ASPARAGUS AND MUSHROOM SALAD

Asparagus and Mushroom Salad image

I've eaten antipasti like this all over Italy. Sometimes celery is substituted for asparagus, but there's no need at this time of year. Both thick and thin stems will work.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, salads and dressings

Time 10m

Yield Serves four to six

Number Of Ingredients 10

1 pound asparagus
1/2 pound mushrooms, thinly sliced
1/4 cup chopped fresh herbs, such as parsley, tarragon and chives
1 cup baby arugula
2 to 3 tablespoons fresh lemon juice (to taste)
Salt
freshly ground pepper to taste
1 small garlic clove, minced or pureed
5 tablespoons extra virgin olive oil
1 ounce slivered Parmesan

Steps:

  • Steam the asparagus for three to five minutes, depending on how thick the stalks are. It should be tender but still have some bite. Rinse with cold water, and drain for a minute on a kitchen towel. Cut into 1-inch lengths. Place in a salad bowl, and toss with the mushrooms, herbs and arugula.
  • Whisk together the lemon juice, salt and pepper, garlic and olive oil. Toss with the asparagus mixture and the slivered Parmesan, and serve.

DELICIOUS STEAMED WHOLE ARTICHOKES

Delicious Steamed Whole Artichokes image

Make and share this Delicious Steamed Whole Artichokes recipe from Food.com.

Provided by Sharon123

Categories     Vegetable

Time 55m

Yield 2-4

Number Of Ingredients 9

4 sprigs parsley
4 garlic cloves
2 bay leaves
2 lemons, cut in half
1/4 cup white wine (or use white grape juice)
2 tablespoons olive oil
1 quart water
salt and pepper
2 whole artichokes

Steps:

  • Put the parsley, garlic, bay leaves, lemons, wine, oil and water in a large pot and bring to a simmer. Season the liquid with salt and pepper.
  • In the meantime prepare the artichokes:
  • Wash artichokes under cold water. Using a heavy stainless steel knife, cut off the stems close to the base. Pull off the lower petals that are small and tough. Cut off the top inch of the artichoke and rub with half a lemon to preserve the green color. Or you may put the artichokes in water that has some lemon juice in it. If you wish, trim the thorny tips of the petals with kitchen shears.
  • Place the artichokes in the steaming broth, bottom up. Cover and simmer for about 30 minutes. The artichokes are done when a knife is inserted into the base and there is no resistance.
  • To eat, pull off a leaf and scrape the meat off the tender end with your front teeth. Dip the ends of the leaves in lemon juice and melted butter if desired. When you reach the center cone of purple prickly leaves, remove it. This is the choke that protects the heart. Now, scrape away the thistle fuzz covering the artichoke heart. The heart is the meatiest and in my opinion, the best part of the artichoke. Steamed artichokes may be served hot or cold. Enjoy!
  • You may dip the artichoke in mayonnaise that has lemon added to it, or butter and lemon juice. Yum!

STEAMED-ARTICHOKE AND ASPARAGUS SALAD

Steamed-Artichoke and Asparagus Salad image

Embellished with edible flowers, this springtime salad will rise to a special occasion--in May, it's perfect for a Mother's Day brunch.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 1h45m

Number Of Ingredients 11

2 lemons, halved
4 large artichokes, such as globe
Coarse salt and freshly ground pepper
12 ounces small purple or blue potatoes, scrubbed
12 ounces asparagus, trimmed and cut on the bias into 2-inch pieces
4 cups mixed spicy greens, such as mustard greens and watercress
4 radishes, thinly sliced lengthwise
1/4 cup Dijon mustard
1/4 cup rice-wine vinegar
3/4 cup safflower oil
Edible flowers, for serving (optional)

Steps:

