Spicy Mexican Rice image

Spicy Mexican Rice is made with your choice of brown (our favorite) or white rice and flavored with onion, garlic, bell pepper, carrot, tomatoes, and spices. We cook the rice in broth for extra flavor then stir in some corn, cilantro, and lime juice at the end. It's an incredibly zesty and delicious side dish that's perfect for all your Mexican meals.

1 tablespoon cooking oil
1 small onion (minced)
1 medium red pepper (minced)
1 medium carrot (minced)
4 cloves garlic (minced)
1 teaspoon ground cumin
3 ½ cups chicken stock or vegetable stock (see notes)
2 cups brown rice (see notes)
1 teaspoon sea salt
2 large tomatoes (diced)
1 medium jalapeño pepper (minced (see notes))
1 cup frozen corn
½ cup cilantro (minced)
2 tablespoon lime juice (fresh is best)

Steps:

  • Heat the oil in a medium-sized pot over medium-high heat. Add the onion, pepper, and carrot and cook until the onion is golden, about 5 minutes. Stir in the garlic and cumin and let them cook for 1 minute.
  • Add the stock, rice, salt, tomatoes, and jalapeño pepper and bring the pot to a boil. Reduce the heat to medium-low, cover the pot, and simmer for 40 minutes, or until the rice is tender.
  • Remove the pot from the heat and stir in the corn, cilantro, and lime juice.

Steps:

  • Saute 1 chopped onion in 2 tablespoons vegetable oil in a saucepan over medium heat. Stir in 1 cup white rice and cook until toasted, 3 minutes. Add 1 2/3 cups water, 1 chopped plum tomato, 2 teaspoons tomato paste and 1/2 teaspoon each kosher salt and cumin; bring to a boil. Add 1 whole jalapeno. Cover; simmer 20 minutes. Remove from the heat and let sit 5 minutes. Discard the jalapeno. Top with cilantro.

1 tbsp sunflower oil
1 red onion , finely chopped
1 red chilli , finely chopped
2 garlic cloves , crushed
1 tsp ground cumin
1 tsp coriander
1 tsp smoked paprika
1 small pack coriander , stalks and leaves chopped separately
1 tsp chipotle paste
400g can chopped tomatoes
250g wholegrain rice

Steps:

  • Heat the oil in a large saucepan and add the onion. Fry for 5 mins over a medium heat or until starting to soften, then add the chilli, fry for another 2 mins, then add the garlic, spices, coriander stalks and chipotle paste. Stir well and sizzle for a min or so.
  • Tip in the tomatoes. Fill the can with water, pour that in, refill the can halfway with water, then add that too. Add the rice. Mix well, bring to the boil, then reduce to a simmer for 25-30 mins, covered with a lid, until the rice is tender and the liquid has all been absorbed. Stir through the coriander leaves. Try using the rice in our Brazil nut burritos.

Enjoy this easy Mexican rice as a side dish to accompany beef burritos or chilli. You can choose to make it veggie if you like by using vegetable stock

1 tbsp sunflower oil
1 onion, finely chopped
2 garlic cloves, minced
250g long grain rice
1 tsp chipotle paste, optional (more if you want it spicier)
1 tbsp tomato purée
1 x 400g tin chopped tomatoes
750ml hot chicken or vegetable stock
small bunch of coriander, finely chopped

Steps:

  • Heat the oil in a saucepan and sizzle the onion for 5 mins until just starting to soften. Add the garlic and cook for a minute more, then stir in the chipotle paste (if using) and the tomato purée and cook for a minute.
  • Add the tomatoes and simmer for a few minutes, then scatter the rice into the pan and stir, so it's coated in the tomato mix. Pour over the hot stock, season, give everything another stir and bring to the boil, then cover the pan with a lid and turn the heat down to the lowest possible setting.
  • Gently simmer for 15-20 mins until all the stock has been absorbed and the rice is cooked through. Leave the rice to sit for a few mins off the heat, then stir through the coriander and serve.

This is one of my favorite recipes. Whenever I cook anything Mexican, I prepare this as a side dish. I have been known to eat it right out of the pan, before it is even finished cooking.

1 small red onion, sliced
1 small red onion, chopped
1 garlic clove, minced
1/2 teaspoon salt
2 -3 tablespoons bacon grease
2 (14 ounce) cans Rotel diced tomatoes (Mexican)
2 cups chicken broth
1 1/2 teaspoons chili powder
1/2 teaspoon cumin
3 cups instant rice

Steps:

  • Slice one of the onions in very thin slices. Finely chop the other onion.
  • Mash the garlic with the salt to make a paste.
  • Heat the bacon drippings in a medium sauce pan. Add chopped onions and garlic paste. Cook and stir until onions are translucent.
  • Puree the two cans of Rotel Mexican Diced Tomatoes with Lime Juice and Cilantro.
  • Add pureed Rotel, chicken broth, chili powder and cumin. Bring mixture to a boil. Stir in instant rice and sliced onions.
  • Cover and let stand over very low heat 15 to 20 minutes, or until liquid is absorbed.

Quick and simple way to add some extra flavor to plain old white rice. This was something I threw together to go with some fajitas I had made. I usually make this rice in my rice cooker, but it works on the stove top as well. I've used regular long grain rice, or parboiled, both work fine.

2 cups white rice
1 tablespoon cumin
1 teaspoon coriander
1 teaspoon oregano
2 -3 tablespoons dried onion flakes
1/2 teaspoon cayenne pepper, to taste
1 tablespoon spicy cajun seasoning (mine is not this brand, but I'm sure something with ingredients like Emeril's Essence will work just) (optional)
1/4 cup of chopped cilantro
4 -6 ounces chevre cheese (soft goat cheese)

Steps:

  • Mix dry rice, spices and dried onions.
  • Cook rice according to package directions, either on stove top or in rice cooker.
  • Fluff rice with fork.
  • Add cheese to warm rice and let melt a bit.
  • Add cilantro and combine well.

1 tablespoon salt

2 tablespoons butter
2-1/2 cups water

Steps:

  • In a bowl, combine the bouillon, salt, garlic powder and cumin. Store in an airtight container in a cool, dry place for up to 1 year. Yield: about 5 tablespoons., To prepare rice: In a saucepan, saute rice, onion and green pepper in butter until rice is lightly browned. Stir in water and 5 teaspoons seasoning mix. Bring to a boil. ⅓ cup diced jalapeno pepper

  • Stir chicken stock and tomato sauce into rice mixture. Bring to a simmer, cover the pot, reduce heat to low, and simmer for 20 minutes. Turn heat off and leave pot covered on the burner for 8 minutes. Remove cover and fluff rice with a fork.
