WATERMELON AND FETA SALAD
This slightly sweet and savory watermelon-feta salad has cucumbers, olives and refreshing mint.

- Cut the rind off the watermelon and cut the fruit into 1-inch cubes and transfer to a large serving bowl (you should have about 6 cups total). Top with the cucumber, feta and olives. Pour the oil over top and season with a large pinch of salt and pepper. Sprinkle with mint leaves and gently stir to combine right before serving.

- Add the garlic, Fresno, olive oil and vinegar to a glass jar with a lid. Season with salt and pepper, then add the mint. Place the lid on and shake vigorously to combine. Set aside.
- When ready to serve, combine the watermelon, cucumber and scallions in a large bowl. Dress with the vinaigrette and gently toss to combine. Sprinkle the crumbled feta on top. Serve chilled.
WATERMELON FETA SALAD
A quick, easy and healthy salad that is perfect for BBQ's and picnics. If you cannot buy lemon scented olive oil try this quick alternative. Combine finely grated rind of 1 lemon and 1/4 cup extra virgin olive oil in a screw top jar. Secure lid and shake well.

- Place oil and pumpkin seeds in a cold frypan. Place over medium heat and cook, stirring occasionally, for 10 minutes, or until toasted. Season to taste with sea salt.
- Place in small bowl and set aside to cool.
- Slice watermelon into 1cm thick wedges and arrange on a serving plate.
- Crumble feta over watermelon and drizzle with lemon scented olive oil *SEE NOTE ABOVE*.
- Sprinkle with freshly cracked pepper if required. Serve.

- Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over 100g feta, the remaining mint leaves, then drizzle with 1 tbsp balsamic glaze just before serving.

- In a large bowl, stir together oil, vinegar, lime zest and juice, honey and jalapeño. Season generously with salt and pepper. Add the red onion and toss to coat. Let marinate, 10 minutes.