  • Squeeze 2 lemon halves into a large bowl of water; add rinds. Working with 1 artichoke at a time, remove tough outer leaves closest to stem end, then trim pointy tips of remaining outer leaves with kitchen shears. With a serrated knife, cut off top 1 inch; with a paring knife, trim and peel stem. (Transfer to lemon water as you work to prevent discoloration.)
  • Set a steamer basket in a large pot; add enough water to reach just below basket and bring to a boil. Squeeze remaining 2 lemon halves into pot. Add artichokes, season with salt, and cover; steam 20 minutes. Add potatoes to pot. Continue to steam until potatoes and artichoke hearts are easily pierced with the tip of a knife, 12 to 15 minutes. Transfer to a plate; let stand until cool enough to handle.
  • Meanwhile, prepare an ice-water bath. Bring 2 inches of water to boil in a saucepan; season with salt. Add asparagus and boil until crisp-tender, about 1 minute. Transfer to ice bath and let cool. Drain; pat dry.
  • Remove leaves from artichokes; reserve for eating separately. Scoop out and discard fuzzy chokes, then halve artichoke bottoms lengthwise. Cut potatoes into 1/4-inch rounds. Divide artichoke bottoms, potatoes, asparagus, greens, and radishes among 4 plates.
  • Whisk together mustard and vinegar in a bowl. Gradually whisk in oil; season with salt and pepper. Lightly drizzle salads with some of dressing; garnish with flowers. (Remaining dressing can be served separately, with reserved leaves.)

ARTICHOKE ASPARAGUS & GREEN BEAN SALAD

Artichoke Asparagus & Green Bean Salad image

*Pro-Tip: This is a great way to put your summer veggies to work. The combination of artichokes, green beans, and asparagus is simple, fresh and flavorful.

Provided by Dani Spies

Categories     DINNER     LUNCH     salad + dressing

Time 20m

Number Of Ingredients 9

1/2 pound green beans (trimmed (1/2 pound))
1 bunch of asparagus (trimmed)
1 15- ounce can of quartered artichoke hearts (drained)
1/4 cup of chopped red onion
1 fat cloves of crushed garlic
10 leaves of basil (rolled and sliced into ribbons)
The juice of one lemon (3 tablespoons)
2 tablespoons extra virgin olive oil
Salt and pepper to taste

Steps:

  • In a large bowl combine artichoke hearts, onions, garlic, lemon, olive oil, salt and pepper. Gently toss everything together and set aside.
  • Cut green beans and asparagus into one inch pieces.
  • In a medium steaming pot, steam the green beans and asparagus until al dente. This will take two to three minutes. We want to get the raw edge off of the veggies, but still want them to have lots of texture and bite.
  • Gently toss the hot veggies into the bowl with the artichoke hearts, onions, garlic, lemon, and olive oil. Add a little more salt and pepper to taste and then finish with the fresh sliced basil.
  • Serve and enjoy!

SPRING ASPARAGUS PASTA SALAD

Spring Asparagus Pasta Salad image

This easy Spring Artichoke Pasta Salad is quick and easy to make ahead and is SO delicious! Serves 4 as a main, or 6 or more, as a side.

Provided by Elle

Categories     Salad     Side Dish

Time 35m

Number Of Ingredients 19

400 g uncooked short pasta (I used torchiette)
1 tablespoon extra-virgin olive oil
1 bunch asparagus (sliced on the bias into bite-sized pieces (500 g))
1 medium zucchini (sliced thinly with a mandoline)
3 cloves garlic (minced)
sea salt and freshly-cracked black pepper (to taste)
1 x 310 g jar artichoke hearts (in brine or marinated), (drained and coarsely chopped)
4 green onions, (finely chopped)
1 tablespoon capers (in brine), (drained and coarsely chopped)
generous handful baby spinach leaves, (coarsely chopped)
40 g parmesan cheese, (plus extra for serving)
30 g pine nuts, (lightly toasted)
4 tablespoons extra-virgin olive oil
3 tablespoons freshly-squeezed lemon juice
2 tablespoons red wine vinegar
3 tablespoons finely chopped fresh basil leaves
1 tablespoon finely chopped fresh dill leaves
1/2 teaspoon sea salt
freshly ground black pepper

Steps:

