, dates, eggs and vanilla.
- Cook in frying pan over medium heat until it pulls away from the sides of the pan, 5 to 7 minutes, stirring constantly.
- Add rest of the ingredients, except for coconut.
- When cool enough to handle, wet hands and form into small balls.
- Roll balls in coconut.
STOVE-TOP COOKIES ( FRY PAN COOKIES )
I hate using my oven...but sometimes I need to make cookies so I was very excited when I found this recipe. I haven't tried it...yet, but plan on making them very soon!

Steps:
- Sprinkle powdered sugar or coconut evenly onto a parchment or wax paper-lined 15 x 10 x 1-inch pan. Set aside.
- Combine sugar and eggs in a large saucepan; stir well. Add dates and butter; cook over low heat, stirring constantly, 8 minutes or until mixture is thickened and bubbly. Remove from heat; stir in cereal, pecans and vanilla, mixing well.
- Spread cereal mixture evenly onto prepared pan. Let stand for 15 minutes
- Roll the mixture into a 15-inch log, beginning at long side. Let cool completely.
- Cut into 1/2-inch thick slices.

- Beat eggs and brown sugar together; stir in dates.
- Pour mixture into a lightly greased heavy frying pan.
- Cook, stirring constantly, over medium heat until dates are soft (8 to 10 minutes); remove from heat.
- Stir in remaining ingredients except coconut; cool to lukewarm.
- Shape mixture into small balls and roll in coconut.

- Turn element on and cook slowly for 10 minutes.

Steps:
- Heat frying pan to 350°F.
- Beat together 2 eggs and 6 Tbsps Milk.
- Add dry ingredients & shortening in a mixing bowl, blend well.
- Add Egg and Milk mixture to dry ingredients, stir until well mixed.
- Place plastic on bowl to cover dough & chill dough in refrigerator about 2 hours.
- On floured board, roll dough in 4 parts to 1/4" thickness.
- Cut shapes with floured glass or cookie cutter.
- Fry in electric fry pan until golden.

Steps:
- Preheat oven to 350 degrees F. Spray 8 X 8 square pan with cooking spray. ( I use a Gladware ovenware pan).
- Thoroughly stir together flour, baking powder and salt. Set aside.
- In a microwave-safe bowl, melt butter on high for 1 minute. Add brown sugar and stir well. Stir in the egg and vanilla and beat 15 strokes with a mixing spoon.
- Add flour mixture to sugar mixture and stir just until mixed. Mixture will still be very warm so let it cool for 5 minutes. Stir in chips.
- Sometimes I stir in a teaspoon of cinnamon just for kicks.
- Bake for 22 minutes or until a toothpick inserted comes out clean and bars appear set (edges will be brown).
- Let cool for about 20 minutes. Slice into 16 bars.
- Makes 16.

- In a 9-inch skillet over medium heat, melt the butter. When it's fully melted, stir in the brown sugar until dissolved and incorporated. Take it off the heat and let it cool while you prepare the other ingredients.
- In a small bowl, beat the egg with the vanilla extract. In another bowl, whisk together the flower, baking soda, and salt. Add the dry ingredients to the skillet and stir in the egg mixture until a dough begins to form. Stir in half the bag of mini chocolate chips.
- Flatten the dough with the back of a spoon until it reaches the edges of the pan all around. Top with the remaining mini chocolate chips, if desired (and trust me, I desired). Move the skillet back onto the heat and lower the temperature to medium-low. Allow to cook in the skillet for 40-50 minutes, checking periodically to make sure the bottom isn't burning. The finished cookie should be set on the sides and bottom, but slightly gooey in the center.
