LIGHT ITALIAN PIZZELLES

3 large eggs, room temperature
3/4 cup granulated calorie free artificial sweetener (see note at the bottom)
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/2 cup coconut oil, melted and cooled
1/2 cup water
1 3/4 cups all-purpose flour
2 teaspoons baking powder

Steps:

  • Melt the coconut oil and set aside to cool. Heat the pizzelle maker.
  • In a large bowl, beat the eggs and sugar.
  • Add the cooled melted coconut oil, vanilla extract, coconut extract and water.
  • Sift flour and baking powder then add to the egg mixture. Batter will be sticky. If batter is too thick, add a bit more water.
  • Spray a small cookie scoop inside and out with a no-stick cooking spray. Drop a scoop of cookie dough onto the centre of the hot pizzelle machine. I cook mine for between 60 seconds and 70 seconds. Each machine heats differently and it depends on how dark you like your Pizzelles.
  • Place Pizzelles on a cooling rack. Once cooled, store in an airtight container to keep crispy.
  • NOTE: Use a calorie free sweetener that replaces sugar cup for cup. If you are using regular granulated sugar instead of the sweetener, do not add the 1/2 cup water.

6 eggs, room temperature
1 1/2 cups granulated sugar
2 tablespoons vanilla extract or 2 tablespoons anise flavoring
1 cup melted margarine, cooled
3 1/2 cups all-purpose flour
4 teaspoons baking powder
1/2 cup cocoa
1/2 cup sugar
1/2 teaspoon baking powder

Steps:

  • Beat the eggs, adding sugar gradually. Beat until smooth. Add cooled margarine and vanilla extract or anise flavouring.
  • Sift the flour and baking powder. Blend into the egg mixture until smooth. Dough will be sticky enough to be dropped by spoon.
  • Heat Pizzelle maker. Grease a small cookie scoop with cooking spray. Scoop the cookie dough and place just past the centre of the form towards the back of the maker. Lock and set a timer for 26 seconds. Cook longer if you like them darker.
  • Remove to a cooling rack.
  • Chocolate Pizzelles: Sift cocoa, additional sugar and baking powder into dry ingredients for Classic Pizzelles. Blend into egg mixture until smooth.

KRUMKAKER ( ROLLED WAFER)

This traditional Scandinavian treat is a thin, crisp cookie that is baked in a special krumkake iron (something like a waffle iron, but with more decorative, lacier and shallower grids. 1/2 cup butter, melted
1 cup sugar
2 eggs
1 cup cream
1 1/2 cups flour, sifted
1/2 teaspoon vanilla
1/4 teaspoon salt

Steps:

  • Mix all the ingredients together throughly to make a thin batter.
  • Preheat krumkake iron over medium heat on top of range until a drop of water sizzles when dropped on top.
  • Open iron; lightly brush inside top and bottom with shortening, oil or melted butter.
  • Spoon 1 tablespoon batter onto center of hot iron; close iron.
  • Bake about 1 minute on each side until cookie is lightly browned.
  • Insert tip of a knife under cookie to remove from iron; roll hot cookie into a cone shape.
  • Cool on rack.
  • Cookies become crisp as they cool.
  • Repeat with remaining batter.
  • If batter thickens as you use it, add water a tablespoon at a time as necessary to thin it to the consistency of thick cream.
  • Store baked cookies in airtight containers.
  • If desired, sprinkle with confectioner's sugar or fill with lightly sweetened whipped cream.

¾ cup white sugar
½ cup butter, melted
1 tablespoon vanilla extract
1 ¾ cups all-purpose flour
2 teaspoons baking powder

Steps:

  • In a large bowl, beat eggs and sugar until thick. Stir in the melted butter and vanilla. Sift together the flour and baking powder, and blend into the batter until smooth.
  • Heat the pizzelle iron, and brush with oil. Drop about one tablespoon of batter onto each circle on the iron. You may need to experiment with the amount of batter and baking time depending on the iron. Bake for 20 to 45 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron. Cool completely before storing in an airtight container.
  • For chocolate pizzelles, add 1/4 cup cocoa sifted together with flour and baking powder, 1/4 cup more sugar and 1/4 teaspoon more baking powder. I find that for the chocolate mixture, the iron must be well oiled to start and then brush on more as needed.

1 teaspoon vanilla extract

Steps:

  • In a medium bowl, beat the eggs with an electric mixer until light. Add the sugar, butter, lemon zest and vanilla, mix well. Stir in the flour and baking powder.
  • Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 30 seconds. Test the cooking time on the first one, because temperatures may vary. Remove cookies carefully from the iron and cool on wire racks.
