¼ cup chopped fresh cilantro
1 teaspoon lemon juice
1 pinch ground cumin
½ cup plain yogurt
1 teaspoon sweet chili sauce

Steps:

  • In a small serving bowl, stir together the cilantro, lemon juice, cumin, yogurt and chili sauce. Chill for at least one hour, or until needed.

Number Of Ingredients 9

1 cup chopped onions
1 to 2 chiles, minced
2 tablespoons vegetable oil
1 teaspoon ground cumin seeds
1 teaspoon ground coriander seeds
1 large tomato, chopped (about 1 cup)
2 teaspoons unbleached white flour
1 cup plain yogurt
Salt to taste

Steps:

  • Saute the onions and chiles in the oil until tender, about 10 minutes. Add the cumin and coriander and saute for a minute, stirring constantly. Stir in the tomato and flour and cook for 2 minutes. Finally, stir in the yogurt. Heat the sauce thoroughly, but do not allow it to boil or the yogurt will curdle. Add salt to taste and serve

Serve this yogurt with basmati rice, quinoa, or couscous. Use to garnish lamb, chicken or fish kebabs. Spoon a dollop into pureed soups and shellbeans just before serving. Or thin with a little water to make a creamy dressing ideal for romaine or little gem lettuces.

1 cup Greek-style yogurt, preferably whole milk yogurt (8 ounces/225 grams)
2 tablespoons finely chopped fresh mint leaves
2 tablespoons extra-virgin olive oil
2 tablespoons lime juice (from 1 large lime), more to taste
1/2 teaspoon salt, more to taste
1 garlic clove

Steps:

  • In a medium mixing bowl, whisk together yogurt, mint, oil, lime juice, salt and 1 to 2 tablespoons water. Use a rasp grater to finely grate garlic into the bowl. Stir, taste and adjust salt and lime juice as needed. Cover and refrigerate leftovers for up to 5 days.

2 large tomatoes, coarsely chopped
1 to 3 fresh green chili pepper, such as serrano, stemmed
1/2 cup coarsely chopped fresh cilantro, including soft stems
3/4 cup nonfat plain yogurt
2 cups water
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon coarsely ground fenugreek seeds
1 small onion, finely chopped
1 tablespoon peeled minced fresh ginger
1 clove fresh garlic (large), minced
1 tablespoon ground coriander
1/4 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 (16-ounce) package frozen shelled soybean (edamame), thawed
1/4 teaspoon Garam Masala

Steps:

  • 1. In a food processor or a blender, process together to tomatoes, green chili peppers, and cilantro. Remove to a bowl and process the yogurt and water until smooth.2. Heat the oil in a large saucepan over medium-high heat and add the cumin and fenugreek seeds they should sizzle upon contact with the hot oil. Quickly add the onion, ginger, and garlic and cook until golden, about 4 minutes. Add the coriander, turmeric, and salt, then mix in the processed tomatoes and cook until most of the juices evaporate about 5 minutes.3. Add the soybeans and stir about 5 minutes. Mix in the yogurt-water mixture, and bring to a boil over high heat. Reduce the heat to medium-low, cover the pan, and summer until the beans are soft and the sauce is thick, about 30 minutes. MEXICAN BEAN BURGERS WITH LIME YOGURT & SALSA



Mexican bean burgers with lime yogurt & salsa image

These veggie burgers are a doddle to make and the toppings make them wonderfully moist - cook from frozen to save time

Yield Makes 6 burgers

Number Of Ingredients 9

2 x 400g/14oz cans kidney beans, rinsed and drained
100g breadcrumb
2 tsp mild chilli powder
small bunch coriander, stalks and leaves chopped
1 egg
200g tub fresh salsa
150ml low-fat natural yogurt
juice ½ lime
6 wholemeal burger buns, sliced avocado, sliced red onion and salad leaves, to serve

Steps:

  • Heat grill to high. Tip the beans into a large bowl, then roughly crush with a potato masher. Add the breadcrumbs, chilli powder, coriander stalks and ½ the leaves, egg and 2 tbsp salsa, season to taste, then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. The burgers can now be frozen. Place on a non-stick baking tray, then grill for 4-5 mins on each side until golden and crisp. To cook from frozen, bake at 200C/fan 180C/gas 6 for 20-30 mins until hot through.
  • While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.

3 tablespoons chili paste with garlic
2 tablespoons fresh gingerroot, peeled and grated
1 cup soy sauce
1/2 cup sesame oil

  • In a bowl whisk together the vinegar, chili paste, gingerroot and the soy sauce.
  • Whisk in the oil until sauce is combined well.
  • Transfer the sauce to a bottle.
  • Shake sauce well before using.
