SPICY STEWED ZUCCHINI
Tender, spicy zucchini slices would be a great veggie side for any grilled or roasted meats.

Steps:
- Heat the oil in a large skillet over medium heat until lightly smoking.
- Add the garlic, and cook a minute or two until fragrant, then add the zucchini and onions and cook the vegetables for about 15 minutes, stirring often, until they soften and begin to brown.
- Add the chili pepper, and 1/2 cup of wine and lower the heat to medium low and continue to cook until the zucchini begin to break down, about 10 minutes.
- If the mixture begins to dry out as it cooks, add a little water as needed.
- Stir in the basil and season with salt and pepper.
- Serve at room temperature.

Steps:
- Cook chopped bacon until done, but not crispy.Drain and set aside.
- Saute sliced zucchini in large skillet, tossing in chopped onion, at the last moment adding crushed garlic cloves.
- Transfer to 6-8 qt pot, adding bacon and canned tomatoes, seasonings and more garlic, plus just enough water to make sure everything is covered. C over and cook over medium-low heat until zucchini is tender, keeping an eye on the fluid.
- Optional: Top with parmesan or grated mozzarella.

My husband, who loves spicy foods, came up with this one night to combat his dislike of zucchini. He's changed his mind about zucchini, now. ;)

- Toss in remaining ingredients and sauté until it's to your desired doneness.

- Both the Thai chiles and the jalapeno are good, but the dish tastes different depending on which you use; try it both ways!

- Heat a skillet over moderate heat. Go 1 turn of the pan with a slow stream of extra-virgin olive oil. Add crushed garlic and red pepper flakes to the pan. Saute garlic and red pepper flakes 1 or 2 minutes. Add zucchini and season with salt, cumin and chili powder. Saute, stirring occasionally, about 3 minutes. Add chick peas, tomatoes and scallions to the pan and stir to combine. Cook over medium low heat for 10 minutes. Stir in cilantro and serve.
- To reduce the heat level, omit the red pepper flakes from the recipe and method.

- In a large pot, combine zucchini and onion. Cover with 3 inches of water. Bring to a boil over medium heat. Stir in tomatoes and rice; reduce heat and simmer.

Talk about cheating!! I was a waitress for 16 years in New York diners. One of my favorite veggie sides was stewed zucchini, (the Greek chefs made this daily). Well, this is just as good and so easy. This is also my first post. Hope you like it.

- Wash and cut zucchini (see above).
- Heat a large fry pan with olive oil and garlic.
- Add zucchini and cook over med/high heat just long enough to toss to coat with oil and add salt and pepper to taste.
