SPINACH " BROWNIES"
I found this recipe in Rockwell Springs Trout Club Centennial Cookbook. I have made this recipe and it was received very well. It would make a good appetizer.

FUDGY CHOCOLATE-SPINACH BROWNIES
Steps:
- Preheat the oven to 350 degrees F. Butter an 8-inch square baking pan and dust it with the cocoa powder, tapping out the excess.
- Fill a medium saucepan 1/3 full of water and bring it to a boil over medium-high heat. Put the butter, chocolate and espresso powder in a heatproof bowl, set it on the saucepan and turn off the heat. Let the bowl stand for about 5 minutes until the chocolate mixture is melted. Stir together until very smooth. Stir in the sugar until dissolved. Remove the bowl from the saucepan; let cool to room temperature.
- Squeeze any excess moisture from the spinach and put it in a food processor. Add the vanilla and 1 tablespoon of water and puree until very smooth. Add the spinach puree and eggs to the cooled chocolate mixture and whisk until well combined.
- Whisk together the flour, cocoa powder, baking powder and salt in a medium bowl until combined. Add the wet ingredients to the dry and fold with a rubber spatula until combined. Add the chocolate chips and stir to combine. Pour the batter into the prepared pan; use an offset spatula to spread the batter evenly. Bake until set and a toothpick inserted in the center still has a few moist crumbs stuck to it, about 25 minutes.
- Cool the brownies completely in the pan before cutting.
SPINACH BROWNIES
They look like brownies, but they're not sweet! Here's a wonderful way to have spinach. This is a treat my girls love to eat. Two 10 ounce packages frozen spinach, cooked, may be substituted for fresh.

Steps:
- Preheat the oven to 350° and line an 8x8-inch glass pan*** with parchment paper, or grease well with butter.
- Melt the butter and baking chocolate together in a microwave safe bowl. Microwave in 15 second intervals, whisking between each interval. When fully melted, whisk in the sugar. Let the mixture cool until almost room temperature. (Take care not to add the eggs too soon, or they'll scramble in the hot mixture.)
- Add the eggs and vanilla and beat with a hand mixer on high for 2-3 minutes or until lightened in color and fluffy. (Don't skip this step - beating the eggs well is what gives the brownies that characteristic crackly top.)
- Add the cocoa powder, flour, baking powder and salt. Stirring just until incorporated. Last, fold in the chocolate chips or nuts, if desired. Spread the batter into the prepared pan.
- Bake at 350° F for 28-32 minutes or until the tops of the brownies are shiny and crackly and the center doesn't wiggle when you shake the pan.
- Remove from the oven and let cool for at least 20 minutes. When ready to serve, use the parchment paper to lift the brownies out of the pan before cutting.
- Serve warm or cooled completely. The brownies will store tightly covered on the counter for 1-2 days or in the freezer for a couple weeks.

Original recipe was from the Eagle Brand Milk site, but I've converted this to use a scratch brownie recipe and a different cream cheese topping. Enjoy!!

- 1. Preheat oven to 350. Line 9x13 inch baking pan with foil; spray foil with non-stick baking spray.
- 2. Combine brownie ingredients by mixing the butter, sugar and vanilla well; add eggs and mix. Add flour, cocoa and baking powder, mixing until combined. If desired, you may add salt and/or nuts. Pour brownie mix into prepared pan.
- 3. Combine cheesecake ingredients by mixing softened cream cheese, sugar and vanilla. Add in flour and eggs. Mix well and pour evenly over brownies.
- 4. Bake for about 40-45 minutes until slightly browned and toothpick inserted comes out clean. Cool completely, about 1 hour, and then refrigerate for at least 2-3 hours until thoroughly chilled. SPINACH-CARROT BROWNIES
No one will be able to guess what healthy ingredient these brownies have in them! This recipe is from Parents magazine. I've made them a few times and my kids love them. I'd like to experiment and replace the vegetable oil with applesauce and see if it still turns out good. If you liked these, try my Spinach Brownie Bites Recipe #223677!
