Simple and tasty salad made with only tomatoes, cucumbers, and onions. Then tossed in with a tasting balsamic Italian seasoning dressing.

Ingredients

6 Small Cucumbers (diced (or one large English cucumber))
1- pint Cherry or Grape Tomatoes (sliced in half or quartered)
1/2 Purple/Red Onion (thinly sliced)
2 Tbsp Avocado Oil (or Olive oil)
2 Tbsp Balsamic Vinegar
1 Lemon (juiced)
1 Tbsp Italian Seasoning
1 tsp Salt
1/2 Tsp Black Pepper

Steps:

Add the cut-up tomatoes, cucumbers, and onion into a large bowl
In a small bowl, add all of the dressing ingredients, mix and pour over the bowl of veggies.
Mix until combined and serve. Enjoy.

1 fresh peach, chopped
2 plums, pitted and chopped
1 cup chopped tomato
1 cup pitted and halved cherries
2 tablespoons chopped fresh parsley
1 teaspoon lemon zest
1 tablespoon lemon juice
1 clove garlic, minced
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil

Steps:

Stir together peach, plums, tomato, cherries, parsley, lemon zest, lemon juice, minced garlic, salt, and black pepper in a large bowl until combined. Let stand at least 5 minutes to allow flavors to blend. Drizzle with olive oil and stir to combine.