  • Cook the pasta in a large pot of salted water until al dente (according to package directions). Drain pasta and rinse under cold water for about 20-30 seconds until no longer hot. Set aside.
  • Meanwhile, as the pasta is cooking, heat the oil in a large skillet over medium-high heat. Once the pan is hot, add the chopped asparagus, season with a generous pinch of salt and pepper, and stir to combine. Sauté for 4 minutes, stirring occasionally.
  • Stir in the garlic and zucchini, plus 1 tablespoon water (this helps steam the vegetables) and continue sautéing for 1 minute more, stirring occasionally, until the garlic is fragrant. The asparagus should be tender but still slightly crisp on the inside and the zucchini only slightly cooked. Remove from heat and set aside.
  • In a small bowl, whisk together dressing ingredients together in a small bowl until combined.
  • In a large bowl, combine the cooked pasta, asparagus mixture, artichoke hearts, green onions, capers, spinach, parmesan and toasted pine nuts. Drizzle with the dressing, then toss to combine.
  • Serve garnished with additional parmesan, if desired. Enjoy!
  • This spring asparagus pasta salad also keeps well. Just cover it and refrigerate it in a sealed container (for up to 2-3 days).

These leafy, mild-flavored veggies get at the heart of spring. Our method for steaming artichokes could not be easier, but the result is an impressive, delicious side dish.

Categories     Food & Cooking     Appetizers

Number Of Ingredients 5

4 medium artichokes (about 12 ounces each)
1 lemon, halved crosswise
Coarse salt
Easy Hollandaise
Butter, melted (optional)

Steps:

  • Prepare artichokes for steaming: Snap off tough outer leaves. Using a serrated knife, cut off top 1/3 of artichoke. Snip remaining sharp or spiky tips using kitchen shears. • Set a steamer basket in a large pot; add enough water so it reaches just below the basket. Squeeze lemon juice into water and add 1 tablespoon salt; bring to a boil. Place artichokes in steamer basket, stem-side up. ASPARAGUS AND ARTICHOKE PASTA SALAD

Asparagus and Artichoke Pasta Salad image

I threw this simple recipe together one night to use up some leftover chicken and asparagus. All quantities are approximate and can be adjusted according to your taste. Can easily be adjusted to include pasta salad favorites such as diced onions or celery (which, if I had had any, probably would have ended up in the bowl too!) A tasty way to use up your leftovers!

RAVIOLI VEGETABLE LASAGNA - SPINACH, ARTICHOKE, ASPARAGUS - YUM!

Ravioli Vegetable Lasagna - Spinach, Artichoke, Asparagus - Yum! image

I saw Rachael Ray make this on TV. I made it the other night. It is fantastic! I easily cut the recipe in half.

Provided by Aggiezoey

Categories     Vegetable

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 15

2 (10 ounce) packages frozen chopped spinach
2 tablespoons extra virgin olive oil
4 -6 garlic cloves, finely chopped
14 ounces water-packed artichoke hearts, drained well
salt and pepper
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups vegetable stock (or chicken)
1/2 cup cream or 1/2 cup half-and-half
1/2 cup grated parmigiano-reggiano cheese
1/4 teaspoon nutmeg
salt and black pepper
2 cups grated provolone cheese or 2 cups Italian cheese blend
24 -28 ounces fresh ravioli, large package, such as Contadina brand, choose your favorite filling, such as wild mushroom or 4 cheese
1 lb thin asparagus spear, trimmed of tough ends

Steps:

