1 (21 ounce) can simply potatoes jalapeno and cream cheese mashed potatoes
2 eggs
2 tablespoons butter
2 cups panko breadcrumbs

Steps:

  • Freeze can (package) 10 minutes, cut into 12-2" squares. Whip eggs in small stainless steel bowl. Heat butter on low heat in 12" cast iron skillet. Spread breadcrumbs on flat surface.
  • Dip crunchies in egg, coat with breadcrumbs all around, brown on all sides 2-3 minutes. Transfer into 13"x9" baking pan. Turn oven to 375.
  • Bake additional 7 minutes. Serve 3 per person.

2 cups Simply Potatoes Traditional Mashed Potatoes
1 cup flour
2 egg yolks
24 ounces spicy marinara sauce
4 tablespoons grated parmesan cheese

Steps:

  • Add 2 cups of mashed potatoes to a pre heated oven for 15 minutes.
  • Remove the potatoes and press them through a ricer. Place potatoes on a large cutting board.
  • On top of the potatoes, add the eggs, and flour and start to combine ingredients until you are able to form a ball. Add more flour so your hands will not stick.
  • Cut the dough into 4 pieces, and roll each of them into 1 inch logs. Cut the logs down to 1/2 inch pieces.
  • Roll each piece on the tip of a fork to create ridges in the dough. This makes it easier for the sauce to stick to the dough.
  • Add each piece to a medium sized sauce pan of boiling water. They will float to the top when they are done. Approximately 7 minutes.
  • In another medium sized sauce pan pour in the marinara and let it simmer on low heat. When the potato gnocchi has floated to the top, drain the excess water with a strainer and add to the marinara. Gently stir before serving. Top with grated parmesan cheese.

20 ounces Simply Potatoes Diced Potatoes with Onion
2 (12 1/2 ounce) cans chunk white chicken meat, drained
10 ounces green enchilada sauce
3 cups shredded sharp cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Grease an 8x8 baking dish with non-stick cooking spray.
  • Place chilies, potatoes, chicken, half of the enchilada sauce, 2 1/2 cups shredded cheese, and salt and pepper to taste in a medium bowl. Stir to combine. Pour potato mixture into baking dish, spreading to fill pan evenly. Drizzle with remaining sauce, and sprinkle with the rest of the shredded cheddar.
  • Place in preheated oven and bake 70-75 minutes until cheese is golden and bubbly. Remove from heat and let sit 5 minutes before serving.

6 medium potatoes, peeled and cut into bite size chunks
1 medium onion, diced
1/4 cup unsalted butter, melted
1 teaspoon seasoning salt
1 garlic clove, minced
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
10 -12 slices American cheese
breadcrumbs

Steps:

  • Preheat oven to 350 degrees.
  • Mix together; melted butter, seasoned salt, minced garlic, cayenne pepper and black pepper. Set aside.
  • Prepare potatoes and onions.
  • Mix potatoes and onions together in large bowl and add butter mixture.
  • Stir to coat well.
  • Spray a square casserole dish with non stick cooking spray.
  • Spread 1/2 of the potato onion mixture on bottom of dish.
  • Place 1/2 of the cheese slices on top of potatoes.
  • Repeat layers.
  • Sprinkle bread crumbs on top to cover.
  • Bake, uncovered for 1 hour at 350 degrees.

1 (20 ounce) bag Simply Potatoes Homestyle Slices
1 (16 ounce) French bread
16 ounces chicken hot dogs (low fat, low sodium) or 16 ounces beef hot dogs (low fat, low sodium)
1 (8 ounce) can Mexican tomato sauce (spicy hot )
16 ounces low-fat monterey jack pepper cheese

Steps:

  • Heat oven 375 degrees.
  • Cut down the center and toast the French bread loaf (14" or so) on nonstick pan and the bag of potatoes on another nonstick pan for about 4-7 minutes until the bread is browned. Flip over the potatoes for another 7-10 minutes or until slightly browned and a few edges.
  • In the mean time, cut turkey dogs down center lengthwise but not all the way through and brown in full shape round in nonstick frying pan. Add the can of sauce and let them simmer on low for about 3 minutes. Place the turkey dogs split open along the bottom of the bread, save some sauce, top with potatoes and then the sauce. Place the cheese across the top. The cheese should be sliced or shredded. Put top of bread on.
  • Put back in the oven for about 3-5 more minutes. Slice in a little over 3" slices.
