- Melt butter in a saucepan over medium heat; cook and stir onion and garlic until onion becomes translucent, 2 to 3 minutes.

Healthy, spicy, and very low fat! I think you'll like this if you like a little heat in your dip and, it's a little different than the many other good recipes posted here on 'Zaar. To reduce the heat, you can omit or use less of the adobo sauce, use only 1 chipotle pepper, or use a mild salsa (I like Pace Medium Chunky Salsa and don't measure). I use my favorite brand of refried black beans, but the recipe works just as well with refried pinto beans, which make a great foundation for bean nachos if you don't use too much salsa. - Preheat the oven to 350°F. In a bowl add refried beans, softened cream cheese, sour cream, and taco seasoning. Using a stand mixer or a hand blender or whisk beat it together until combined. You want to have a smooth mix.

- Dump the beans in a colandar and rinse. Place in a large stockpot and cover with water by about 4 inches.
- Cover and bring to a boil. When the water comes to a boil, crack the lid and cook over medium heat for about 1 1/2 to 2 hours. When you can pinch a bean they are done.
- Drain and pour into a large mixing bowl.
- Mash the beans with a potato masher. It takes a little while. I will also go in and use the back of a fork too.
- You can do this in a food processor too but be careful not to go too far and make it like the consistency of baby food. Not good for this dip. You would need to do this in smaller batches so you can keep an eye on them. Then turn into a large mixing bowl.
- Add the remaining ingredients and mix well.
- To serve hot - cover bowl and heat in microwave for a minute or two stirring in between minutes.
- Again, stir well and serve with your favorite sturdy chips and veggies.
