BBQ TOFU MARINADE (BAKED BBQ TOFU)



BBQ Tofu Marinade (Baked BBQ Tofu) image

If you're on the hunt for a creative vegetarian dinner recipe, look no further! This BBQ tofu marinade is easy to make and full of sweet and savory flavor!

1 tbsp oil
1/4 cup BBQ sauce
1/4 cup apple cider vinegar
1 tsp onion powder
2 tsp smoked paprika
1/2 tsp garlic salt
1 block of extra firm tofu

Steps:

  • Press the tofu in a tofu press like the EZ Tofu Press for 10-12 minutes, tightening the knobs every 3-4 minutes.
  • Add the oil, BBQ sauce, apple cider vinegar, and spices to a bowl and whisk to combine.
  • Pour the sauce into a gallon sized zip lock bag.
  • Remove the tofu from the tofu press and cut into small bite-sized chunks.
  • Place the tofu squares into the zip lock bag and gently toss them in the marinade to coat.
  • Allow the tofu to marinate for 20 minutes.
  • Line a lipped baking sheet with parchment paper and spread the tofu over the parchment in a single layer.
  • Bake the tofu at 400 degrees for 30 minutes, flipping the tofu after 15 minutes to ensure that it cooks evenly.

This is inspired by a recipe by Andrea Chesman, who has some wonderful grilling ideas for tofu in her book "The Vegetarian Grill." It makes enough marinade or dipping sauce for a pound of tofu.

1/4 cup soy sauce
1 tablespoon rice vinegar
1 teaspoon brown sugar
2 tablespoons mirin (sweet Japanese rice wine)
1 to 2 garlic cloves, to taste, minced or puréed
1 tablespoon minced or grated fresh ginger
1 teaspoon Asian chili paste or cayenne to taste
2 tablespoons dark sesame oil

Steps:

  • Whisk together all of the ingredients in a bowl. Use as a marinade and/or dipping sauce for pan-seared, grilled or plain tofu.

16 ounces extra firm tofu
3/4 cup vegetarian worcestershire sauce (without anchovies)
1/2 cup water
1 tablespoon olive oil
1 tablespoon red pepper flakes
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon pepper

Steps:

  • Press as much water as possible out of the tofu. Slice the tofu crosswise into 1/2" to 3/4" pieces or about 8 pieces.
  • Combine all remaining ingredients in an 8 inch square baking dish and stir well.
  • Place the tofu slices in the marinade. If the liquid does not completely cover the tofu, turn the pieces carefully at least once to make sure it is thoroughly coated.
  • Refrigerate for 30 minutes to 1 hour.
  • TO GRILL: Remove the tofu from the marinade and cook on a medium-hot grill, basting occasionally with the marinade. The tofu is done when it is golden brown, about 6-8 minutes per side. Rotate the tofu 45 degrees every 3 minutes to create crosshatch grill marks.
  • TO BROIL: Remove the tofu from the marinade and place in a lightly oiled dish. Broil until the top is golden, about 5 to 7 minutes per side.

Be sure to use extra firm tofu and press out as much of the water as you can. To prevent sticking, give the tofu slices and the grill rack a generous coat of nonstick cooking spray. Cooking time includes marinading the tofu for 4 hours. This is from VT May/June 2006.

1 lb extra firm tofu, drained and cut lengthwise into 8 slices
1/2 cup fresh lime juice
1/2 cup maple syrup
1/4 cup low-sodium tamari or 1/4 cup soy sauce
2 teaspoons chili paste with garlic
3 garlic cloves, minced (about 1 tablespoon)
1/4 teaspoon fresh ground black pepper

Steps:

  • Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
  • Place the tofu in a single layer in the bottom of a 13x9 glass baking dish.
  • In a small bowl, whisk together the lime juice, maple syrup, tamari, chile paste, garlic, and pepper.
  • Pour mixture over the tofu, stirring to coat all the slices.
  • Cover the baking dish with plastic wrap and place in the refrigerator for at least 4 hours or overnight.
  • When the tofu is marinated and ready to cook: Spray grill rack or pan with nonstick cooking spray. Heat grill or grill pan to medium heat.
  • Place tofu slices on the grill. Reserve the marinade.
  • Grill tofu 3 or 4 minutes on each side, or until the outside is browned and crisp.
  • Return tofu to the baking dish and toss the slices with the reserved marinade.
  • Serve immediately.
