CARROT CURRY

Delicious and easy Indian style carrot curry made with pantry staples. Serve it with rice or roti.

Number Of Ingredients 20

2 cups carrots ((chopped) (2 medium, about 325 grams))
¾ cup green peas ((or ¼ cup soaked moong dal))
2 tablespoons oil
½ teaspoon cumin seeds
½ teaspoon mustard seeds
1 sprig curry leaves ((optional))
¾ teaspoon ginger ((chopped finely))
¾ teaspoon garlic ((chopped finely, 2 medium cloves))
1 green chilies (chopped or slit (optional) )
¾ teaspoon salt ((adjust to taste))
1 large onion ((1¼ cup fine chopped))
3 medium tomatoes ((¾ cup fine chopped or pureed))
⅛ teaspoon turmeric
1¼ teaspoon Kashmiri red chilli powder ((adjust to taste))
1 teaspoon garam masala ((or curry powder as needed))
1¼ teaspoon coriander powder
½ teaspoon cumin powder ((optional))
1 teaspoon Kasuri methi ((dried fenugreek leaves))
¾ to 1 cup water ((I used 1 cup))
¾ cup coconut milk ((read notes))

Steps:

  • Heat oil in a pot. Add mustard seeds and cumin seeds.
  • When they splutter add curry leaves and onions. Saute them until the onions turn golden in color and lose the raw flavor.
  • Add ginger, garlic and green chilies. Saute for a minute until aromatic.
  • Next stir in the tomatoes and cook until they breakdown and soften.
  • Then stir in the spice powders - red chili powder, turmeric, garam masala, coriander powder and salt. Saute for 2 to 3 mins until it turns aromatic.
  • Add carrots and peas. Saute for 2 mins.
  • Pour water just enough to partially cover the carrots. I used 1 cup water. Mix and cook covered on a lot heat until carrots turn tender.
  • Then add kasuri methi (optional) and coconut milk. Mix and cook covered on a low heat for 2 mins.
  • Taste test and add more salt if needed. Serve carrot curry with rice or roti.

INDIAN SPICED SESAME CARROTS



Indian Spiced Sesame Carrots image

Ingredients

1 tsp sea salt
½ tsp ground black pepper
½ tsp cumin
½ tsp garlic powder
½ tsp ground coriander
½ tsp ground cinnamon
½ tsp ground turmeric
¼ tsp powdered onion
¼ tsp ground ginger
cloves pinch ground
1 lb fresh organic carrots washed and peeled
Chosen Foods Avocado Oil
Oi! Toasted Sesame Oil

Steps:

  • Preheat the oven to 425°F. In a small bowl, combine all the spices and whisk together well.
  • Line a sheet pan with parchment or aluminum foil. Place the carrots in the pan and toss with Pure Avocado Oil to coat. Pour the spices over and toss the carrots well until fully coated with both oil and spices. Arrange the carrots in rows and avoid letting them touch (this will promote browning).
  • Cook for 30-45 minutes, tossing midway through, or until slightly golden. Drizzle with Roasted Sesame Oil while warm and serve immediately.

  • put in butter with oil in pan.
  • get hot.
  • add spices.
  • add carrots saute for 15 minutes( i needed to add a little water here ).
  • until soft.
  • add coconut serve.

SPICY INDIAN POTATOES

I got this recipe from manjulaskitchen.com. It was so delicious we just ate it without any bread or accompaniment. I didn't even have time to take a picture because it was all gone! Maybe next time. The actual recipe states to boil the potatoes first, but I just added them to the pan and let them cook in the pan with the other ingredients. I don't know if the version below is exactly the same as from the website, but it's how I made it.

2 -3 potatoes, small cubes
1/2 teaspoon cumin seed
1/4 teaspoon caraway seeds (kalonji) or 1/4 teaspoon onion seeds (kalonji)
1/4 teaspoon mustard seeds
1 pinch asafoetida powder
2 tablespoons olive oil
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1 chopped green chili pepper (I used Serrano pepper)
2 tablespoons chopped cilantro
1 tablespoon lemon juice

Steps:

  • 1) Peel and cut potatoes into small cubes.
  • 2) Heat oil in pan.
  • 3) Add cumin seeds, onion seeds, mustard seeds and asafoetida powder to pan and shake around until seeds start to crackle.
  • 4) Add potatoes, turmeric powder, salt and green chilis. Mix well.
  • 5) Lower heat to simmer and cover pan for about 18-20 minutes or until the potatoes are fork tender. You may want to add a splash of water at this step if it's too dry for the potatoes to get cooked well.
  • 6) Increase heat to high and stir. I let the potatoes brown a bit but you can skip this step.
  • 7) Remove from heat and stir in chopped cilantro and lemon juice.

1 1/2 lbs carrots, sliced diagonally (apprx 3 cups)
1/2 tablespoon olive oil
1/2 tablespoon butter or 1/2 tablespoon margarine
2 cloves garlic, crushed (or less)
1 teaspoon curry powder
1 teaspoon chili powder
salt & pepper
1 tablespoon honey
2 tablespoons cider vinegar
1/4 cup raisins (optional)

Steps:

  • Heat the oil& butter in a large skillet, over medium heat,add carrots& garlic Sprinkle in the dry spices and saute, stirring almost constantly until the carrots are as tender as you like them (7-9 minutes).
  • Meanwhile stir together the honey& vinegar.
  • Pour over the carrots, add raisins and saute, swishing the carrots around Serve immediately for 1 additional minute.

2 teaspoons olive oil
2 cloves garlic, minced
1 1/2 teaspoons chili powder
1/2 teaspoon ground cumin
2 pounds carrots, sliced diagonally 1/2 inch thick
1 teaspoon freshly grated lemon zest
2/3 cup water
Coarse salt
2 tablespoons fresh lemon juice

Steps:

  • In a large nonstick skillet, heat olive oil over low heat. Add garlic cloves, and cook until tender, about 2 minutes. Stir in chili powder and ground cumin; cook 1 minute.
  • Add carrots, lemon zest, water, and coarse salt; bring to a boil. Reduce to a simmer; cover, and cook until carrots are tender, 15 to 20 minutes.
  • Uncover, raise heat to high, and cook until any remaining liquid has evaporated, 2 to 3 minutes. Stir in lemon juice, and serve.

1 1/2 lbs ground lamb or 1 1/2 lbs beef
2 teaspoons minced ginger
3 cloves garlic, minced
4 cayenne bell peppers (I just used Thai bird's eye chilies)
1 small onion, minced
1 egg
1/2 teaspoon turmeric
2 teaspoons garam masala
2 tablespoons freshly chopped cilantro
6 mint leaves, chopped (or 1 teaspoon dried)
1 medium potato, finely grated
salt and pepper

Steps:

  • Put the ground meat in a larger bowl, and add ginger, garlic, cayenne peppers, onion, egg, tumeric, garam masala, cilantro, mint, potato, and salt and pepper to taste.
  • Mix well (you'll have to use your hands for this one).
  • Form golf ball sized balls with the meat mixture, and set aside.
  • Allow to rest 30 minutes.
  • Heat oven to 375º.
  • Place the kofta on a non-stick cookie sheet and bake 25 minutes or until cooked through, and slightly browned.
  • Serve hot, with nan bread, cucumber-yogurt sauce and a fresh tomato and mint salad.
