Steps:

  • 1. Mix together mince, cumin, paprika, cinnamon, garlic, egg, breadcrumbs, coriander and a dash of olive oil.\n 2. Add salt and pepper to taste. Roll tablespoonfuls of mince into balls.\n 3. Heat half the oil in a pan on medium heat and fry meatballs for 2 to 3 minutes or until lightly browned. Once browned, remove and place onto a tray.\n 4. Heat remaining oil and fry onion for 2 minutes. Add tomatoes, chicken stock and bring to the boil.\n 5. Reduce heat to a simmer and add meatballs. Cook meatballs for a further 8 to 10 minutes and season with salt and white pepper. \n 6. In a pot of boiling salted water, add the pasta and cook as per packet directions \n 7. To finish, add drained pasta to the pan and mix together.

Sunny's Spicy Spaghetti with Mega Meatballs image

1/2 cup grated Parmesan
1/2 cup plain bread crumbs
1/2 teaspoon onion powder
1 teaspoon dry rubbed sage
2 teaspoons kosher salt
Freshly ground black pepper
1/4 cup chopped parsley leaves
1 pound ground beef round
1 pound ground pork
2 eggs, beaten
2 cloves garlic, minced
1/4 cup vegetable oil
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 cloves garlic, minced
Salt and freshly ground black pepper
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1 (28-ounce) can crushed tomatoes
1 teaspoon hot sauce (recommended: Frank's Red Hot)
1 teaspoon sugar, optional
1 pound spaghetti, cooked al dente
Grated Parmesan, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • To make the meatballs: In a large bowl, combine the Parmesan, bread crumbs, onion powder, sage, salt, a few grinds of black pepper, to taste, and parsley. Add the ground round, pork, eggs, and garlic and gently combine. Form into 8 equal-sized meatballs.
  • In a 10-inch saute pan over medium-high heat, add the vegetable oil. When the oil begins to swirl, add the meatballs and sear until light golden on all sides, about 10 minutes. Transfer the pan to the oven and roast until cooked through, 15 minutes.
  • Meanwhile, make the sauce: In a large saucepan over medium heat, add the oil, onion, bell pepper, garlic, a pinch of salt, and a few grinds of black pepper, to taste. Saute until tender, then add the oregano, cayenne pepper, crushed tomatoes, and hot sauce. Taste and add sugar, if needed. Season, to taste, with salt and pepper. Bring the sauce to a simmer, and cook for about 20 minutes more.
  • Taste the sauce and adjust seasoning, if necessary. Serve the cooked pasta with sauce and meatballs, divided among serving plates with 2 meatballs per serving. Garnish with Parmesan cheese.

2 teaspoons olive oil
1/2 small onion, chopped
1 garlic clove, smashed
1 lb ground lamb
1/2 cup cooked couscous
1 egg, beaten
2 tablespoons chopped fresh parsley
1/2 teaspoon turmeric
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Steps:

  • Preheat oven to 350°F.
  • In a small nonstick frypan, heat oil over medium heat.
  • Saute onion and garlic for 3 minutes or until browned.
  • In a medium bowl, combine ground lamb, couscous, egg, parsley, turmeric, cinnamon and ginger.
  • Add sauteed onion and garlic.
  • Mix well, form into 1 and 1/2 inch meatballs.
  • Place on a prepared baking sheet.
  • Bake in preheated oven for 30 minutes, turning after 15 minutes, until browned on all sides and no longer pink.

500g minced chicken , turkey, lamb, beef or pork
1 medium onion
2 garlic cloves , crushed or chopped
2 tsp mild or medium curry powder
2 tsp ground cumin
1 tsp garam masala
½ tsp paprika or cayenne pepper
2 tbsp fresh coriander , chopped
1 egg , beaten
50g fresh breadcrumb
1 tbsp olive oil

Steps:

