GRILLED CORN AND TUNA PIZZA

Grilled Corn and Tuna Pizza image

Grilled Corn and Tuna Pizza is a spicy blend of garlic, grilled sweet corn, tuna, herbs and cheese making this a sweet and savory pizza.

Provided by Belly Laugh Living

Categories     Main Dish

Time 45m

Number Of Ingredients 10

1 Pizza dough (Use your favorite pizza dough)
3 Tablespoons Olive Oil
2 Cups Corn (Frozen or About 4 ears of corn)
1/2 Tablespoon Crushed Red Pepper (Optional only if you want it spicy!)
1 1/2 Tablespoons Roasted Garlic Cloves (Or 3 Cloves Garlic)
1 Teaspoon Sea Salt
12 Ounces Solid White Tuna Fish ((Canned in Water))
2 Ounces Mozzarella cheese
2 Ounces Sharp White Cheddar Cheese
1/2 Ounce Sprinkle Parmesan Cheese

Steps:

  • Heat 1 Tablespoon Olive Oil in Saute Pan add Corn
  • Add the Crushed Red Pepper. This step is optional, only add peppers to make it spicy.
  • Saute Corn for about 5 minutes.
  • If grilling pizza, place the Pizza Stone on the grill to preheat the stone. If baking in the oven, heat the oven according to the dough package directions (if using an oven pizza stone, preheat stone according to pizza stone directions)
  • Mix together roasted garlic (or crushed garlic) and 2 Tablespoons olive oil
  • Drain the Tuna (We use White Tuna in Water)
  • Build the Pizza: Stretch out pizza dough to the size of pizza stone (or if baking, stretch the dough to the size of your pan). We use parchment paper under the dough while building the pizza. This makes it easier to transport the pizza and prevent it from sticking to the stone. Spread the olive oil roasted garlic mixture over the pizza dough
  • Add the mozzarella and cheddar cheese to the pizza crust
  • Add the Tuna to the pizza
  • Add the Corn to the pizza
  • Sprinkle on the Parmesan Cheese
  • Grill until cheese is melted and the crust is cooked to desired crispness about 10 to 15 minutes. If cooking in the oven, bake until crust is done and cheese is melted according to dough package instructions.
  • Enjoy!!!!

GRILLED CORN WITH SPICY CHIPOTLE SAUCE

Grilled Corn with Spicy Chipotle Sauce image

Grilled sweet corn topped with a tangy, smoky, slightly sweet sauce and fresh cilantro is an easy, flavorful way to mix up your sweet corn and butter routine. Plus the Spicy Chipolte Sauce goes on pretty much anything: eggs, chicken, and any kind of veggies!

Provided by Emily Koch

Categories     Sides

Yield 6

Number Of Ingredients 15

CORN:
6 ears of the finest sweet corn you can get your hands on
FOR THE SAUCE:
1/2 cup non fat, plain Greek Yogurt
Juice of 1 lime
1 ancho chili in adobo sauce
1 teaspoon of the adobo sauce from the can (optional, for more spice)
1 teaspoon smoked paprika
1 teaspoon cumin
1 garlic clove
Salt to taste
2 tablespoons honey
TOPPINGS:
Cilantro leaves, chopped
Lime wedges

Steps:

  • PREP THE CORN:
  • Prepare the corn by peeling the husks back halfway - do not remove them completely - remove the silks. Place the husks back onto the ear of corn.
  • Soak the corn in cold water for 10 to 15 minutes. I found a 9×13 baking dish worked well. I rotated the corn that wasn't submerged halfway through. This step seems weird, but it helps to prevent the husks from burning too much and helps to kind of steam the corn. I have tried grilling corn without the soak method and have had better results with soaking the corn.
  • FOR THE SAUCE:
  • While the corn is soaking prepare the sauce and the toppings.
  • Add all sauce ingredients into a blender. Blend until smooth and well combined. Taste and adjust seasoning as needed: add a little more honey for more sweetness, or a little adobo sauce for more spice. Set aside.
  • FOR THE TOPPINGS:
  • Prepare the toppings and set aside.
  • COOK THE CORN:
  • Preheat your grill to a low heat.
  • Remove the corn from the water and allow any excess to drip off the corn.
  • Place the corn on the grill, husks still covering the corn, and shut the lid.
  • Cook 10 to 15 minutes, rotating halfway through.
  • You will know the corn is done when the kernels are puffed out, tender to the touch, yet still crisp.
  • Optional Step: If you want to get those nice char marks then peel back the husks a little and place the bare corn on the grill over a high flame for 3 to 5 minutes, until a nice char occurs. Be careful not to overcook the corn at this point.
  • SERVE:
  • Peel back the husks (or remove completely if eating the corn indoors because it makes a mess). Serve with the sauce for drizzling and the cilantro and lime wedges for topping.
  • Best eaten when fresh.
  • The sauce will keep in an airtight container in the fridge for up to 1 week.
