Many years ago I made a cranberry-orange bread from a magazine clipping. It got lost and I've never found a suitable replacement, but this year, with the help and encouragement of Zaar members, I created my own version -- and I love it! I used the mini loaf pans to make this, so I could have 4. If you use bigger loaf pans, you will need to bake the loaves longer.

2 cups all-purpose flour
1 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups fresh cranberries (if using frozen, no need to thaw)
2 eggs
3/4 cup 1% low-fat milk
3 tablespoons canola oil
1/4 teaspoon orange extract
1 tablespoon freshly grated orange zest
1 (10 ounce) can mandarin oranges in juice, 1/4 cup juice reserved

Steps:

  • Preheat oven to 350F; spray 4 mini loaf pans with Pam and set aside (you could also do this in two 8x4 loaf pans, if you can't find the smaller pans, but the baking time will likely be longer).
  • In a large bowl, combine dry ingredients (flour, sugar, baking powder and salt); add cranberries to flour mixture and stir so berries are somewhat coated in flour-- this helps prevent the cranberries from sinking to the bottom of the loaves when baking.
  • Set aside.
  • In a separate bowl, beat eggs and milk (I used lowfat milk) with a mixer on low, then beat in 1/4 cup juice reserved from tinned oranges, the oil, the extract and the orange zest.
  • Stir wet mixture into dry mixture, stirring just until dry ingredients are moistened; do not overmix.
  • Make sure tinned oranges are well drained, then stir into batter.
  • Divide batter between 4 mini loaf pans (you'll find they'll be about 3/4 full).
  • Bake in preheated oven for 35 to 40 minutes; a tester will come out clean.
  • Cool on rack in tins for about 15 minutes, then remove from tins and let sit on rack until completely cool.

sunflower oil, for greasing
150ml hot black tea
175g malt extract, plus extra for glazing (see tip)
85g dark muscovado sugar
300g mixed dried fruit
2 large eggs, beaten
250g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda

Steps:

  • Heat oven to 150C/130C fan/gas 2. Line the base and ends of two greased 450g/1lb non-stick loaf tins with strips of baking parchment.
  • Pour the hot tea into a mixing bowl with the malt, sugar and dried fruit. Stir well, then add the eggs.
  • Tip in the flour, then quickly stir in the baking powder and bicarbonate of soda and pour into the prepared tins. Bake for 50 mins until firm and well risen. While still warm, brush with a little more malt to glaze and leave to cool.
  • Remove from the tins. If you can bear not to eat it straight away, it gets more sticky after wrapping and keeping for 2-5 days. Serve sliced and buttered, if you like.

125 g butter, softened
1 cup caster sugar
3 eggs
1 tablespoon mandarin orange zest (mandarin rind,finely grated)
1/2 cup almond meal
3/4 cup plain flour
1/2 teaspoon baking powder
1/3 cup natural yoghurt
1/2 cup caster sugar, extra
1/4 cup lemon juice
1/4 cup mandarin juice
white sugar, to sprinkle
mandarin orange zest (mandarin peel, Shredded to decorate)

Steps:

  • Preheat oven to 160°C Grease twelve 1/2 cup (125ml) capacity loaf or friand pans. Place on an oven tray.
  • Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add eggs, one at a time, beating well between each addition. Add mandarin rind, almond meal, flour, baking powder and yoghurt and stir to combine. Spoon evenly among pans and smooth over. Bake for 15 minutes or until a skewer inserted in the centre comes out clean. Turn onto a wire rack to cool completely.
  • Combine the extra sugar, lemon and mandarin juice in a saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Increase heat to high and bring to the boil. Cook for 2-3 minutes or until syrup thickens. Remove from heat and set aside to cool slightly. Pour evenly over each cake and set aside to cool slightly. Top with sugar and peel to serve.
