Spicy Sausage Pasta Bake image

An easy Sausage Pasta Bake made with Italian sausages in a creamy tomato sauce. Ready from start to finish in under 30 minutes, it's perfect for weeknights. Topped with bubbling, melted mozzarella cheese it's the ultimate comfort food meal!

4 cups rigatoni pasta or another short pasta shape ((14 oz/400g))
7 oz Italian sausages ((200g))
2 cloves garlic (, finely chopped)
1/2 cup mascarpone ((100g))
2 1/2 cups passata/crushed strained tomatoes ((700g))
1/2 cup reserved pasta water ((125ml))
1 ball fresh mozzarella ((4.4oz/125g))
1/2 tsp red pepper flakes ((chilli flakes))
1 tsp oregano
salt and pepper
1 small bunch basil for garnish ( (optional))

Steps:

  • Preheat the oven to 350°F/180F. Bring a pot of salted water to a boil and boil the pasta around 3 minutes less than advised on the packet instructions. Reserve 1/2 cup (125ml) of pasta water.
  • Squeeze the sausages out of their skins and brown in the pan on a medium heat. Add the finely chopped garlic, chili flakes, and oregano. Stir into the sausages and fry for 1 minute.
  • Add the passata (crushed strained tomatoes) along with the reserved pasta water and a good pinch of salt and pepper, simmer for around 5 minutes.
  • Turn the heat off and add the mascarpone, stir the sauce until the mascarpone is mixed in thoroughly.
  • Drain the pasta and add to the sauce, mix until it's completely coated. Transfer the pasta to an ovenproof baking dish and top with mozzarella. Bake in the oven for around 7-8 minutes or until the mozzarella is melted and bubbling. Serve with torn basil (optional).

1 large sweet onion, finely chopped
3 cloves garlic, grated
1 1/2 teaspoons dried oregano
Pinch crushed red pepper flakes
One 32-ounce can crushed seasoned tomatoes
One 16-ounce can seasoned tomato sauce
Kosher salt and freshly ground black pepper
1 pound penne pasta
Grated Parmesan cheese, optional

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the sausage and cook, stirring occasionally, until browned. Transfer to a bowl.
  • Add the onion to the saucepan and cook, stirring, until coated with the sausage drippings. Reduce the heat slightly and add the garlic, oregano and red pepper flakes. Stir until the mixture has softened, about 5 minutes.
  • Add the crushed tomatoes and tomato sauce to the onion mixture. Stir until fully combined. Season with salt and pepper and stir in the cooked sausage. Reduce heat to low and gently simmer the sauce, stirring occasionally, until slightly thickened, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil over high heat. Add the penne and cook until just tender, 8 to 10 minutes. Drain and transfer to a serving bowl. Add the sauce, sprinkle with Parmesan, if using, toss and serve.

3 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
1 cup chopped fresh basil, plus 4 large fresh basil sprigs
1 pound dried rigatoni
1 pound spicy Italian sausage, casings removed
1 1/2 cups shredded mozzarella
1 1/2 cups shredded provolone
1 cup grated Parmesan

Steps:

  • Preheat the oven to 450 degrees F.
  • Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
  • While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
  • Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.
  • Add the tomato sauce and half each of the mozzarella, provolone and Parmesan cheeses to the bowl and stir well to combine. Transfer the pasta-sausage mixture to a 3- to 4-quart baking dish and top with the remaining mozzarella, provolone and Parmesan cheeses. Bake, uncovered, until browned, about 15 minutes. Let the pasta rest about 10 minutes before serving.

The kind that can be whipped up in thirty minutes or less from start to finish and only mess up one dish. And of course, they need to knock-my-socks-off with flavor as well! I am so in love with this spicy, creamy, cheesy pasta for all of those reasons. It is just packed with so many incredible flavors. This came from Kevin & Amanda. When I made this recipe I made minor changes to the recipe. I used vegetable oil, mozzarella flavored sausages, half & half, and cheddar cheese. Next time I plan to not use Rotel as this was a bit to spicy for my families taste.

