- Unroll crust into a greased 15x10x1-in. baking pan; flatten dough and build up edges slightly. Brush with oil; sprinkle with garlic. Spread with pizza sauce. , Layer with spinach, onion, mushrooms and cheeses. Sprinkle with basil, Italian seasoning and pepper flakes if desired. Bake at 400° for 15-18 minutes or until golden brown.

SPINACH PIZZA, SERIOUSLY GOOD!
This yummy garlicky spinach pizza is super easy to make from scratch, it's loaded with a 10-oz bag of spinach, and it's so GOOD: crispy on the edges, juicy, mega flavorful and delicious!The recipe yields 2 large portions or 6 slices.

- Follow the easy no-knead pizza recipe through step 5, including shaping the pizza and preheating the oven.
- Cook the spinach: heat the oil in a large skillet over medium high heat. Add garlic and cook for 20 seconds until light golden. Add spinach, a handful at a time, and sauté until it has wilted. The amount of greens looks huge, but it wilt in less than 5 minutes. Season with salt and pepper, and set aside.
- Prepare the cheese: crumble the block of feta using your fingers and, if you use fresh mozzarella ball in water, cut it into ½ inch thick pieces. If it releases water, you may want to dab the mozzarella with the paper towel to remove excess moisture.
- Shape the dough: when the dough is ready follow step 5, place the dough on a parchment paper sheet and starting from the center, gently press it out with your fingers until you get approx a 9×13 inch pizza. Then gently place the dough onto a pizza peel or onto the back of a rimmed baking sheet.
- Add the topping: scatter mozzarella, feta and spinach evenly on the top of the pizza. Sprinkle some fine salt on top and little drizzle of extra virgin olive oil (optional).
- Bake the pizza: make sure the oven is hot and use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Bake the pizza until the cheese and crust are nicely browned, approx 15 minutes. Each oven is different, keep an eye on it (e.g. in a forced fan oven it will take about 8-10 minutes).
- Serve: allow the pizza to cool for a minute or two before serving and drizzle with good-quality extra virgin olive oil, also garlic oil would be nice. Slice and serve immediately.

- 1. Preheat the oven to 400 degrees F. Heat the oil in a large skillet over medium-high heat and cook the garlic, onions and chard stems until softened, about 5 minutes. Stir in the rice and 1/2 teaspoon salt to combine. Add 1 cup water, cover, reduce the heat to low and cook without stirring until the rice is tender but not mushy, about 12 minutes. Uncover, add the spinach, chard leaves and 3/4 teaspoon salt. Cook, stirring, until the greens are wilted, about 3 minutes. Transfer to a large bowl to cool (stirring with a large spoon will speed this up).
- 2. When the filling is cool, stir in the egg and then the feta, dill, raisins, pine nuts and lemon zest.
- 3. Place a large piece of parchment paper on a work surface. Lay out one sheet of phyllo and brush all over with some of the melted butter. Lay another sheet crosswise on top and brush with butter again. Working to form a large round of phyllo layers, lay an additional 6 sheets of phyllo dough diagonally over the first 2 sheets, brushing each sheet with butter, so they overlap in the center. Spread the filling in the center of the sheets and bring all the loose ends of the phyllo to rest on top to make a free-form pie, using the butter to help the pieces stick to each other. Lay 4 of the remaining 6 sheets of phyllo evenly over the top of the pie, tucking the edges under the bottom to form an enclosed disk and brushing each piece of dough with butter. Use the last 2 sheets, if necessary, to cover the filling or enclose the circle. Brush the outside of the pie with butter.
- 4. Lift the parchment with the pie onto a rimmed baking sheet and bake until the phyllo is golden brown and crispy, about 40 minutes. Serve hot or at room temperature with the Tomato Salad on the side.
- Toss the tomatoes with the pepperoncini and the olives in a medium bowl. Drizzle with olive oil and season with salt and pepper.
CRISPY GREEK-STYLE PIE

- Put the spinach into a large pan. Pour over a couple tbsp water, then cook until just wilted. Tip into a sieve, leave to cool a little, then squeeze out any excess water and roughly chop. Roughly chop the tomatoes and put into a bowl along with the spinach, feta and eggs. Mix well.
- Carefully unroll the filo pastry. Cover with some damp sheets of kitchen paper to stop it drying out. Take a sheet of pastry and brush liberally with some of the sundried tomato oil. Drape oil-side down in a 22cm loosebottomed cake tin so that some of the pastry hangs over the side. Brush oil on another piece of pastry and place in the tin, just a little further round. Keep placing the pastry pieces in the tin until you have roughly three layers, then spoon over the filling. Pull the sides into the middle, scrunch up and make sure the filling is covered. Brush with a little more oil.
- Heat oven to 180C/fan 160C/gas 4. Cook the pie for 30 mins until the pastry is crisp and golden brown. Remove from the cake tin, slice into wedges and serve with salad.

- Adjust oven rack to lowest position, and heat oven to 450 degrees. Mix mayonnaise, garlic and 1/2 cup feta in a small bowl. Place pizza crust on a cookie sheet; spread mayonnaise mixture over pizza, then top with tomatoes, olives and oregano. Bake until heated through and crisp, about 10 minutes.

- In bread machine pan, place the first six ingredients in order suggested by manufacturer. SPINACH FETA PIZZA II
For this, I decided to scale down one of my dough recipes (and put it in here) to make one thin crust 10" pizza, using my crisp-perfection method, and the same spinach filling used in Recipe #425059. I like Enrico's Natural Pizza Sauce the best, feel free to use whatever sauce you like. This uses more vegetables and less cheese than most pizza recipes and gives a nice Mediterranean flair. Could pair nicely with some shrimp or chicken for a one-dish meal. 3/4 cup AP flour + 2 1/4 tsp vital wheat gluten = 3/4 cup bread flour

- Proof the yeast with the honey and warm water in a bowl. Let it sit 10-15 minutes, or until foamy.
- Add the olive oil and salt.
- Add the flours and knead by hand until elasticy, about 5 minutes.
- Cover loosely with a dish towel and let rise for 20 minutes.
- Grease a 10" pie pan with cooking spray or a little olive oil and lightly dust with flour.
- Stretch the dough to fit the pan and make sure it plunks down in there well, and that it's puffier at the edges than the middle. Poke holes in the dough with a fork, then let it bake at 400F for 5-8 minutes.
- While it bakes, make the spinach feta topping by running the spinach through a food chopper/processor until it has about the same consistency as tabouleh, then put into a mixing bowl.
- Finely grate the feta cheese with a grater or food chopper then mix with the spinach.
- Add all the other ingredients on the list for the topping to the bowl and mix thoroughly.
- After the crust has prebaked, add the sauce of your choice. Then spread the spinach feta topping on evenly. Feel free to add more oregano, cracked red pepper, other toppings like artichokes and/or mushrooms, etc.
- Bake for another 15-20 minutes. Turn on the broiler for about 5 minutes to get a nice crispy crust.
