1-1/2 cups uncooked cavatappi pasta or elbow macaroni
3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 cups heavy whipping cream
1/2 cup 2% milk
1 teaspoon Cajun seasoning
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded pepper jack cheese
2 cups shredded cooked chicken
6 bacon strips, cooked and crumbled
1 jalapeno pepper, seeded and chopped
1 cup crushed kettle-cooked potato chips or panko bread crumbs

Steps:

  • Cook pasta according to package directions for al dente; drain. Preheat broiler. , In a 10-inch cast-iron or other ovenproof skillet, heat butter over medium heat. Stir in flour until blended; cook and stir until lightly browned, 1-2 minutes (do not burn). Gradually whisk in cream, milk, Cajun seasoning, salt and pepper. Bring to a boil, stirring constantly. Reduce heat; cook and stir until thickened, about 5 minutes. Stir in cheese until melted. Add pasta, chicken, bacon and jalapeno; cook and stir until heated through. Sprinkle chips over top., Broil 3-4 inches from heat until chips are browned, about 30 seconds.

2 ¼ cups chicken, chopped
salt, to taste
pepper, to taste
1 onion, chopped
1 tablespoon plain flour
1 ¼ cups milk
¼ cup butter chicken sauce
2 ¼ cups mozzarella cheese
2 ½ cups cheddar cheese
1 cup elbow pasta, cooked
1 cup mozzarella cheese, grafted
fresh coriander, to garnish

Steps:

  • Preheat the oven to 350°F (180°C).
  • Melt the butter in a large skillet over medium high heat until melted.
  • Add the chicken, salt, and pepper. Fry for about 5-8 minutes or until cooked through. Take out and set aside.
  • Add the onion and fry for 2 minutes.
  • Stir in the flour.
  • Gradually whisk in the milk.
  • Whisk in the butter chicken sauce.
  • Whisk in the mozzarella and cheddar cheese.
  • Once the cheese has melted into the mixture, stir in the chicken and elbow pasta.
  • Sprinkle on some more cheese on top.
  • Bake in the oven for 15 minutes, until the cheese is brown and bubbling on top.
  • Garnish with coriander.

1 (10 ounce) can tomatoes and green chilies, a can of diced tomatoes can be sub'd if you do not want spicy
1 lb boneless skinless chicken breast, cut into bite-size pieces
1 (12 ounce) package macaroni shells and cheese
1/2 cup sour cream
1/2 cup cheddar cheese, shredded

Steps:

  • Spray large skillet with cooking spray and saute chicken on medium-high heat for about 5 minute or until cooked through.
  • Drain liquid from tomatoes into a 2 cup liquid measuring cup and add enough hot water to measure 1-3/4 cups.
  • Add macaroni, tomatoes and the tomato liquid mixture to the pan and mix well.
  • Bring to boil and reduce heat to medium-low. Cover and simmer 9 to 10 minute or until macaroni is tender.
  • Remove from heat and stir in cheese sauce from mac and cheese package and sour cream until well blended.
  • Sprinkle with shredded cheese on top and cover.
  • Let stand 1 to 2 minute or until cheese is melted.

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.

  • In large pot boil water, add pinch of salt and a few drops canola oil.
  • cook shells in boiling water for 5-6 minutes.
  • drain, rinse and set aside.
  • melt butter and sautee onion and garlic, remove 4 tablespoons butter.
  • add white flour and reduce heat.
  • add half and half.
  • add shredded cheddar.
  • when melted, stir in pasta and chicken.

  • crush salad croutons to powder in ziploc bag or between two bowls.

1/2 cup cream
2 ounces sharp cheddar cheese, cut into small cubes
2 ounces mild cheddar cheese, cut into small cubes

2 ounces Velveeta cheese, cut into small cubes
1 (10 ounce) can Rotel Tomatoes, well drained
salt and pepper
1/4 teaspoon chili powder

1 cup shredded yellow cheddar cheese
1 cup shredded low moisture mozzarella cheese

Steps:

  • Make the mac 'n' cheese: Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and transfer to a large bowl.
  • Return the pot to medium heat. Add the butter, flour, ½ teaspoon salt, and pepper and cook, whisking, for 2 minutes, or until the butter is melted and the mixture is evenly combined. While whisking constantly, slowly pour in the milk and cook until the sauce starts to thicken, 3-4 minutes. Remove the pot from the heat, add the Frank's RedHot® and cheddar cheese, and stir until the cheese is melted.
  • Pour the sauce into the bowl with the macaroni and stir until the pasta is well-coated. Let cool for about 20 minutes.
  • Assemble the fried mac 'n' cheese: Line a baking sheet with parchment paper. Once the mac 'n' cheese has cooled, add the mozzarella cheese and stir to combine.