1 tbsp olive oil
packet of 8 pork sausages (the best your budget will allow), cut into chunky pieces
1 large onion, chopped
2 garlic cloves, crushed
1 tsp chilli powder
400g can chopped tomatoes
300g short pasta such as fusilli or farfalle (just over half a 500g bag)

Steps:

  • Put a large pan of water on to boil.
  • Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
  • Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
  • Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
  • Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
  • Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

2 teaspoons olive oil
1 pound mild Italian sausage
1 cup chopped onion
½ cup white wine
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes with garlic

2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Heat oil in a large, deep skillet. Place sausage and onion in the skillet and cook over medium high heat until evenly brown. Drain excess fat. Pour in wine, and cook for 1 minute, stirring, to deglaze the pan. Stir in tomato sauce, diced tomatoes and tomato paste. Simmer for 10 minutes, stirring occasionally. An Italian-American classic, this freezable sausage pasta bake is an ideal make-ahead family dish for busy days

400g rigatoni or penne
125g ball mozzarella, chopped into chunks
2 tbsp olive oil
6 pork sausages
4 garlic cloves, sliced
pinch of chilli flakes (optional)
1 tbsp tomato purée
1 tbsp red wine vinegar
2 x 400g cans chopped tomatoes
1 tbsp butter
1 tbsp plain flour
350ml milk
50g parmesan, grated, plus extra to serve

Steps:

  • To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
  • Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
  • Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
  • Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.

3 1/3 cups uncooked ziti pasta noodles (about 5 servings)
1/2 lb crumbled sausage (I used 3 Johnsonville HOT sausage brats, casings removed)
1 (6 ounce) can sliced mushrooms, drained
1 medium onion, chopped
3 garlic cloves, chopped
1 (6 ounce) can tomato paste
1 (26 1/2 ounce) can hunts traditional spaghetti sauce (or your favorite tomato-based sauce)
2 teaspoons salt, divided
1/2 teaspoon pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried basil
2 teaspoons garlic powder, divided
2 jalapeno peppers
2 poblano peppers
1 medium red pepper
1 medium yellow pepper
4 ounces reduced-fat cream cheese, at room temperature
1/2 cup sour cream
2 wedges of the Laughing Cow cheese, light french onion flavor
1/2 cup fresh parsley, chopped
1/2 cup frozen chopped spinach, thawed and drained
2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 375 degrees.
  • Cook noodles in salted, boiling water, about 8 minutes. Be sure to slightly undercook noodles. Drain and set aside.
  • Make tomato meat sauce: saute chopped onion for 5 minutes; add mushrooms and garlic, saute another 5 minutes. To onion mixture, add crumbled sausage and saute until sausage is no longer pink. Add tomato paste to sausage mixture, saute 1 minute. Add spaghetti sauce, 1 teaspoon salt, pepper, oregano, thyme, basil and 1 teaspoon garlic powder. Cook sauce at least 20 minutes.
  • Roast the pepper medley: Using a broiler, char peppers (jalapenos, poblanos, red and yellow peppers) on all sides, about 5 minutes per side. When skins have blackened, place peppers in a bowl and cover with plastic wrap. Allow peppers to steam and cool. When cool enough to handle, remove skins from the peppers (skins should peel off easily with a paper towel or your hands). Remove stems, seed and chop peppers. Mix chopped peppers together in a bowl and set aside.
  • Prepare cheese layer: In a bowl, combine softened cream cheese, flavored cheese wedges, sour cream, parsley, spinach and 1/2 cup of mozarella cheese. Stir in 1 teaspoon each salt and garlic powder.
  • In a 9 x 13 inch pan, layer 1/3 of meat sauce, 1/2 of the noodles, all of the peppers and all of the cream cheese mixture. Top with 1/3 of meat sauce, 1/2 of the noodles. Cover the noodles with the remaining 1/3 of meat sauce and the remaining 1 1/2 cups of mozarella cheese. Sprinkle with 1/2 cup of grated parmesan.
  • Bake at 375 for 55 minutes for a very well-done cheesy crust.
  • Let sit for 10-15 minutes prior to serving. Makes 8-12 servings.
