This is an extremely hearty soup that only gets better in the fridge! It is one of the only soups you will not have to jazz up on your own, and people will remember you for it! This is a great cold-weather soup, but my family requests it all year long.

2 tablespoons butter
2 tablespoons vegetable oil
1 ½ pounds lean boneless beef round steak, cut into cubes
½ cup chopped onion
3 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
¼ teaspoon ground black pepper
4 cups beef broth
2 cups water
4 sprigs fresh parsley, chopped
2 tablespoons chopped celery leaves
1 bay leaf
½ teaspoon dried marjoram
1 ½ cups peeled, diced Yukon Gold potatoes
1 ½ cups sliced carrots
1 ½ cups chopped celery
1 (6 ounce) can tomato paste
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Melt butter and oil in a large skillet over medium heat until the foam disappears from the butter, and stir in the steak cubes and onion. Cook and stir until the meat and onion are browned, about 10 minutes. While beef is cooking, mix together flour, paprika, salt, and pepper in a bowl. Sprinkle the flour mixture over the browned meat, and stir to coat.
  • In a large soup pot, pour in the beef broth and water, and stir in the parsley, celery leaves, bay leaf, and marjoram. Stir in beef mixture, and bring to a boil. Reduce heat to medium-low, cover the pot, and simmer, stirring occasionally, until meat is tender, about 45 minutes.
  • Mix in the potatoes, carrots, celery, tomato paste, and corn; bring the soup back to a simmer, and cook uncovered, stirring occasionally, until the vegetables are tender and the soup is thick, 15 to 20 minutes. Remove bay leaf and serve hot.

"When I fix steak, I always grill one extra so I have leftovers to make these delicious filled tortillas," informs Kris Wells of Hereford, Arizona. The steak strips are seasoned with salsa, chili powder and cumin, then tucked inside soft flour tortillas with tasty toppings.

2 cups thinly sliced cooked beef ribeye or sirloin steak (about 3/4 pound)
1 small onion, chopped
1/4 cup salsa
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon garlic powder
1-1/2 teaspoons all-purpose flour
1/2 cup cold water
6 flour tortillas (8 inches), warmed
Shredded cheese, chopped lettuce and tomatoes and additional salsa, optional

Steps:

  • In a large nonstick skillet, saute steak and onion for 1 minute. Stir in the salsa, cumin, chili powder and garlic powder. , In a small bowl, combine flour and water until smooth; gradually add to the skillet. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Place beef mixture on tortillas; top as desired with cheese, lettuce, tomatoes and additional salsa. Fold in sides.

For the Beef:
2 tablespoons olive oil or canola
1 pound beef (steak) your choice, sliced into small thin strips (I had tri-tip steak)
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
For the Soup Base:
2 to 3 tablespoons olive oil
8 corn tortillas, diced
1 small white onion, diced
3 cloves garlic, minced
3 chile de arbol
1 serrano pepper or jalapeño, diced
1 poblano pepper, diced
2 carrots, peeled and sliced thin
1 stalk celery, finely diced
3 tomatillos, diced
1/3 cup cilantro, chopped
1 to 1 1/2 cups roasted, diced green chiles in a can
7 cups low-sodium beef broth
Juice of 1 lime
1 teaspoon ground coriander
1 teaspoon cumin
Salt and pepper to taste
For the Garnish:
Lime wedges
Avocado slices
Diced red chiles, Fresno peppers or cherry peppers
Light sour cream
Fried tortilla strips (how to make them: http://www.hispanickitchen.com/profiles/blogs/crispy-tortilla-strips)

Steps:

  • 1. In a large heavy pot, preheat the 2 tablespoons of oil to medium/high heat for 3 to 4 minutes. Add the beef and season with salt, pepper and garlic powder. Cook, stirring often until nicely seared and browned. Remove beef from pot onto a plate and set aside. 2. In that same pot, add another 2 tablespoons of oil and heat to medium. Add the diced tortillas and cook until slightly crispy. Add the onions, garlic, chile de arbol, chile serrano and poblano. Cook for 3 to 4 minutes. 3. Add the remaining ingredients. Add the beef back into the soup. Bring to a boil, reduce heat, taste for salt and pepper. Cook at a low simmer for 35 to 40 minutes, stirring now and then. Yields up to 6 dinner size servings. Don't forget to garnish!!

Vegetable or corn oil, for drizzling, plus 2 tablespoons -- 2 turns of the pot in a slow stream
3 ears corn on the cob or 2 ears fresh-frozen cobs, defrosted
1 red bell pepper, split and seeded
1 pound chicken breast tenders
1 teaspoon poultry seasoning, 1/3 palm full
1 teaspoon ground cumin, 1/3 palm full
Salt and pepper
1 small to medium zucchini, small dice
1 medium yellow skinned onion, chopped
3 cloves garlic, chopped
1 to 2 chipotle peppers in adobo sauce (medium to hot heat level), chopped -- available in small cans in Mexican and Spanish food section of market
1 (28-ounce) can stewed tomatoes
1 (8-ounce) can tomato sauce
3 cups chicken stock, available in re-sealable paper containers on soup aisle
4 cups blue corn tortilla chips, broken up into large pieces
1 cup shredded Cheddar or pepper jack cheese
1/2 cup sour cream
1/4 red raw onion, chopped
2 to 3 tablespoons chopped cilantro or parsley leaves
1 ripe avocado, diced and dressed with the juice of 1/2 lemon

Steps:

  • Heat a grill pan to high and a soup pot to medium-high. Drizzle oil on corn and place on grill pan. Add red pepper to grill with corn. Char vegetables 10 minutes, total, turning occasionally. Remove to cool, 5 minutes. Remove charred skin from the pepper.
  • While vegetables cook, dice chicken. Add 2 tablespoons oil to hot soup pot. Add chicken to pot. Season with poultry seasoning, cumin, salt and pepper. Lightly brown the chicken. Add zucchini, onions, garlic and chipotle peppers. Cook vegetables with chicken 5 to 7 minutes to soften. Add tomatoes, tomato sauce and stock. Bring soup to a bubble, reduce heat to medium low.
  • Scrape corn off cob and add to soup. Chop grilled red pepper and stir into soup. Add chips to soup in handfuls and fold in. Serve soup immediately with scatter of shredded cheese and a dollop of sour cream. Top with any or all of the suggested garnishes.

14 ounces chicken stock
1 1/2 cups half-and-half
4 teaspoons fresh lemon juice (more to taste)
1/8 teaspoon garlic powder
1/8 teaspoon cayenne
1/8 teaspoon cumin
1/2 teaspoon salt
12 ounces cooked skinless chicken breasts, finely chopped (optional)
1 -2 cup julienne crisp fried corn tortilla strips
1/4 cup green onion, chopped
1 1/2 cups grated monterey jack cheese

Steps:

  • Melt butter in a large pot over medium-low heat. Add onion and saute, stirring occasionally, until onion is tender. Add chilies and tomatoes.
  • Stirring occasionally, cook mixture 8-10 minutes.
  • Add cream cheese and stir until cheese is melted. Add chicken stock, half and half, lemon juice, garlic powder, cayenne, cumin and salt. Add chicken.
  • Continue stirring soup to incorporate all ingredients, but do not allow soup to boil. When soup is hot and blended, pour soup into large serving bowl or divide between 6 small bowls.
  • Top soup with tortilla strips, green onions and monterey jack cheese.
