Spicy Baked Denver Omelet is an easy quiche version of the classic with red and green peppers, ham and plenty of cheese! Diced jalapeno replaces some of the green pepper for a kicked up modern twist and you don't need any fancy omelet-making skills!

Cooking spray
2 tablespoons butter
1/2 medium onion (chopped (approximately 1/2 cup))
1/2 large red bell pepper (chopped (approximately 2/3 cup))
1/2 medium green bell pepper (chopped (approximately 1/3 cup))
1 large jalapeno pepper (seeded if desired, chopped)
1/2 teaspoon salt
Freshly ground black pepper (to taste)
8 ounces diced cooked ham (approximately 1 cup)
3/4 cup shredded Monterey Jack cheese
3/4 cup shredded Cheddar cheese (sharp, medium or mild)
6 large eggs (beaten)
1/2 cup milk (or half-and-half)

Steps:

  • Preheat oven to 350 degrees. Spray a 10-inch round baking dish with cooking spray. Set aside.
  • Heat butter over medium heat in a skillet or saute pan. Add the onion, red and green bell pepper and cook 3-4 minutes just to soften.
  • Add the jalapeno and cook for 30 seconds.
  • Season vegetables with salt and black pepper. Transfer to the prepared baking dish and let cool slightly.
  • Add the diced ham and cheeses and stir to distribute evenly.
  • Whisk eggs and milk (or half-and-half) together. Pour over the vegetable-ham-cheese combination.
  • Bake for 30-40 minutes or until set and lightly browned on top.
  • Cut into 6 to 8 wedges and serve.

1/2 bag (16-oz size) frozen chopped collard greens, thawed, drained
1 medium onion, chopped (1/2 cup)
1 1/2 cups shredded pepper Jack cheese (6 oz)
1 cup milk
2 eggs
1/2 cup Original Bisquick™ mix
1/4 teaspoon salt

Steps:

  • Heat oven to 400°F. Lightly spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, heat oil over medium-high heat. Cook ham in oil 5 minutes, stirring occasionally, until browned. Stir in greens and onion. Cook 5 minutes longer until onion is tender and liquid is evaporated. Spoon half of the mixture into pie plate. Sprinkle with 3/4 cup of the cheese. Repeat layers.
  • In medium bowl, stir milk, eggs, Bisquick mix and salt with fork or whisk until smooth. Pour over greens and cheese.
  • Bake 25 to 35 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.

Vegetable oil, for poaching and sauteing
1/2 cup diced country ham
3 new potatoes, sliced 1/4-inch thick (about 1 1/2 cups)
1 homemade or store-bought refrigerated 9-inch pie crust
2 to 3 cups dried beans, to use as pie weights
4 large eggs, slightly beaten
3/4 cup half-and-half
Pinch kosher salt
1 teaspoon black pepper
1 cup grated aged gouda
1 green onion, chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the ham and saute until just starting to brown.
  • Place the potatoes in a small saucepan and cover with vegetable oil. Cook over low heat until the oil just starts to bubble and the potatoes are tender, about 15 minutes. Remove the potatoes and place on a paper towel-lined plate.
  • Meanwhile, line a 9-inch pie pan with the prepared pie crust and pierce with a fork. Cover with parchment and fill with the dried beans. Blind bake the crust for 10 minutes. Let cool, then carefully remove and discard the paper and beans.
  • In a medium bowl, beat together the eggs, half-and-half, salt and pepper. Layer the empty pie shell with the potatoes, ham, and 1/2 cup of the cheese. Pour the egg mixture over the filling. Sprinkle the remaining 1/2 cup cheese and the green onions over the top. Bake on the bottom rack of the oven until the center just sets and the top is golden, 35 to 40 minutes. Let cool 10 minutes before slicing.

1 9-inch pie crust, thawed if frozen

1/4 cup finely chopped fresh chives
Kosher salt and freshly ground pepper
1 tablespoon red wine vinegar
2 teaspoons dijon mustard
3 tablespoons extra-virgin olive oil
1 5-ounce package mesclun greens (about 8 cups)
4 white mushrooms, very thinly sliced

Steps:

  • Set a baking sheet on the middle oven rack; preheat to 425 degrees F. Scatter the ham and cheese in the pie crust. Whisk the eggs, half-and-half, chives, 1/2 teaspoon salt and a few grinds of pepper in a large bowl; pour into the crust. Transfer to the hot baking sheet and bake until the eggs are set and the top is lightly browned, about 30 minutes.
  • Meanwhile, whisk the vinegar and mustard in a large bowl. Gradually whisk in the olive oil until smooth. Add the greens and mushrooms; toss well to coat. Season with salt and pepper. Cut the quiche into wedges and serve with the salad.

1 egg yolk
1 cup heavy whipping cream
3/4 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground nutmeg

  • Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in. thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. 1 cup cooked ham (cut in strips)
1/3 cup red bell pepper (cut in strips)
1/3 cup green onion (chopped)
1 cup swiss cheese (shredded)
2 tablespoons all-purpose flour
2 1/3 cups half-and-half
3 eggs (slightly beaten)
1 (9 inch) pie crusts

Steps:

  • Mix ham, bell pepper, green onion, cheese and flour; toss all ingredients lightly.
  • Mix half-and-half gently into eggs.
