FAJITA NACHOS

1/3 cup olive oil
4 cloves garlic
2 limes, juiced
2 canned chipotle peppers in adobo with a little adobo sauce
Handful fresh cilantro
1 whole flank steak
Olive oil, as needed
2 yellow onions, sliced
2 red/yellow bell peppers, sliced
1 tablespoon taco seasoning
One 18-ounce bag sturdy tortilla chips
8 ounces grated Monterey Jack and Cheddar mix
Handful fresh cilantro leaves
Salsa
Sour cream
Pico de gallo

Steps:

  • For the flank steak: Combine the olive oil, garlic, lime juice, chipotle peppers with sauce and cilantro in the bowl of a food processor or a blender. Blend until totally combined. Put the flank steak in a large resealable plastic bag or baking dish. Pour in the marinade and make sure it adequately coats the meat. Seal the bag or cover tightly and refrigerate for 24 hours at least.
  • For the nachos: When ready to make the nachos, preheat the oven to 350 degrees F. Heat an indoor grill pan to high. Remove the meat from the marinade (discard the marinade).
  • Drizzle a little olive oil on the grill and grill the meat over very high heat, about 4 minutes per side. (Turn it 45 degrees halfway through on both sides to get nifty grill marks.) Set aside to rest.
  • In a large skillet, heat a couple of tablespoons of olive oil over medium-high heat. Add the onions and peppers, sprinkle over the taco seasoning and cook until the vegetables are somewhat soft and starting to get black bits, 3 to 5 minutes. Set aside.
  • Slice half of the flank steak into strips against the grain, then chop the slices into smaller bites (see Cook's Note). Put the sauteed veggies on a cutting board and roughly chop to get them into smaller pieces.
  • Arrange the tortilla chips on a large ovenproof platter (or baking sheet). Sprinkle plenty of cheese all over the top. Put the platter in the oven for 3 minutes or so, just long enough to melt the cheese (but not burn the chips). Generously sprinkle the peppers, onions and chopped steak all over the top. Garnish with cilantro leaves.
  • Serve immediately with salsa, sour cream and pico de gallo.

Nachos are like pizza to me, a perfect food! My tips for making them super-delicious is to use restaurant-style chips if you can find them, and to prebake them before topping them. In this recipe I load them up with a grilled flank steak that gets its inspiration from Mexican carne asada. In addition to these nachos, you can also serve the steak just by itself, or use it in tacos, quesadillas, burritos and more.

1/4 cup olive oil, plus more for the grill grates
2 cloves garlic
1/2 cup chopped fresh cilantro leaves
2 tablespoons soy sauce
Juice of 1 orange
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 pounds flank steak
Kosher salt and freshly ground black pepper
12 ounces restaurant-style tortilla chips
1 1/2 cups shredded Cheddar
1 1/2 cups shredded Monterey Jack
1 ripe avocado, diced
1 cup pico de gallo
1/2 cup Mexican crema or sour cream
1/4 cup chopped scallions
1 serrano or jalapeno, thinly sliced

Steps:

  • Put the oil, garlic, cilantro, soy sauce, orange juice, cumin and oregano in a blender or small food processor and blend until combined, 10 to 20 seconds. Pour the marinade into a gallon resealable bag. Add the steak, force out as much air as possible, seal the bag and massage the
  • marinade into the steak. Allow the steak to marinate for 30 minutes on the counter or overnight in the refrigerator.
  • Prepare a grill or grill pan for medium-high heat. Preheat the oven to 350 degrees F. Line a sheet pan with parchment paper.
  • When ready to grill, remove the steak from the marinade and pat dry with paper
  • towels. Discard the marinade. Season the steak with salt and pepper. If using an outdoor grill, brush the grill clean and oil the grill grate. Grill the steak until charred on the bottom, 3 to 5 minutes. Flip and cook until the steak reaches the desired doneness, 3 to 5 minutes more. Remove from the heat and allow to rest on a cutting board for 5 to 10 minutes.
  • While the steak rests, place the chips on the prepared sheet pan and bake until warm, 5 to 10 minutes.
  • Slice the beef into 1/2-inch-thick strips, then slice across to make 1/2-inch cubes. Pull the hot chips out of the oven. To build the nachos, start by topping them with the steak cubes. Then sprinkle them evenly with the Cheddar and Monterey Jack. Bake until the cheese melts, about 4 minutes. Finish by topping the chips with avocado and pico de gallo and drizzling with crema. Garnish with scallions and jalapeno and serve hot.