  • NOTE - orginal recipe did not give ounce measurements for the spinach or the artichokes - I assume sizes may vary by brand. Orginal recipe just says 2 packages of frozen spinach - she used the small box size on tv. Original recipe stated 2 cans of artichokes. Zaar won't let you put in packages or cans without giving an ounces amount.
  • Bring a pot of water to boil for ravioli.
  • While water comes to a boil, drain defrosted frozen chopped spinach by wringing it dry in a kitchen towel, working over a garbage bowl or your sink.
  • Heat a medium skillet over medium heat. Add extra-virgin olive oil and saute garlic in oil 1 minute, then sprinkle spinach into the garlic oil. Add artichoke heart pieces to the pan and turn to combine and heat through. Season vegetables with and remove from heat to a bowl. (NOTE -- I didn't not use the full amount of artichokes - since, I cut the recipe in half, I was only using one can of artichokes, but it seemed like a lot so I used about half the can. So use your own judgement when adding the artichokes.).
  • Place skillet back on the heat and melt butter. Whisk flour into butter and cook 1 to 2 minutes. Whisk stock into flour and butter and let it bubble. Whisk in cream and Parmesan. Season sauce with nutmeg, salt and pepper and thicken 1 to 2 minutes.
  • When water boils, salt water, add ravioli and cook 4 to 5 minutes. Ravioli should be less than al dente, still a bit chewy -- it will continue cooking when combined with sauce and vegetables. Place a colander over ravioli as it cooks and add asparagus to it. Cut thin, trimmed asparagus into 2-inch pieces on an angle. Steam the chopped asparagus while pasta cooks, 2 to 3 minutes, until just fork-tender, but still green. Remove asparagus and add to bowl with spinach and artichokes. Place colander in your sink and drain ravioli.
  • Drizzle a touch of extra virgin olive oil onto the bottom of a medium oval casserole or a rectangular baking dish and brush pan to coat evenly.
  • Arrange a layer using 1/2 of cooked ravioli in the dish. Layer 1/2 of the cooked vegetables over the ravioli. Next, add a few ladles of sauce, then vegetables, then top casserole with the last of the ravioli. Dot top of "lasagna" with any remaining sauce and cover liberally with gratedprovolone or 4 cheese blend.
  • Brown cheese 8 inches from broiler, 5 minutes. NOTE - this is the part of the recipe that didn't work for me. By the time I assembled the ingredients, they were cold so I ended up having to bake the dish in a 400 degree oven for 15 minutes or so.
  • This was supposed to be a 30 minute meal, but I think it took longer. Maybe after I've made it a few times, it would only take 30 -- either way it was still an easy recipe to make.
  • I think this could be easily made ahead and reheated or frozen. I haven't tried freezing it yet, but it is yummy the next day.

WARM ARTICHOKE & ASPARAGUS SUMMER SALAD

Warm artichoke & asparagus summer salad image

This dish is all about vegetables at the peak of their season

Provided by Gordon Ramsay

Categories     Lunch, Main course

Time 1h30m

Number Of Ingredients 14

4 artichokes , trimmed
2 lemons , halved
3 tbsp olive oil
1 tbsp coriander seeds
1 star anise
large thyme sprig
4 tbsp white wine vinegar
large bunch (about 30) asparagus spears
4 handfuls small salad leaves such as micro-leaves
5 tbsp olive oil
1 small red onion , finely chopped
2 spring onions , finely sliced
small bunch chives , finely snipped
2 tbsp balsamic vinegar (I like to use white balsamic vinegar)

Steps:

  • When the artichokes are trimmed, find a pan wide enough to hold them in a single layer. Squeeze in juice from a lemon half and half-fill with cold water. Add 2 tbsp olive oil, the spices, thyme, vinegar, artichokes and a generous pinch of salt. Bring to the boil, then lower the heat and simmer for about 15 mins until soft. Turn off the heat and allow to cool (see tips, below).
  • Prepare the asparagus. First, cut off the woody ends, then use a swivel blade peeler to trim the ends, rotating them as you go so they end up the same thickness as the tips.
  • Bring a large pan of salted water to a rolling boil. Cook the asparagus for 2 mins, then drain and tip straight into heavily iced water. Leave until completely cool, drain again, then set aside.
  • To make the dressing, heat 2 tbsp olive oil in a frying pan , then gently cook the red onion for 5 mins until soft. Turn off the heat stir in the spring onion and chives, then tip into a jug. Drizzle the rest of the oil and the vinegar into the dressing, then season to taste.
  • Get the vegetables ready. Drain the artichokes, then cut each into 6 wedges. Slice each asparagus on the angle into 3 pieces.
  • Wipe out the dressing pan and heat the remaining olive oil. Fry the asparagus with some seasoning until shiny and starting to colour, then scoop onto a plate. Place the pan back on the heat, then cook the artichoke wedges until they start to brown. Turn off the heat and you are ready to plate up.
  • Spoon a puddle of dressing into the centre of each plate. Balance the pieces of asparagus up against each other to circle the dressing. Arrange the artichokes among the asparagus so they're evenly distributed over the plate. Scatter over the salad leaves and drizzle over the remaining dressing.

