Margarita Day is finally here, and I for one am pretty excited. I know we all fill our margarita void with the weekly Margarita Monday, but today both National Margarita Day and Margarita Monday collide like an interstellar alignment of the planets, creating a margarita celebration on steroids. You'd be silly not to have a drink. I've crafted a margarita with a little firepower, so it's like a fireworks celebration in your mouth - no I didn't add gunpowder or light anything - but you will find the Serrano peppers do a sublime job of emulating a similar effect. I began my process with the most important ingredient - tequila - and found a great bottle of Reposado Tequila, which provided a little more balance to the cocktail than I believe a blanco would in this instance. With my margaritas I like to replace the traditional orange liqueur with some fresh orange juice. This substitution has a double effect on the end product: it leaves more room for more tequila and it also helps balance the acidity of the lime juice. Speaking of which, I find there is no substitute for fresh squeezed juice in a good margarita, so I went out to the market searching for limes and oranges. While there, I came across some delicious looking mandarins, which led to an epiphany: substitute the oranges for mandarins. The end result is a beautifully balanced, boozy and absolutely delicious Spicy Mandarin Margarita with an emphasis on spicy. I'm a huge fan of spice, but if you're not the spice level is easily modified by adding as little less. Happy National Margarita Day!

2 ounces of reposado tequila
1 ounce of lime juice
1 ounce of mandarin juice
1 ounce of brown sugar syrup - Mix equal parts brown sugar and boiling water to make the syrup.
1 Serrano pepper, chopped
1 cup of ice
Tajin seasoning to rim the glass
Garnish: Serrano pepper

Steps:

  • Fill cocktail shaker with tequila, lime juice, mandarin juice, brown sugar syrup, chopped Serrano pepper, and ice.
  • Shake mixture for at least 30 seconds to combine ingredients and chill the drink.
  • Rim a margarita glass with Tajin seasoning, pour in the cocktail and serve.

6 large limes
Kosher salt
1 1/2 cups (12 ounces) silver tequila
3/4 cup (6 ounces) Cointreau
2 serrano chile peppers, very thinly sliced (seeds and ribs included)
3/4 teaspoon red pepper flakes

Steps:

  • Prepare the glasses: Remove a strip of zest from one of the limes using a vegetable peeler. Juice the limes; you'll need 6 tablespoons (3 ounces) juice. Spread 3 tablespoons salt on a small plate. Rub the lime peel and a little of the juice around the rims of 6 glasses and then dip the rims in the salt. Fill the glasses with ice.
  • Make the margaritas: In a pitcher, stir together the tequila, Cointreau, chile slices, red pepper flakes and lime juice. Pour into the glasses.

1 tablespoon Spicy Salt, recipe follows
3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1/4 cup kosher salt
Finely grated zest of one lime
1/4 teaspoon ancho chile powder
1/4 teaspoon chipotle chile powder
Combine the salt, lime zest, ancho chile powder and chipotle chile powder in a small bowl.

Combine the sugar and 1 cup water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Let cool. Store in a sealed container in the refrigerator for up to 1 month.

  • Put the Spicy Salt on a plate. Dip the rim of a chilled margarita glass into the mixture to coat the edge. Fill a cocktail shaker with ice. Add the tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Strain the margarita into the prepared glass.

150ml tequila
75ml triple sec
25ml chilli syrup (see below)
25ml mango juice
25ml lime juice
handful of ice
1 red chilli, sliced
50g golden caster sugar
small handful coriander, leaves picked and finely chopped
½ lime, zested
2 tsp sea salt flakes
2 tsp golden caster sugar
½ tsp chipotle chilli flakes

Steps:

  • First, make the chilli syrup. Put the sliced chilli and sugar in a saucepan with 50ml water. Bring to a simmer over a low- medium heat, stirring until the sugar has dissolved. Turn off the heat and leave to cool completely.
  • For the salt rim garnish, mix all the ingredients together and tip onto a shallow plate. Brush the rims of four tumblers with a little water, then dip the rims in the chilli-salt mixture. Set aside while you make the margarita.
  • Tip all the cocktail ingredients into a large cocktail shaker or blender and shake vigorously until the outside of the shaker feels cold, or pulse two or three times to combine. You want to chill, aerate and dilute the drink, but not completely crush the ice.
  • Fill a large jug and the prepared tumblers with ice cubes, then strain the cocktail into the jug and stir well before pouring into the tumblers.

Chile-Lime Rub, recipe follows, for the rim
2 ounces tequila, preferably blanco
1 1/2 ounces fresh lime juice
1 ounce poblano liqueur, preferably Rancho Reyes Verde
1 ounce triple sec
1 tablespoon chile powder
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon ground coriander
1/4 teaspoon sugar
Zest of 1 lime

Steps:

  • Run the edge of a rock glass with lime, then dip in a shallow dish of Chile-Lime Rub. Fill the glass with ice.
  • To a cocktail shaker with ice, add the tequila, lime juice, poblano liqueur and triple sec. Shake well. Pour into the glass and garnish with a lime wedge.
  • Mix together the chile powder, salt, cumin, cayenne, coriander, sugar and lime zest in a shallow dish.
