SPICED HONEY ROASTED NUTS



Spiced Honey Roasted Nuts image

Number Of Ingredients 9

450 g (1lb) mixed nuts (I used almonds, cashews, pecans, hazelnuts and brazils)
75 g (3 Tbsp) runny honey (or maple syrup)
15 g (1 Tbsp) butter (or coconut oil)
1/2 tsp ground cinnamon
1/2 tsp cayenne pepper
1/4 tsp ground nutemg
1/4 tsp ground ginger
1/2 tsp salt
50 g (1/4 cup) demarera sugar

Steps:

  • Preheat the oven to 160°C/325°F/gas mark 3 and line a roasting tray with baking parchment.
  • Place the honey and butter in a pan and heat gently until the butter has melted. Stir in the cinnamon, cayenne pepper, nutmeg and ginger then add the nuts and stir until they are well coated.
  • Spread the nuts out on the prepared roasting tray and roast for about 20 minutes, giving them a good stir every five. The nuts should be browned but not burnt.
  • Leave to cool for 2 minutes while you mix together the salt and demarera sugar in a large bowl. Add the nuts (they should still be hot at this point) and stir until they are well coated. Taste and add more salt and/or sugar as needed.
  • Return the nuts to the roasting tray, spread out in a single layer and leave to cool completely before decanting into jars.

1 cup pecans
1 cup almonds
1 cup walnuts
2 tablespoons honey
2 tablespoons sugar
2 tablespoons lime juice
2 teaspoons olive oil
1 teaspoon chili powder
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon salt

Steps:

  • Preheat oven to 325°F.
  • Line a baking sheet with parchment paper.
  • Combine all ingredients in a medium-sized bowl, making sure the nuts are well-coated.
  • Spread nuts in a single layer onto baking sheet and drizzle any extra coating over the top.
  • Transfer to oven.
  • Bake for 5 minutes.
  • Stir every 5 minutes for a total of 20 to 25 minutes.
  • Remove from oven and cool completely.
  • Break up clumps before serving.
  • Can be stored in an airtight container for 2 to 3 weeks.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

Steps:

  • Preheat oven to 325 degrees.
  • Mix honey, butter, and half of cinnamon in saucepan and heat to boiling. Cook for 2 minutes, stirring constantly.
  • In medium mixing bowl, pour honey mixture over nuts, stir well.

1/4 cup demerara sugar (granulated can be substituted)
1 teaspoon coarse kosher salt
3 tablespoons honey
3/4 teaspoon fresh ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon smoked paprika
1 pinch ground cayenne pepper
1 lb mixed raw nuts (combination of unroasted cashews, whole unblanched almonds, pecan halves, pistachios, hazelnuts, any)

Steps:

  • Preheat oven to 350-deg. F. Line a rimmed sheet pan with parchment paper and set aside.
  • In a large bowl, combine sugar and salt and set aside.
  • Combine honey, black pepper, cumin, coriander, paprika and cayenne in a bowl and mix well. Add mixed nuts and stir to thoroughly coat. Spread nut mixture evenly in a single layer on prepared sheet pan and bake until toasted and fragrant, about 10 to 11 minutes.
  • Remove from oven and let cool until barely warm, then transfer to sugar mixture and toss to evenly coat. Return to sheet pan and cool completely.   • Arrange almonds in a single layer in an ungreased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 10-15 minutes or until golden brown, stirring once., In a small bowl, combine 1/4 cup sugar, salt and cayenne; set aside. In a large skillet, heat oil over medium heat. Add roasted almonds and honey; cook and stir for 2 minutes. Sprinkle with remaining sugar; cook 1 minute longer or until sugar is dissolved. 1/3 cup honey
1/3 cup light corn syrup
1/2 cup sugar
1 tablespoon salt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon ground cayenne pepper

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350.
  • Spread the nuts on a large rimmed baking sheet. Bake just until the nuts are warm to the touch, about 3 minutes. Remove baking sheet from oven. Drizzle nuts with honey and corn syrup, and mix well. Continue baking, stirring often with oiled spatula (I used Pam) until the liquid has evaporated into a glaze, about 10-12 minutes.
  • Mix the sugar, salt, cumin, chili powder and cayenne pepper in a large bowl. Add the nuts and mix well to coat them with the spiced sugar. Transfer to a clean baking sheet to cool, breaking up the nuts that may have stuck together. They will crisp as they cool.
  • Store in airtight container at room temp for up to one week.