  • Heat oven to 180C/fan 160C/gas 4.
  • Put the mince into the mixing bowl. Add the onions, garlic, curry powder, cumin, garam masala, paprika or cayenne pepper and coriander, then mix well. By adding these spices, you'll get a delicious flavour without having to add any salt.
  • Add the beaten egg and breadcrumbs, then mix again.
  • Divide the meat mixture into 15-18 evensized pieces and shape into balls (they should be about the size of a walnut). Always wash your hands thoroughly after handling raw meat so you don't transfer any germs that may be on the meat to other food or equipment.
  • Heat the oil in the frying pan over a medium heat and add the meatballs using a spoon. Cook them for 5 mins, turning until golden brown. Remove from the pan and place them on to the tray. Bake in the oven for 15-20 mins.
  • Remove from the oven. Remember to use oven gloves! Allow to cool slightly and serve with a fresh, crisp green salad, some pitta bread and tomato salsa.

1/2 cup plain breadcrumbs
1/4 cup dried currant
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon ground cinnamon
1 1/2 lbs lean ground beef
1 large egg white
cooking spray
1/4 cup tomato paste
1 teaspoon fennel seed
1 teaspoon grated orange rind (use rasp)
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground red pepper
1 (28 ounce) can chopped tomatoes

Steps:

  • Combine the first 9 ingredients in a large bowl. Shape into 30 meatballs.
  • Heat a large non-stick skillet over medium high heat. Coat the pan with cooking spray. Add half of the meatballs to the pan, cook 3 minutes or until browned, stirring frequently.
  • Place browned meatballs in a slow cooker, and brown the remaining meatballs.
  • Combine the tomato paste and next 7 ingredients. Add to the slow cooker with the remaining meatballs. Cover and cook on LOW for 6 hours.
  • Serve over couscous if desired.

These are really good either straight from the pan or thawed and reheated. I don't think many meat lovers will miss the meat in these. I just ate them plain, but you could freeze them with sauce and reheat the whole recipe.

2 cups cooked long-grain rice (I used brown)
1/2 cup quick-cooking oats
1 onion, finely chopped (be sure to chop this very finely, or your meatballs won't hold together well!)
1/4 cup dry packaged breadcrumbs
1/4 cup milk
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground cayenne pepper (I used at least 1/2 tsp)
1 egg, beaten
1/2 cup wheat germ (I ran out of wheat germ halfway through and used quick oats. Not the same, but it worked ok!)
1 tablespoon vegetable oil

Steps:

  • In a large bowl, mix together all ingredients except wheat germ and vegetable oil. Again, make sure you REALLY chopped your onions very finely or they will make your "meat"balls fall apart.
  • Cover and chill mixture well, at least 1 hour, in fridge.
  • Shape mixture into meatballs and roll each in wheat germ/oats (my last resort, but they turned out fine!) to coat.
  • Heat oil in a (preferably) nonstick skillet over medium heat.
  • Cook the meatballs in the oil for 8-10 minutes, turning carefully, until light golden brown.
  • Drain meatballs on paper towels.
  • Flash freeze on a pan in the freezer, then put in freezer bags. To reheat, microwave for a few minutes or put on pan and reheat in oven at 350 degrees for 10-15 minutes.
  • Or, gently mix meatballs with spaghetti sauce (jarred or homemade) and place in heavy duty ziplock freezer bags and freeze. To serve this way, just thaw a bit in the fridge and then reheat and serve with pasta.

  • Heat oil over medium heat in a large heavy pot and sauté onions for 5 minutes, stirring often, until they start to soften. Add the spices: cumin, paprika, turmeric, salt, cinnamon, chili pepper and black pepper, and sauté for 2 minutes, stirring, to toast the spices. Add the chopped tomatoes, bring sauce to a simmer, and cook at the lowest possible simmer, covered, for 20 minutes.
  • While the sauce is simmering, use your hands to gently combine the ground beef (or lamb) with the grated onion, garlic, 3 tablespoons of chopped cilantro and spices: salt, black pepper, paprika, cumin and Aleppo (or chili powder); roll gently into small, ping pong ball sized balls.   • When the sauce has cooked for 20 minutes, add the meatballs, cover the pot, and cook the meatballs for 15 minutes at the lowest possible simmer. Cooking on low heat is crucial for tender meatballs. Stir in 2-3 tablespoons of remaining chopped cilantro just before serving.
