- Preheat oven to 325°. In a small bowl, mix the first 5 ingredients. Place roast in a roasting pan, fat side up; rub with seasoning mixture., Roast 2-1/4 to 2-3/4 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Remove roast from oven; tent with foil. Let stand 15 minutes before carving., Meanwhile, pour drippings and loosened browned bits from roasting pan into a small saucepan. Skim fat. Add beef stock to drippings; bring to a boil. Serve with roast.

This is so moist and flavorful and our family has this ever Easter, Thanksgiving and Christmas (thats when these roasts are usually on sale) IF you have any leftover its fantastic on a sandwich or used for open face roast beef sandwiches the next day but that is a big IF

Steps:
- Take your roast out of the fridge and let it sit for an hour or 2 to come down to room temperature. This will help the fibers in the meat relax and is key to a tender moist end result.
- Preheat oven to 450 degrees.
- Pat the roast dry with paper towels to get off extra moisture.
- Mix butter, mustard, horseradish and garlic together then smear all over your roast. It will be a little thick and goopy but it gives it great flavor.
- Place the roast FAT SIDE UP and or bone side down (so the fat juices will run down into the meat while cooking) into a shallow baking pan. I use a cooling rack placed into the pan then put the roast on top of that so that the roast is up off the bottom of the pan.
- Don't add water or cover the roast and once the roast is in the oven try not to open the door unless you absolutely have to.
- Insert a meat thermometer and place into the preheated oven.
- Cook uncovered for 15 minutes then reduce the temperature to 325 degrees.
- Cook until the meat thermometer reaches 135 degrees for medium rare.
- Remove from oven, place meat on cutting board and place foil over the roast. DONT CUT INTO THE MEAT!and dont take the thermometer out or it will release juices and you will ruin your tasty expensive dinner.
- Let it sit for at least 15 minutes under the foil. The temperate of the roast will continue to rise and cook the roast. I have let mine sit for 45 minutes before while i am finishing up the rest of the meal and it comes out perfect.
- IF YOU WANT AU JUS SAUCE then just pour the drippings into a glass measureing cup wait for the fat to rise to the surface and skim the fat off.
- Place the same roasting pan over the top of the stove and add 2 cups of water or beef broth.
- Bring to a boil while scrapping the bottom of the pan to get all the good crusty bits off the bottom of the pan.
- Stir in the pan drippings from the glass measuring cup and stir until bubbly.
- Taste and add salt/ pepper or beef bouillon granules if needed for added flavor.
- Serve this over sliced roast.

- Heat the oven to 325 degrees F. Season the beef with the black pepper. Place the beef into a roasting pan, rib-side down.

STUFFED STANDING RIB ROAST
This roast is everything we love about the holiday. Rosy, incredibly tender and perfectly seasoned meat stuffed with all the quintessential Christmas roast sides -- garlicky spinach, sauteed mushrooms and cubed buttery brioche. Butterflying the roast may seem intimidating but just take your time and the effort will pay off when you hear the accolades at the table. We love how truffle butter adds umami to the dish, but we made it optional - it really is just gilding the lily.

- Put the porcini mushrooms in a heatproof bowl and cover with boiling water. Let sit until softened, about 20 minutes. Remove the mushrooms with a slotted spoon so any grit stays at the bottom of the bowl; finely chop the mushrooms.
- Melt 4 tablespoons of the butter in a large skillet over medium-high heat; add the cremini and porcini mushrooms. Cook, stirring occasionally, until all the water cooks off and the mushrooms start to brown around the edges, about 10 minutes. Stir in the shallots, thyme, 1/2 teaspoon salt and several grinds of pepper and cook until the shallots soften and the mushrooms turn golden brown, about 5 minutes. Transfer to a baking sheet and spread in a thin layer to cool to room temperature.
- Meanwhile, melt 2 more tablespoons of the butter in the same skillet over medium-high heat. Add the garlic and cook, stirring constantly, until fragrant and softened, about 1 minute. Add the spinach and cook, stirring often, until cooked through, about 4 minutes. Season with 1/2 teaspoon salt and stir to combine. Transfer the spinach to a colander set in a bowl to drain any excess moisture. Let cool to room temperature.
- While the spinach cools, melt the remaining 4 tablespoons butter in the skillet over medium-high heat. Add the brioche cubes and cook, stirring frequently, until golden brown and crispy, about 10 minutes. Remove from the heat and let cool to room temperature.
- Preheat the oven to 450 degrees F.
- With a sharp boning knife, cut the meat and fat away from the rib bones about 1 1/2 inches down from the top, scraping the bones as clean as you can. Trim any excess fat so there's no more than 1/4-inch covering the meat. (You can also ask your butcher to do this for you.)
- Put the roast on a large cutting board with the bones upright. Holding a large, sharp knife parallel to the bones and about 1 inch from the back of the bones, cut straight down until you are about 1 inch from the bottom of the roast. Gently pull the meat away from the bone so that the bones are upright and the meat is on the cutting board. Position the knife so it is parallel to the cutting board and, starting where you left off with your last cut, continue to cut into the meat about 1 inch up from the board, slowly unrolling the meat as you cut. You will have a long rectangular piece of meat attached to the bone that is about 1-inch thick.
- Once the meat is in an even layer, sprinkle with 1 tablespoon salt and 1 teaspoon pepper. Spread the mushroom mixture in an even layer on the meat. Top with the brioche and then layer on the spinach. Dot with the truffle butter if using. Starting at the boneless end, tightly roll the meat back up and secure tightly with butcher twine (tie it all the way around the roast between each rib). Sprinkle the outside with 1 tablespoon salt and 1 teaspoon pepper.
- Place bone-side down on a roasting rack set in a roasting pan and transfer to the oven. Roast for 20 minutes, then turn the heat to 350 degrees F and continue to roast until the meat registers 125 degrees F on an instant-read thermometer for medium-rare, about 2 1/2 hours.
- Transfer the roast to a cutting board and let rest for 30 minutes before slicing and serving.