STEAMED WHOLE ARTICHOKES WITH SPICY LEMON CAPER MAYONNAISE

Steamed Whole Artichokes with Spicy Lemon Caper Mayonnaise image

This is a dish that takes you straight to a French bistro. I love it because we cook the artichokes whole and eat the whole thing! While the recipe calls for a steaming method, you can easily submerge them in a large pot of boiling, lightly salted water and cook until tender. When I was living in Paris, a glass of cheap, dry white wine with a few ice cubes and this artichoke with the spicy dipping sauce made for a classic bistro appetizer moment. Pull off the leaves, dunk in the sauce and enjoy. Scoop the fuzzy "hay" off the top of the artichoke to find the heart in the center-the best part! Don't like spicy? Simply make the sauce without the hot sauce or pepper flakes.

Provided by Alex Guarnaschelli

Categories     appetizer

Time 50m

Yield 4 servings

Number Of Ingredients 10

4 large artichokes
6 tablespoons mayonnaise
3 tablespoons extra-virgin olive oil
2 tablespoons capers, coarsely chopped
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon plus 2 teaspoons hot sauce
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives

Steps:

  • Place each artichoke on its side on a flat surface. Use a serrated knife to saw off the stem at the base of the artichoke so it can sit upright on a plate without falling over once cooked.
  • In a large pot, add 3 inches of water. Insert a steamer basket. Place the artichokes top-down in the basket, wedged in a single layer. Cover. Bring the water to a boil over high heat and cook until tender when pierced with the tip of a knife, 30 to 35 minutes. If the pot runs out of water while cooking, simply add more to the bottom.
  • In a medium bowl, whisk together the mayonnaise, oil, capers, mustard, vinegar, hot sauce and red pepper flakes. Taste and adjust the seasoning. Garnish with the chives.
  • Serve the artichokes with the dipping sauce.

SPRING ARTICHOKE & ASPARAGUS PASTA "SALAD" RECIPE - (4.4/5)

Spring Artichoke & Asparagus Pasta

Provided by Loni

Number Of Ingredients 8

2 cans of marinated artichoke hearts (approximately 10-12 hearts per can)
1 small lemon (zest and 1/2 juiced)
3 Tbsp red wine vinegar
3 Tbsp grated Parmesan (powder consistency)
1 handful fresh Basil leaves
1 lb Orecchiette pasta
1 bunch Asparagus
Marinade from the artichoke hearts

Steps:

  • 1. Begin boiling water. Meanwhile, trim, and then cut the asparagus at an angle into 3/4" pieces. 2. Remove the hearts from the cans and place them in a food processor. Do not rinse or remove too much marinade from the hearts. Reserve the marinade for the pasta water, and you can also add more marinade to the artichoke puree if it is too thick. 3. Pour some of the artichoke marinade into the water for the pasta and add pasta; follow package directions for time. You can either steam the asparagus pieces on top of the boiling pasta for about 8 min. or add the asparagus to the pasta in the last 8-10 min. of cooking. 4. While the pasta and asparagus are cooking, add the lemon zest, 1/2 of the juice from the lemon, red wine vinegar, Parmesan, and basil leaves to the processor. Process until smooth, adding more marinade if needed. 5. Drain the pasta and asparagus, and run under cold water to cool to room temperature. 6. Mix everything together in a large serving bowl and enjoy!

ARTICHOKE SALAD WITH ASPARAGUS

Artichoke Salad with Asparagus image

If you like to attempt to WOW people with presentation this is about the easiest and most jaw dropping salad I have ever presented.

