4 strips bacon, (cooked until crispy)
2 eggs, (hard boiled and peeled)
6 - 8 Cremini mushrooms, (sliced thinly)
1/4 cup red onion, (sliced thinly)
1 cup loosely packed cilantro
1/2 large avocado
juice of 1/2 lime
1 clove garlic
1/4 cup olive oil
1/2 tbsp apple cider vinegar or white wine vinegar
pinch of sea salt

Steps:

  • Arrange salad items in a bowl, blend avocado cream ingredients together in a food processor, drizzle on salad and serve.

2 tablespoons tequila
2 tablespoons fresh lime juice
1 tablespoon fresh coriander, chopped
1 teaspoon sugar
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon fresh ground pepper
8 ounces jicama or 8 ounces radishes
2 firm ripe avocados, peeled and thinly sliced
2 tablespoons fresh lime juice
1 1/2 lbs fresh spinach, rinsed, dried, stemmed or 10 cups fresh spinach
1 medium red onion, thinly sliced
1/2 cup pomegranate seeds, for garnish (optional)

Steps:

  • Whisk all dressing ingredients together in small bowl or shake in jar with tight fitting lid.
  • Pare jicama or trim radishes; cut into 1x1/4-inch strips.
  • Toss avocados with lime juice in bowl.
  • Place spinach, avocadoes, onion, and jicama in salad bowl.
  • Whisk salad dressing again and drizzle over salad, tossing gently to coat.
  • Garnish with pomegranate seeds, if desired, and serve.

1 avocados (sliced)
1/4 cup red onion (thinly sliced (about 1/4 of an onion))
1 teaspoon kosher salt
2 tablespoons extra virgin oil
1 tablespoon fresh lemon juice

Steps:

  • Mix the spinach with 1/2 teaspoon salt, 1 1/2 tablespoon olive oil, and 1/2 tablespoon lemon juice.
  • Add the onions and avocados to the dressed spinach and drizzle with the remaining olive oil, salt, and lemon juice.

1 tablespoon olive oil
4 boneless chicken breast halves
salt, to taste
pepper, to taste
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/3 cup olive oil
1 garlic clove, pressed
2 tablespoons balsamic vinegar
1 shallot, minced
1/2 cup sun-dried tomato packed in oil, drained and chopped
1/2 cup fresh basil, chopped
12 ounces baby spinach leaves
1 large ripe avocado, thinly sliced

Steps:

  • Heat 1 TBS olive oil in a large skillet over medium-high heat.
  • Season chicken with salt and pepper to taste.
  • Cook in skillet, turning once, until juices run clear (about 12 minutes).
  • Slice into thin strips and place in large bowl.
  • In separate bowl, whisk together salt and pepper, garlic and vinegar.
  • Slowly whisk in 1/3 cup olive oil.
  • Stir in shallots, tomatoes, and basil.
  • Spoon 1/4 cup of the dressing over chicken and toss to coat.
  • Toss spinach with remaining dressing and divide among 4 serving plates; top evenly with chicken and avocado slices.

1 teaspoon Dijon mustard
1 teaspoon sugar
1 garlic clove, minced
salt & freshly ground black pepper
1/2 lb fresh spinach, stemmed, rinsed, and patted dry
1 ripe avocado, peeled, seeded, and diced
1/2 red onion, thinly sliced
8 slices lean streaky bacon
1/2 cup extra virgin olive oil
2 hard-boiled eggs, coarsely chopped

Steps:

  • In a small bowl, combine the vinegar and mustard, and whisk until well blended. Add the sugar, garlic, and salt and pepper; stir well and set aside.
  • In a large salad bowl, combine the spinach, avocado, and onion; set aside.
  • In a large skillet, fry the bacon over moderate heat until crisp. Drain on paper towels, and crumble coarsely. Pour off all but about 2 tablespoons grease from skillet, add the oil plus the vinegar-mustard mixture, and stir until dressing is hot. Pour dressing over spinach mixture and toss well. Add the bacon and eggs, toss well again, and taste for seasoning. Serve salad immediately.
