SPICY CHILLI PRAWN PASTA (SHRIMP)



Spicy Chilli Prawn Pasta (Shrimp) image

Pasta tossed with juicy prawns and a rich spicy tomato sauce! Super quick for midweek, the secret ingredients in this are the anchovies (it dissolves!) and parmesan which provides that extra umami that you get from simmering a sauce made with prawn shells for hours and hours. See note 1 for more commentary and see video below recipe.

180 g / 6 oz fettuccine or other pasta or choice
1 1/2 tbsp olive oil
150 - 180 g / 5 - 6 oz medium prawns/shrimp (, peeled and deveined)
2 anchovies (, whole (or 1/2 tsp anchovy paste))
1 garlic clove (, minced)
1/4 cup white wine
1 tsp+ chilli fakes / red pepper flakes
1 cup / 250 ml tomato passata ((Note 2))
2 tsp finely grated parmesan
1/2 lemon
1/4 cup finely chopped fresh parsley (, plus more to serve)

Steps:

  • Get all the ingredients out and ready to go - this recipe moves fast!
  • Bring a large pot of water to the boil. Add a big pinch of salt and the pasta. Cook for the time per the packet MINUS 1 minute. SCOOP OUT a mugful of pasta cooking water before draining pasta (or transfer it straight from pot into sauce, if you time it right).
  • Heat oil in a skillet over high heat. Add prawns and cook for 30 seconds, until surface just changes from translucent to opaque.
  • Add red pepper flakes and anchovies. Stir briefly, then add wine and garlic.
  • Cook for 30 seconds until wine is mostly evaporated.
  • Add tomato passata, squeeze of lemon juice, parmesan, salt and pepper. Bring to simmer, turn heat down to medium and cook sauce for 1 minute, stirring frequently (don't cook for long otherwise will overcook prawns).
  • Add pasta, about 1/2 cup of pasta cooking water and parsley. Toss gently for 1 minute (or gently stir with wooden spoon or tongs) until sauce re-thickens and it coats the pasta.
  • Adjust salt, pepper and spiciness to taste. Serve immediately with more parsley.

175g linguine
2 tsp olive oil
1 garlic clove, finely sliced
100ml white wine
2 tbsp reduced-fat crème fraîche
juice ½ lemon (or to taste)
2 handfuls (150g) raw peeled prawns
small bunch chives, finely chopped

Steps:

  • Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper. Simmer for 1 min to reduce a little, then add the prawns and simmer in the sauce until just pink.
  • Drain the pasta and tip into the sauce with half the chives. Use tongs to mix everything together. Divide between 2 shallow bowls and sprinkle with the remaining chives.

280g linguine pasta
200g sugar snap peas, trimmed
2 tbsp olive oil
2 large garlic cloves, finely chopped
1 large red chilli, deseeded and finely chopped
24 raw king prawns, peeled
12 cherry tomatoes, halved
a handful of fresh basil leaves
mixed salad leaves and crusty white bread, to serve
2 tbsp virtually fat-free fromage frais
grated zest and juice of 2 limes
2 tsp golden caster sugar

Steps:

  • To make the dressing, mix 2 tbsp virtually fat-free fromage frais, the grated zest and juice of 2 limes and 2 tsp golden caster sugar in a small bowl and season with salt and pepper. Set aside.
  • Cook 280g linguine pasta according to the packet instructions. Add 200g trimmed sugar snap peas for the last minute or so of cooking time.
  • Meanwhile, heat 2 tbsp olive oil in a wok or big frying pan, toss in 2 finely chopped large garlic cloves and 1 deseeded and finely chopped large red chilli and cook over a fairly gentle heat for about 30 seconds without letting the garlic brown.
  • Tip in 24 peeled raw king prawns and cook over a high heat, stirring frequently, for about 3 minutes until they turn pink.
  • Add 12 halved cherry tomatoes and cook, stirring occasionally, for 3 minutes until they just start to soften.
  • Drain the linguine pasta and sugar snap peas well, then toss into the prawn mixture.
  • Tear in a handful of basil leaves, stir, and season with salt and pepper.
  • Serve with mixed salad leaves drizzled with the lime dressing, and warm crusty white bread.

1 tablespoon olive oil

3/4 cup half-and-half cream
4 cups chopped fresh spinach

Steps:

  • Cook pasta according to package directions; drain., In a large skillet, heat 1/2 tablespoon each butter and oil over medium-high heat. I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.

1 lb uncooked linguine
1 lb unpeeled large raw shrimp
4 tablespoons butter or 4 tablespoons margarine
1 medium sweet onion, chopped
2 -3 cloves garlic, minced
1 tablespoon cajun seasoning or 1 tablespoon creole seasoning
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
1 teaspoon dry crushed red pepper
1/3 cup chopped fresh parsley or 2 tablespoons dried parsley

Steps:

  • Cook linguine according to package directions; keep warm.
  • Peel and devein shrimp; set aside.
  • Melt butter in a large electric skillet set on medium temperature.
  • Add onions and garlic to skillet; saute until tender.
  • Stir in cajun or creole seasoning; cook, stirring constantly for 1 minute.
  • Stir in shrimp and saute until barely pink.
  • Add heavy cream; reduce heat to medium low, and simmer for 3 minutes, stirring often.
  • Stir in linguine, parmesan cheese, and crushed red pepper, cook mixture, stirring gently, until thoroughly heated.
  • Stir in parsley; serve immediately.

4 tiger prawns
6 cherry tomatoes, halved
50ml/2fl oz white wine

2 tbsp chopped fresh basil
½ lemon, juice only
150g/5½ oz linguine, cooked according to packet instructions, drained

Steps:

  • Heat the olive oil in a pan and fry the onion and garlic for 3-4 minutes, or until softened, then add the chilli flakes and prawns. Cook until the prawns have turned pink and are just cooked through.
  • Add the tomatoes and wine and cook for 2-3 minutes, then stir in the herbs and lemon juice. Add the cooked linguine and stir well to coat.
  • Pile the linguine onto a serving plate and serve.