The addition of chipotles in adobo (the latest craze as far as ingredients go) lends a subtle heat and contrast to one of our most popular comfort foods. This recipe is adapted from the Purple Palm Restaurant in Palm Springs, CA.

1 lb macaroni
1 tablespoon butter
1 tablespoon flour
1 cup milk
1 cup heavy cream
2 tablespoons chipotle chiles in adobo, pureed (pureed using a food processor or blender)
1 lb cheddar cheese, grated (about 5 cups)
salt & freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Bring a large pot of salted water to a boil; cook macaroni according to package directions; drain.
  • Meanwhile, in a large saucepan, melt butter over medium heat; stir in flour and cook, while stirring to form a smooth paste.
  • Whisk in milk and cream, and once smooth, whisk in chipotle puree.
  • Next, stir in all but 1/2 cup of the cheese, a little at a time, until melted.
  • Season with 1 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  • Remove from heat and stir in cooked macaroni.
  • Transfer macaroni and cheese to a casserole or 8 inch square baking dish; sprinkle reserved cheese over top.
  • Place macaroni and cheese in the oven and cook until the top is golden brown and the cheese is melted and bubbly, about 20 minutes.
  • Cool slightly before serving.

My grandaughter (with help from her Daddy) gave me a wonderful cookbook for Christmas called "The Whole Foods Market Cookbook". This is the recipe that my DS recommend to try 1st. It was full of fat so I have made it lower in fat. The original recipe said it served 6 in a 9X9 inch pan. There is so much of this stuff I can't imagine it fitting in that size of pan. I used a 9X13 inch pan and it was full.This is my version of this tasty dish. Still high in calories but lower in fat. Made WW friendly-7 points

3 tablespoons light margarine
1 1/2 cups onions, chopped
3 garlic cloves, minced (1 1/2 tsp)
1 1/2 teaspoons cumin
1 1/2 teaspoons coriander
1/4 cup unbleached all-purpose flour
2 cups low-fat milk
1 large jalapeno pepper, seeded and chopped
1/4 teaspoon cayenne pepper
1 1/2 teaspoons salt
2 cups diced tomatoes, canned, undrained
1/2 cup part-skim mozzarella cheese, grated
1/2 cup low-fat cheddar cheese, grated
1/2 cup low-fat swiss cheese, grated
2 cups cooked chicken breasts, chopped
1 lb penne pasta, cooked and drained
1/2 cup parmesan cheese, grated
1/2 cup dried breadcrumbs

Steps:

  • Preheat the oven to 350 degrees.
  • Melt the butter in a large saute' pan, and add the onion, garlic, cumin, and coriander.
  • Cook for 2 to 3 minutes, stirring often, or until the onion is soft.
  • Mix in the flour, and cook the mixture over moderate heat for 1 minute, stirring constantly.
  • Using a wire whisk, slowly incorporate the milk into the onion mixture until the flour and milk are blended.
  • Bring this to a boil, lower, the heat to a simmer, and stir in the jalapeno pepper, cayenne pepper, salt, and tomatoes with their juice.
  • Simmer for 15 minutes.
  • Remove the pan from the heat, and stir in the mozzarella cheese, cheddar cheese, and Swiss cheese, blending until well mixed.
  • Combine the sauce, cooked pasta and the chicken in a large mixing bowl.
  • Place the sauced pasta in a 9X13-inch baking dish, sprayed with cooking spray.
  • In a small bowl, mix the Parmesan cheese with the bread crumbs.
  • Sprinkle the Parmesan topping over the pasta.
  • Bake for 30 to 35 minutes, until the crumb topping is golden brown.
