A flavorful chicken filling is layered between corn tortillas in our quick and easy casserole version of a Mexican favorite.

Yield 8 servings

Number Of Ingredients 10

2 tablespoons fresh cilantro, snipped
4 cups shredded cooked chicken or turkey
1 can (10 3/4 ounces) condensed cream of chicken soup
1 package (8 ounces) shredded Mexican-style cheese blend, divided
1 cup sour cream
1 can (4 ounces) chopped green chilies, undrained
1 1/8 teaspoons chili powder, divided
1/2 teaspoon ground cumin
11 (6-inch) corn tortillas
Vegetable oil

Steps:

  • Preheat oven to 350°F. Snip cilantro with Professional Shears. In Classic Batter Bowl, combine cilantro, chicken, soup, 1 1/2 cups of the cheese, sour cream, chilies, 1 teaspoon of the chili powder and cumin; mix well. Place 4 tortillas on bottom of Square Baker, overlapping in middle. Spoon 2 cups of the chicken mixture over tortillas; spread evenly in Baker. Repeat for second layer. Top with remaining 1/2 cup cheese. Stack remaining 3 tortillas and cut into 16 thin triangles using Pizza Cutter. Sprinkle over casserole. Spray tortilla triangles with vegetable oil using Kitchen Spritzer. Sprinkle with remaining 1/8 teaspoon chili powder. Bake 30-35 minutes or until thoroughly heated.

6 pasilla chiles, stemmed and seeded
4 cups water
1 medium onion
1 plum tomato
1 (14 1/2 ounce) can chicken broth
1 garlic clove, peeled
1 teaspoon salt
1 teaspoon sugar
24 (6 inch) corn tortillas
1/2 large onion
1 1/2 lbs monterey jack cheese

Steps:

  • For sauce, place chiles and water into Large Micro-Cooker®; microwave, covered, on HIGH 6-8 minutes or until chiles are softened. Drain. Coarsely chop onion using Santoku Knife. Add remaining sauce ingredients to blender; blend until smooth. Press sauce through Strainer into (2-qt.) Saucepan using Classic Scraper. (Discard fibrous strings.) Bring sauce to a boil. Reduce heat to low; cook 3-5 minutes or until heated through.
  • Meanwhile, for enchiladas, place tortillas in dry Large Micro-Cooker®; microwave, covered, on HIGH 2 minutes or until softened. Chop onion. Reserve 1 cup of the cheese for garnish. Add onion and remaining cheese to Stainless (4-qt.) Mixing Bowl; mix well.
  • Place about 2 tbsp cheese mixture onto each tortilla. Roll up tortillas and place seam side down on Double Burner Griddle. Pour sauce evenly over enchiladas. Top with reserved cheese. Tent with foil; cook over medium heat 5-7 minutes or until cheese is completely melted and enchiladas are heated through. Serve on Simple Additions® Small Square Plates.
  • Cook's Tips: This recipe can be made on the Large Bar Pan. Preheat oven to 450°F Assemble enchiladas as directed and place onto pan; tent with foil sprayed with nonstick cooking spray. Bake 10 minutes or until cheese is melted.

4 (4 ounce) boneless skinless chicken breasts
1/4 teaspoon salt
1/4 teaspoon ground black pepper, divided
1/8 teaspoon paprika
1 teaspoon vegetable oil
1 3/4 cups milk
1 (10 3/4 ounce) can condensed cheddar cheese soup
2 cups fresh broccoli florets (or frozen)
2 cups instant long-grain white rice
1/2 cup cheddar cheese, shredded

Steps:

  • Season chicken breasts with salt, 1/8 teaspoon of the black pepper and paprika.
  • Heat oil in Large Skillet over medium-high heat until hot.
  • Add chicken breasts; cook 5-7 minutes on each side or until chicken is no longer pink in center.
  • Remove chicken from skillet; keep warm.
  • Add milk, soup, broccoli and remaining black pepper to skillet; mix well.
  • Bring to a boil; stir in rice.
  • Top with chicken; cover with lid.
  • Reduce heat and simmer 5 minutes.
  • Remove skillet from heat.
  • Sprinkle cheese over chicken and rice.
  • Cover with lid; let stand 5 minutes before serving.

I received an email this morning from my Pampered Chef Consultant is this is one of the recipes that was featured. Here is what the email said: Back to School means Brain Power Breakfasts! Why Bother With Breakfast? Breakfast is a great way to give the body the refueling it needs. Kids who eat breakfast tend to eat healthier overall and are more likely to participate in physical activities - two great ways to help maintain a healthy weight. Skipping breakfast can make kids feel tired, restless, or irritable. In the morning, their bodies need to refuel for the day ahead after going without food for 8 to 12 hours during sleep. Their mood and energy can drop by midmorning if they don't eat at least a small morning meal. Our featured recipe this month is Crunchy Breakfast Tacos - an interesting twist on breakfast that the whole family will enjoy. While this dish makes a delicious weekend morning treat, you can also save time on a school morning by substituting prepared Salsa Verde in place of the tomatillo sauce.

8 ounces tomatillos, husks removed (about 3 medium)
1 jalapeno pepper, stemmed
1/4 cup fresh cilantro
1/2 teaspoon salt
1/4 cup fresh cilantro, chopped
1 tomatoes
8 taco shells, the hard kind
1 cup Mexican blend cheese, divided, shredded
6 eggs
2 tablespoons water
1 tablespoon butter

Steps:

  • Preheat oven to 350°F
  • For salsa, bring water to a boil in (2-qt.) Saucepan. Add tomatillos and jalapeño pepper; cook 5-8 minutes or until tomatillos are tender.
  • Meanwhile, for tacos, chop cilantro and dice tomato using Santoku Knife; set aside.
  • To finish salsa, transfer tomatillos from Saucepan to blender container using Slotted Spoon. Remove jalapeño pepper from Saucepan; test for spiciness. Add desired amount of pepper to blender; cover and blend until smooth. Add cilantro and salt; blend 2 seconds or until cilantro is coarsely chopped.
  • To finish tacos, line up taco shells, side by side, in Medium Bar Pan; fill with half of the cheese. Bake 5-6 minutes or until cheese is melted. Remove from oven.
  • As taco shells bake, whisk eggs and water in Small Batter Bowl. Place butter in (10-in.) Skillet; heat over medium heat 1-3 minutes or until foamy. Add eggs; cook and stir 2-3 minutes or until eggs begin to set. Add 1/4 cup of the salsa; cook 1-2 minutes or until eggs are completely set.
  • To serve, spoon eggs evenly into shells; sprinkle with remaining cheese, cilantro and tomato. Serve with remaining salsa.
  • Cook's Tips: Tomatillos are also referred to as "husk tomatoes" because of their papery outer skins. Tomatillos are quite tart and are typically cooked before using. When buying tomatillos, the husks should be fresh looking, not brown and wrinkled. The fruit should be firm to the touch and not "splitting" the husk.
  • The heat level of jalapeño peppers can vary widely. To test for spiciness, cut off and taste the end. It's best to add the jalapeño pepper conservatively; it's far easier to spice up a mild salsa than to try to reduce the heat once too much has been added.
