- Preheat oven to 180°C (160ºC fan). In a large ovenproof pan over medium heat, heat oil. Add onions and peppers and cook until soft, 5 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
- With a sharp paring knife, create a pocket in each chicken breast. Stuff each with vegetable mixture, then top with cheddar. Season chicken all over with Cajun seasoning, salt, and pepper.
- Add chicken to pan and bake until cooked through, about 25 minutes.

Steps:
- Wash and pat dry chicken thighs; lay them flat, inside up.
- Slice mushrooms and sauté with salt and pepper until they are brown; remove from heat.
- Wash and stem spinach.
- Chop spinach and add to mushrooms, tossing to wilt.
- Place about 2 tablespoons of this filling on each chicken thigh, evenly dispersing the remaining filling among the thighs as needed.
- Divide cheese among chicken thighs.
- Close the thighs with toothpicks (I used three per thigh) and place in a pie dish.
- Sprinkle paprika, crushed tarragon, and garlic salt over the thighs.
- Drizzle honey over all.
- Add water to the pie pan, cover with foil, and bake at 350°F for 30 minutes.
- Remove foil and bake another 15 minutes.
- Sprinkle remaining cheese over chicken and bake until the cheese is melted.
- Serve with steamed veggies, rice, and a fruit salad.

- Place the chicken thighs in a large bowl. Add the olive oil and spices and use your hands to coat the chicken pieces.
- Arrange the seasoned thighs in a single layer on a rimmed baking dish, such as a 9 X 13 baking dish. If there's some residual oil and spice mixture in the bowl, brush it on top of the chicken pieces, as shown in the video below.
- Bake until cooked through, juices run clear, and an instant-read thermometer inserted into the middle of the largest thigh reads 165ºF. In my oven, this takes about 30 minutes.

- Melt coconut oil in a cast iron skillet over medium high heat.
- Combine the spice rub ingredients and mix until thoroughly combined.

- Make the stuffing: set a skillet over moderately high heat and heat until hot. Add sausage, crumbled, and cook, stirring occasionally, for 5 minutes, or until golden brown. Transfer to a plate lined with paper towel and let drain. Over an open flame or in a hot, dry skillet set over moderately high heat, toast the Papads for 1 minute, or until crisp and lightly browned. Let cool for 2 minutes and crumble until they resemble oatmeal. - Preheat oven to 375°F and line a baking sheet with parchment paper.
- Soak dried apricots in a cup of warm water for 10-15 minutes, and then chop them.
- To create stuffing, combine apricots, bacon, onion, garlic, breadcrumbs, sage, and parsley flakes in a mixing bowl. Set aside.
- Mix black pepper and salt in a small bowl and set side.
- Place a chicken thigh, skin side down (where the skin would be), on a cutting board and cover with a piece of wax or parchment paper; pound with a meat mallet or a heavy skillet to flatten the thigh. Place the flatten thigh on a clean plate and set aside. Repeat with each thigh.
- Lay a flattened thigh on a cutting board skin side down, and sprinkle with salt and black pepper mixture. Spread about 2 tbsp of stuffing on the thigh and press down with your fingers. Carefully roll the thigh and secure the roll with a toothpick. Place on a baking sheet. Repeat with all thighs. Use the leftover stuffing to sprinkle on the top of the stuffed thighs.
- Bake at 375°F for 40-45 minutes or until a thermometer inserted sideways registers 175°F.
- Remove the toothpicks and serve hot or cold.

- Bone the chicken thighs leaving the skin intact.
- For the stuffing: Heat the oil in a frying pan and sweat the onion and garlic for 5 mins or until translucent. In a bowl add the breadcrumbs, parsley, thyme, lemon zest and lemon juice. Combine well. Add the cooked onion and garlic, stir in the egg yolk and season to taste.
- For the thighs: Lay each thigh flat and place a portion of the stuffing in the middle of each. roll up and secure with cocktail sticks.
- Place into a roasting tin and dot with little knobs of butter.