- Place meat, fat side up, on a rack in a shallow roasting pan.
- Season roast with salt, pepper and other spices, if desired.
- Insert a meat thermometer into the thickest portion of the meat.
- Do not add water or other liquid; do not cover.
- Roast in a 350 degree F oven for 1-1/2 to 2 hours for medium rare or until meat thermometer registers 140 degree F; or for 2 to 2-1/4 hours for medium or until meat thermometer registers 155 degree F.
- Remove the roast from the oven; cover with foil and let it stand 15 minutes.
- The meat's temperature will rise 5 degrees during the time it stands.

- Allow roast to stand at room temperature for at least 1 hour.
- Preheat the oven to 375 degrees F (190 degrees C). Combine the salt, pepper and garlic powder in a small cup. Place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. Rub the seasoning onto the roast.
- Roast for 1 hour in the preheated oven. Turn the oven off and leave the roast inside. Do not open the door. Leave it in there for 3 hours.
- Turn the oven back on to 375 degrees F (190 degrees C) and reheat the roast for 30 to 40 minutes. The internal temperature should be at least 145 degrees F (62 degrees C).

- Start by removing the meat from the refrigerator 2 hours before roasting and allow it to come to room temperature.
- Make sure that your oven is very clean, then let it preheat to 500 degrees F, it should take between 10 to 15 minutes.
- Now, go ahead and place the oven rack in the second-lowest position, then take a large pan and place the roast, while the bone-side down, if the pan can't hold the roast comfortably, use a larger one.
- Next, spread the roast top thickly with salt and pepper, then let your meat roast the meat for 45 minutes at 500 degrees F.
- After that, go ahead and reduce the oven temperature to 325 degrees F without taking out the meat from it, and let it roast for another 30 minutes.
- After increasing the temperature to 450 degrees F, roast your meat for another 15 to 30 minutes, until the internal temperature of the meat is 125 degrees F, make sure that your meat thermometer is exactly in the center of the roast for exact temperature.
- The total cooking may vary between 1 1/2 and 1 3/4 hours.
- While your meat is cooking go ahead and make the sauce by whisking together mayonnaise, mustard, horseradish, sour cream, and salt in a small bowl.

- Place the rib roast on a cutting board and roll it into a uniform shape. Tie the roast with butcher's twine spaced every 1 1/2 inches along the roast to hold.
- Season all sides of the rib roast with your choice of herbs and spices. Rib roasts are often only seasoned with a bit of salt and pepper because the meat is already flavorful, but also use other dry spices such as garlic powder and dry mustard, if desired.
- Preheat the oven to about 200 degrees Fahrenheit, using a low temperature to cook the roast slowly to the desired internal temperature without overcooking the exterior.
- Place the meat on a rack in a roasting pan with the fat-side up so the fat drips down and bastes the meat as it renders. The roasting rack in the roasting pan is optional, but the rack allows the oven heat to circulate around the meat for even browning and cooking.
- Insert an oven probe meat thermometer into the thickest part of the roast. Push the pointed end of the probe into the meat until it reaches the center of the roast.
- Roast the rib roast until it reaches the desired internal temperature, depending on your preference for meat doneness, which can take about 2 to 4 hours at 200 F, depending on the size of the roast.
- Remove the rib roast from the oven, cover it with aluminum foil to keep it warm, and set it aside. Increase the oven temperature to about 500 F or its highest setting.
- Return the roast to the hot oven and roast for about 5 to 10 minutes more or until the outside develops a dark brown, crispy crust. At a high temperature, this is just enough time to develop a crust but won't affect the interior temperature or doneness.
- Transfer the rib roast from the roasting pan to a serving platter. Cut away the butcher's twine and serve immediately. The meat has already rested and redistributed the juices, so you can serve the rib roast immediately.
