Don't fret over unexpected company. Here's a refreshing salad that's ready in 20 minutes. "It's healthy...and so good," says Rae Sorensen of Granby, Quebec. "I make sure to have all the ingredients on hand."

1 package (9 ounces) fresh baby spinach, torn
2 medium tart apples, chopped
1/4 cup golden raisins
1/4 cup sugar
1/4 cup cider vinegar
1/4 cup vegetable oil
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1/2 cup chopped cashews

Steps:

  • In a large salad bowl, combine the spinach, apples and raisins. In a small bowl, whisk the sugar, vinegar, oil, garlic salt and celery salt. Drizzle over salad and toss to coat. Sprinkle with cashews. Serve immediately.

1 tablespoon cider vinegar
1 teaspoon Dijon mustard
Salt and freshly ground pepper
5 ounces baby spinach leaves (about 5 cups lightly packed)
1 Granny Smith apple
1/3 cup walnut pieces, toasted in a dry skillet over a medium-high flame until fragrant, about 2 minutes

Steps:

  • In a small bowl whisk together the oil, vinegar and mustard. Season with salt and pepper to taste.
  • Toss the spinach with the dressing until evenly coated then divide the spinach among 4 serving plates.
  • Core the apple and slice it into matchsticks. Sprinkle a quarter of the apple pieces on top of each salad. Follow with the walnut pieces. Serve immediately.

  • In a large skillet, cook bacon until crisp. Remove to paper towels. Drain, reserving 2 tablespoons drippings. , In same skillet, combine vinegar, brown sugar and reserved drippings.