Steps:

  • Preheat oven to 350F° (175°C).
  • Mix the steak, salt, pepper, chili powder, garlic powder, and cumin in a bowl until evenly coated.
  • Heat oil in a pan over very high heat, until barely smoking. Fry the steak for 30 seconds on each side, then rest on a cutting board for 5 minutes.
  • Slice the steak into bite-size pieces.
  • In a large pan or skillet, lay down half of the tortilla chips, followed by half of the steak, peppers, onions, pepper jack, and cheddar. Repeat with the remaining ingredients.
  • Bake for 15 minutes, until cheese is melted.

1 lb beef steak, thinly sliced into strips
1 medium onion (I prefer the taste of red onions)
1 large green bell pepper
1 large tomatoes, diced
2 teaspoons cooking oil
1 teaspoon chili powder
2 teaspoons ground cumin
2 teaspoons Worcestershire sauce
2 tablespoons water
warmed tortilla
sour cream
guacamole
salsa

Steps:

  • Partially freeze meat for easier slicing.
  • Heat oil in a large skillet or wok.
  • Add steak strips to the oil.
  • Stir-fry until meat loses its pink color.
  • Remove meat from pan.
  • Add additional oil to the pan if needed.
  • Cook onions and bell pepper until crisp tender.
  • Return meat to pan.
  • Add the water, chili powder, cumin, and Worcestershire sauce.
  • Cook and stir until the water is gone.
  • Stir in the tomatoes.
  • Heat through.
  • Place some of the meat in a warm tortilla leaving the bottom half free.
  • Top with sour cream, guacamole, and salsa.
  • Fold sides and bottom in leaving the top open.

This is much like the fajita nachos you can order in most Mexican restaurants. You can also substitute chicken breast strips for the flank steak, or if you are on a tight budget, even ground beef will work well.

1 lb flank steak
1 bag tortilla chips
2 cups shredded cheese (choose whatever your favorite is, I like Kraft's Mexican blend or a good white american cheese)
nonfat sour cream (optional)
guacamole (optional)
1 envelope fajita seasoning mix

Steps:

  • If you have a grill, grill flank steak seasoned with fajita seasoning until done.
  • If not, you can also cook indoors in a well-greased skillet.
  • Arrange tortilla chips on a baking sheet with aluminum foil covering it.
  • A pizza pan works particularly well for this.
  • Top the chips with the cooked Flank Steak, topped with cheese and any other toppings you desire, such as peppers or onions.
  • I also like to add a bit of fajita seasoning to the cheese to give it a little zest.
  • Place in 350 Degree oven for 20-30 minutes, depending on how long it takes to melt the cheese.
  • Garnish with sour cream, guacamole, lettuce, tomatoes, or any other desired garnish.

Place flank steak in a large ziplock bag and pour in the marinade, reserving a bit of marinade for the veggies. Place in the fridge to marinate for a minimum of 24 hours.
  • After 24 hours, take out steak and cook in a skillet on high for 4-6 minutes on each side, or until cooked through to your liking. Remove steak from skillet and cut into bite sized pieces. Set aside.
  • In the same skillet, toss in the green pepper, onion, and red pepper. Pour in the marinade you saved. Saute on medium/high heat for 3-5 minutes or until onion is translucent and peppers are tender. Place on a plate and set aside.
  • In the same skillet, add the tortilla chips. Top with half the cheese, then the peppers/onion mixture, then steak, then the rest of the cheese. Top with pico de gallo and cilantro.
