Steps:

- Place puree in a deep saucepan with remaining ingredients and stir.
- Bring to a boil, then reduce heat and simmer with a splatter screen, stirring occasionally, one hour or until thickened.

SOUTHERN BARBECUE SAUCE
Steps:
- Gather the ingredients.
- Heat the vegetable oil in a medium saucepan. Add the minced garlic and cook for 15 to 30 seconds until it becomes fragrant.
- Add the ketchup, cider vinegar, water, Worcestershire sauce, sugar, paprika, bay leaf, Tabasco sauce, cayenne pepper, and lemon juice. Do not add the butter at this point. Simmer the sauce over medium-low heat for 8 to 10 minutes, stirring occasionally. Watch for burning and lower the temperature if needed.
- Remove the pan from the heat and stir in the butter. Once melted through, let sauce cool for 10 to 15 minutes before using.
- If making ahead of time, cool sauce for 30 minutes and store in an airtight container in the refrigerator for four to five days after preparation.
- Serve and enjoy.

- In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency. Cool for 15 minutes. , Strain sauce through a fine mesh strainer over a large bowl, discarding vegetables and seasonings. Store in an airtight container in the refrigerator up to 1 month. SPICY TOMATO BARBECUE SAUCE

- In a blender or in a food processor fitted with the steel blade purée the onion with the vinegar, add the ketchup, the apple juice, the brown sugar, the oil, the garlic, the gherkin and gherkin juice, the mustard, the celery seeds, the Worcestershire sauce, the Tabasco, the cayenne and the turmeric, and blen the mixture until it is smooth. Transfer the mixture to a stainless steel or enameled saucepan, bring it to a boil, stirring, and simmer it, stirring, for 20 minutes. Let the sauce cool. (The sauce may be prepared up to 1 week ahead and kept covered and chilled.)
TANGY SPICY NO-TOMATO BBQ SAUCE
This is a vinegar based sauce that came from a friend of my fathers. It freezes very well and is great on any barbequed meat. This is his recipe but i always leave the butter out just to save calories. This will seperate so make sure you mix it well.

- Blend the chillies, peppers, garlic, shallot and tomatoes in a food processor until smooth.
- Pour the purée into a stainless steel saucepan, add the sugar and vinegar, then bring to the boil, stirring from time to time. Reduce the heat and simmer for 40-60 mins until thick, stirring regularly, especially in the latter stages of cooking.
- Pour into large, warm sterilized jars then cool. This will keep for up to 2 weeks in the fridge.
