1/4 cup red-wine vinegar
2 cloves garlic, crushed
2 small shallots, chopped
1/2 teaspoon freshly ground pepper
1/4 cup Dijon mustard
1/4 cup Pommery mustard
1/2 cup maple syrup
Salt to taste
12 ounces fresh spinach
5 sliced mushrooms
1 red onions
4 strips maple-cured bacon, sauteed until crisp
2 hard-boiled eggs, quartered

Steps:

  • Whisk together the oil, vinegar, garlic, shallots, pepper, mustards, syrup and salt. Place remaining ingredients in a large salad bowl and toss with the dressing.

Fresh spinach with a creamy dressing that all my friends rave over. The dressing also makes a great vegetable dip.

1 cup slivered almonds
1 cup mayonnaise
½ cup milk
¼ cup white sugar
1 (3 ounce) jar bacon bits
½ cup grated Parmesan cheese
1 (10 ounce) bag baby spinach leaves
½ head cauliflower, chopped

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spread the slivered almonds onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, 5 to 10 minutes. Watch the nuts carefully as they bake, because they burn quickly. Once toasted, set the nuts aside to cool to room temperature.
  • Mix together the mayonnaise, milk, and sugar in a large salad bowl. Stir in the bacon bits and Parmesan cheese until the dressing is well combined and creamy.
  • Place the spinach leaves, chopped cauliflower, and toasted almonds into the salad bowl, and stir lightly to coat with dressing.

1/2 cup thinly sliced green onion
1/2 cup finely chopped red bell pepper
5 slices bacon, slices cooked and crumbled
2 (7 ounce) packages fresh Baby Spinach

Steps:

  • Combine first 6 ingredients in a small microwave-safe bowl, stirring with a whisk; microwave at HIGH 1 minute or until hot.
  • Place beans in a 2-cup glass measure; microwave at HIGH 1 minute or until hot.
  • Combine onions, bell pepper, bacon, and spinach in a large bowl. Add syrup mixture and beans; toss well to combine. Serve immediately.

1 (10 ounce) bag baby spinach leaves
4 hard-cooked eggs, peeled and sliced
1 cup sliced mushrooms
4 strips crisply cooked bacon, crumbled
10 ounces Swiss cheese, shredded
½ cup toasted sliced almonds
1 tablespoon olive oil
1 large shallot, minced
1 teaspoon garlic, minced
⅓ cup white wine vinegar
⅓ cup Dijon mustard
⅓ cup honey
2 strips crisply cooked bacon, crumbled
salt and pepper to taste

Steps:

  • Place spinach into a large serving bowl, top with hard-cooked eggs, mushrooms, 4 crumbled strips of bacon, Swiss cheese, and almonds.
  • Heat olive oil in a small skillet over medium heat. Stir in shallots and garlic, and cook until softened and translucent, about 2 minutes. Whisk in the vinegar, Dijon mustard, honey, and 2 crumbled strips of bacon; season to taste with salt and pepper, then cook until hot.
