40 g (1½oz) butter
50 g (2oz) apricot jam
½ tsp ground cinnamon
1 (2lb 2oz) eating apples, we used Braeburn
Finely grated zest of ½ lemon
For the topping
100 g (3½oz) golden syrup
100 g (3½oz) demerara sugar
100 g (3½oz) butter, chopped
150 g (5oz) porridge oats
50 g (2oz) plain flour

Steps:

  • Preheat oven to 180°C (160°C fan) mark 4. To make the apple mixture, heat the butter, jam and cinnamon until the butter and jam melts together. Set aside.
  • Next peel, core and chop the apples into bite-sized pieces. Add to the jam mixture, then cook, covered, for about 5min (stirring occasionally) until the apples are fairly soft. Mix in the lemon zest and tip into a rough 1.5 litre (22/3 pint) ovenproof serving dish.
  • Next make the topping. Measure the golden syrup into the empty pan then add the demerara sugar and butter. Heat gently, stirring, until the sugar dissolves. Take pan off the heat and stir in the oats and flour. Spoon on to the apple mixture, leaving it fairly clumpy.
  • Bake for about 20-25min or until golden. Serve immediately with vanilla ice cream or custard.

Sweetening the apples with apricot preserves and orange juice makes it twice as fruity and adding a little syrup to the oaty crumble makes great little chewy clusters. You could use pears, plums or a mixture of winter fruits. A handful of blueberries is also good with the apples.

2 lbs apples
4 tablespoons apricot preserves
1 large orange, juice
5 ounces porridge oats
4 ounces all-purpose flour
1 teaspoon ground cinnamon
4 ounces butter
4 ounces light brown sugar
1 tablespoon corn syrup

Steps:

  • Heat oven to 375°F Peel, core and thinly slice the apples and mix with the preserves and orange juice.
  • Spread evenly over a buttered ovenproof dish, not too deep.
  • Mix the oats, flour and cinnamon in a large bowl.
  • Add the butter in small chunks and rub in gently. Stir in the sugar and rub in again.
  • Drizzle over the syrup, mixing with a knife so it forms small clumps. Sprinkle evenly over the apples and bake for 30-35 mins until the juices from the apples start to bubble up.
  • Cool for 10 mins, then serve with custard, cream or ice cream.

These flapjacks add a fruity twist to the classic oat bakes with a mixture of fresh and dried apple, and they're a winning snack for the whole family when you're on the go or out on a picnic.

175g butter, plus extra for the tin
2-3 apples (about 350g), peeled, cored and chopped into small pieces
200g golden syrup
150g light brown soft sugar
300g porridge oats
50g apples, chopped
1/2 tsp ground cinnamon (optional)

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Butter the base of a 20 x 20cm square tin and line with baking parchment. Tip the chopped apples into a small saucepan with 2 tsp water and cook over a medium heat for 3-4 mins until the apples are just soft enough to crush, but there's still a little water left in the pan. If needed, add a little more water and cook the apples for slightly longer. Remove from the heat and crush the apples using a potato masher or a fork to break up slightly, then tip into a bowl and set aside.
  • Tip the butter, golden syrup and sugar into the pan and warm through over a low heat until the butter has melted and the sugar has dissolved. Remove from the heat and set aside.
  • Combine the oats, dried apple and cinnamon, if using, in a large bowl. Tip in the buttery syrup mix and cooked apples, then stir to combine. Tip the flapjack mixture into the prepared tin and press down firmly. Level the surface using a spatula, then bake for 25-30 mins until golden and bubbling at the sides. Leave to cool. Cut into 16 pieces. Will keep in an airtight container for three days.

1 kg apple, peeled and cored
1 handful raisins
2 teaspoons five-spice powder
100 ml water
1/2 teaspoon orange zest or 1/2 teaspoon orange extract
180 g ground almonds
1 pinch sea salt
1 1/2 teaspoons vanilla extract
1 -1 1/2 tablespoon maple syrup
50 g unsalted butter, softened
50 g sliced almonds
300 g creme fraiche
1 -2 tablespoon raw honey
1 tablespoon of freshly grated ginger

Steps:

  • Pre-heat the oven to 180ºC / Gas Mark 6. Lightly grease an oven-proof dish.
  • Roughly chop the apples into bite-sized chunks and place in a large saucepan.
  • Add the raisins, 5-spice and about 100mls of water.
  • Cover with a lid and leave to cook over a medium heat for about 10 minutes, stirring occasionally.
  • Meanwhile, combine all the ingredients for the crumble topping in a large mixing bowl, and mix thoroughly.
  • Add the orange zest or orange extract to the cooked apples and stir well.
  • Pour the apple mixture into the prepared dish. Cover with the crumble mixture and spread it out fully to give an even topping.
  • Bake for about 25 mins in the oven, until golden brown.
  • To make the Ginger Cream, simply combine all the ingredients in a small bowl.
  • Serve the hot crumble with a dollop of the Ginger Cream on the side.

140g porridge oats
25g ground almonds
1 tbsp sesame seed
1 tsp ground cinnamon
50g butter
1 heaped tsp honey
800g apples (I usually use eating apples), peeled, cored and roughly chopped
zest and juice 1 large orange
10 cardamom pods
1 tbsp brown sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the oats, almonds, sesame seeds and cinnamon into a large mixing bowl. In a small pan melt the butter with the honey then stir into the oats until it looks like rough breadcrumbs - you might need to use your hands.
  • Put the apples, orange zest and juice and cardamom in a pan and cook for 10 mins until softened. Pick out the cardamom pods. Spoon into a baking dish, sprinkle with the sugar and scatter with the crumble mixture. Bake for about 40 mins until golden and crunchy. Serve with vanilla yogurt, ice cream or custard.