Provided by Dave Mathews

Categories     Other Salads

Time 1h

Number Of Ingredients 11

4 large artichokes
24 asparagus spears
ARTICHOKE SALAD
1 can(s) artichoke hearts, canned, quartered
2 Tbsp crimini mushrooms, quartered
1/2 can(s) black olives, pitted
1 Tbsp parsley, italian, chopped
1/2 tsp dried basil
1/2 tsp dried oragano
2 clove garlic, minced fine
2 Tbsp mayonaise

Steps:

  • 1. Blanch the Asparagus spears till not quite tender. Refrigerate. Prepare the artichokes by peeling off the bottom leaves. Cut off the stem flat at the bottom of the artichoke so it will sit flat. With a large serrated knife cut the artichoke top off so the center opening is about 1/2 the size of the artichoke. Using a spoon dig out the fuzzy stuff in the center so that the choke in the bottom is clean. You will have to lose some of the choke but it can't be helped. Squirt the insides of the chokes and the top of the leaves with lemon juice to keep them from turning dark.
  • 2. Steam the artichokes top down for 20 minutes or until a test leaf pulls easily away. Dunk the artichokes in cold water to stop the cooking process. Remove from water and place top down on a plate with paper towels in the refrigerator for at least an hour. You want these cold and dry.
  • 3. Prepare elbow macaroni el dente. Drain and chill. Drain the marinated artichokes and add all salad ingredients to a large bowl. Mix thoroughly. Cover with plastic wrap and chill.
  • 4. When all ingredients are chilled stuff the artichokes with the salad mixture and top with 5 asparagus spears. Serve with a ramakin of melted butter for dipping the artichoke leaves and the choke. Put a big fancy bowl in the center of the table for leaves and be sure to have a big stack of napkins available.

  • Prepare the couscous according to package instructions. Cover and let stand for about 10-15 minutes. Once the water is absorbed, fluff with a fork.
  • Meanwhile, snap off the woody ends of the asparagus. Blanch the asparagus in plenty of boiling salted water for 3-4 minutes or until crisp-tender (depending on thickness). Remove with tongs, or drain in a colander, and immediately transfer to icy cold water to cool. Remove from the cold water and drain well.
  • Alternatively, (I prefer this method) steam the asparagus using metal basket or steamer. To do so, place a steamer basket in a saucepan. Add water to just below the bottom of the basket. Bring water to a boil, add asparagus, cover and reduce heat. Steam for 3 to 5 minutes or until crisp-tender. Transfer to icy cold water to cool, then drain well.
  • In a small bowl, whisk together the olive oil, lemon juice, garlic, and basil. Season with salt and pepper.

  • In a bowl, toss the asparagus with 1 teaspoon of olive oil, 1 1/2 teaspoons of salt and 1/4 teaspoon of pepper. Spread the asparagus on a rimmed baking sheet and roast for 15 minutes, or until browned, shifting the pan every 5 minutes so the asparagus cooks evenly.

Add the chicken broth, lemon juice and garlic, cover and cook over low heat until the artichokes are just tender, about 8 minutes.

  • Prepare the artichoke stem: Pull any leaves off the stem, and use a vegetable peeler to peel off the stem's woody exterior. Use a sharp stainless steel knife to trim off the end of the stem and gently score the trimmed end with an "X" pattern. Rub the stem all over with the cut side of one of the lemon segments to prevent browning.
  • Prepare the artichoke bud: Cut off the top quarter off the artichoke, about 1/2-1 inch. Rub the cut leaves all over with the lemon. Use kitchen shears to snip off the pointy tips of the remaining leaves.
  • Steam the artichoke: Fill a large pot with 1 inch of water, and squeeze in any remaining lemon juice. Add the squeezed lemon segments to the pot. Place a steamer basket in the pot, add the artichoke, and bring to a boil. Cover and steam for 35-45 minutes, or until the artichoke stem is fork-tender and you can easily peel off the outer leaves.
  • Remove the choke: Allow the artichoke to cool slightly. Slice it in half lengthwise, and use a small spoon to scoop out the hairy choke.
