Stir-Fried Snow Peas With Soba image

Snow peas are a great source of fiber, vitamin K, calcium and vitamin C.

1 tablespoon peanut butter (to taste)
1 tablespoon soy sauce
2 tablespoons white wine vinegar or seasoned rice wine vinegar
1 to 2 teaspoons hot red pepper oil (to taste)
Pinch of cayenne
Salt
freshly ground pepper to taste
2 large garlic cloves, minced
1 tablespoon finely minced fresh ginger
1 tablespoon sesame oil
1/2 cup vegetable or chicken broth
2 tablespoons canola oil
1/2 pound snow peas, strings and stem ends removed
1 bunch scallions, white and light green parts only
1/4 pound firm tofu, sliced (optional)
8 ounces soba noodles, cooked
4 large radishes, trimmed, cut in half, and thinly sliced
3 tablespoons chopped cilantro

Steps:

  • Heat the peanut butter for 10 seconds in a microwave to make it easier to mix. Combine with the soy sauce, vinegar, hot red pepper oil, cayenne, half the garlic and ginger, salt and pepper. Whisk together. Whisk in the sesame oil and broth. Set aside.
  • Heat the canola or peanut oil in a wok or a large, heavy skillet over medium-high heat, and add the snow peas. Stir-fry for one to two minutes, and add the scallions and remaining garlic and ginger. Stir-fry for 20 seconds, and add the tofu (if using). Stir-fry for one to two minutes, then stir in the noodles and sauce. Toss together until the noodles are hot, and remove from the heat. Add the radishes and cilantro, stir together, and serve.

1/2 cup vegetable broth or 1/2 cup chicken broth
2 tablespoons canola oil
1/2 lb snow peas, strings and stem ends removed

1/4 lb firm tofu, sliced (optional)

1 lb boneless beef sirloin, partially frozen (or beef tenderloin)
1/4 cup . toasted sesame oil
1/4 cup soy sauce
1/4 cup peanut oil
1 tablespoon peanut oil
2 tablespoons peeled grated fresh ginger
2 large garlic cloves, minced
4 green onions, including 3 inches of green tops, thinly sliced on the diagonal
1 head napa cabbage, cored and shredded (about 2 lb.)
2 cups chicken broth or 2 cups beef broth
1 tablespoon cornstarch
1/2 lb snow peas, trimmed and halved crosswise
salt
3/4 lb dried soba noodles
1/4 cup sesame seeds, lightly toasted

Steps:

  • Using a sharp knife, cut the beef across the grain into thin slices, then cut the slices into matchsticks.
  • In a bowl, whisk together the sesame oil, soy sauce, 1/4 cup peanut oil, and ginger.
  • Add the beef and stir to coat evenly.
  • Cover and refrigerate, stirring occasionally, for at least 1 hour or up to 3 hours.
  • Bring a large pot of water to a rapid boil.
  • Add 2 tbsp salt and the noodles to the boiling water, stir well and cook, stirring occasionally, until just tender, 5-7 minutes; drain the noodles.
  • Meanwhile, in a wok or large fry pan, heat 1 tbsp peanut oil over med-high heat.
  • Add the garlic and green onions and stir fry until lightly colored, about 1 minute.
  • Increase heat to high, add the beef and its marinade, and stir fry until lightly browned, about 8 minutes.
  • Add the cabbage and 1 1/2 cups of the broth and toss to combine.
  • Cover, decrease heat to med-high and cook until the cabbage wilts, about 4 minutes.
  • In a small bowl, whisk the cornstarch into the remaining 1/2 cup broth.
  • Add the cornstarch mixture to the pan, and stir and toss to incorporate.
  • Add the snow peas, stir and toss to combine, cover, and cook until just tender, about 2 minutes.
  • Take care not to overcook; the snow peas and cabbage should remain crisp.
  • Add the noodles to the pan and stir and toss until well combined.
  • Garnish with the toasted sesame seeds, and serve.

6 ounces dried Chinese mushrooms
1 lb snow peas
3 tablespoons peanut oil
1/2 cup bamboo shoot, cut into 1/8-inch pieces
1 tablespoon chopped garlic
1 tablespoon chopped ginger
1 teaspoon salt
1/2 teaspoon sugar
2 tablespoons reserve mushroom water

Steps:

  • Cover the mushrooms in a small bowl with warm water. Let sit for 30 minutes to soften. Drain mushrooms and reserve about 2 tablespoons of water. Cut mushrooms into 1/4-inch slices; set aside.
  • Snap tips off of snow peas and remove strings from pods; set aside.
  • Place 3 tablespoons of peanut oil in a wok set over high heat. Add the mushrooms and bamboo shoots and stir-fry for 2 minutes.
  • Add the snow peas, chopped garlic. ginger and stir-fry for another minute.
  • Add the salt, sugar, and mushroom water. Cook for another 2 minutes to evaporate liquid.
  • Serve hot.

1/2 lb snow peas (can use frozen if fresh are not available) or 1/2 lb sugar snap pea (can use frozen if fresh are not available)
1 (8 ounce) package sliced mushrooms (don't substitute canned)
3 tablespoons peanut oil
1 1/2 tablespoons chopped garlic
1 1/2 tablespoons chopped ginger
3/4 teaspoon kosher salt
1 1/2 teaspoons sugar
3 -5 drops sesame oil

Steps:

  • String the snow peas.
  • Heat a skillet over high heat and add the peanut oil.
  • When hot, add the mushrooms and stir briefly over high heat.
  • Add the garlic, ginger, and snow peas, and stir until well coated with the oil.
  • Add the salt and sugar.
  • Continue to stir over high heat until most of the liquid has disappeared and the peas are crisp yet tender.
